LOW-FAT BANANA BREAD
This is one of my family's favorite recipes for banana bread. It is moist and delicious. Freezes well. I sometimes like to add blueberries, nuts, chocolate chips.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. Whisk the flour, sugar, baking soda, and salt together in a bowl.
- Beat the egg in a mixing bowl. Whisk in the mayonnaise, bananas, and vanilla extract until evenly mixed. Stir in the flour mixture until no dry lumps remain. Pour the batter into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

This bread is surprising moist and has a wonderful flavor. For a little variation, you can add nuts or raisins.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
- Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

LOW FAT SECRET INGREDIENT BANANA BREAD
This is just delicious--moist and flavorful, chock full of protein, and LOW FAT! Oh, and it's at least partly whole wheat. What more could you want?!? This is a great way to work soy into your diet stealthily. :) Oh, and the secret ingredient is tofu. It replaces the fat in traditional recipes, and does a darn good job of it, too! :P Feel free to leave out the nuts. From "Tofu Quick & Easy"

Steps:
- Preheat oven to 350°F.
- Spray a 8.5 x 4.5 x 2" loaf pan with cooking spray.
- Line pan with foil, letting edges overhang, and spray foil with cooking spray.
- Blend or beat the tofu and bananas together in a food processor or mixer until smooth.
- Scrape down the sides.
- Add sugar and vanilla.
- Process until fully blended.
- In a medium bowl, mix together flours, baking powder, baking soda, and salt.
- Add flour mixture to the banana mixture and beat or pulse in a food processor just until smooth.
- By hand, fold in walnuts, if using.
- Spread batter into prepared pan.
- Bake for 30-35 minutes until lightly browned, springy to the touch, and a toothpick inserted into the center comes out clean.
- Cool in pan on a wire rack for 30 minutes.
- Remove from pan.
- Peel off the foil and let the cake fully cool on the wire rack.
- Enjoy!

LOWER FAT BANANA BREAD I

- Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
- In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
- Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
- Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

- Preheat oven to 325 degrees F (165 degrees C). Spray a bread pan with non-stick cooking spray, and lightly dust with flour.
- In a large bowl, beat eggs and sugar in a large bowl until light and fluffy, about 5 minutes. Beat in bananas, applesauce, milk, oil and vanilla.

- Preheat oven to 375 degrees F (190 degrees C). Lightly spray two 8x4x2 inch loaf pans with a non-stick cooking spray.
- Combine the fat free sour cream, egg whites, vanilla, bananas and margarine and mix on medium speed of electric mixer until smooth, creamy and well blended.
- Sift the flour, baking powder, baking soda, salt and light brown sugar into the banana mixture. Stir with a spoon until combined. Add more flour if necessary until a thick and rather resistant dough is formed. Fold in the optional nuts and raisins. Mix for 1 minute on the low speed of an electric mixer. Divide dough evenly between the two loaf pans.
- Bake at 375 degrees F (190 degrees C) until golden and the center tests done. Remove breads from pans immediately and allow to cool on a rack before slicing.

FANTASTIC LOW-FAT BANANA BREAD
You will not even notice that this is a low fat recipe, it is that good! One loaf yields 24 slices with 60 calories each and 1 gram of fat for every slice. Add in chopped nuts if desired but that will increase the the calories. Make a fat-free glaze using 1/2 cup powdered sugar mixed with 2-4 teaspoons fat-free milk then drizzle over warm bread. The batter can also be baked in four 4 x 2-inch mini loaf pans, for 30-35 minutes, these freeze very well! 2 eggs can be replaced with the egg substitute.

- Set oven to 350 degrees (set oven rack to second-lowest position).
- Grease bottoms only of two 8 x 4-inch loaf pans (if desired you can line the bottoms only of the pans with parchment paper, although baking time will need to be increased).
- In a large bowl using an electric mixer at medium speed mix togther the sugar, applesauce, egg substitute, margarine or butter and maple extract until well blended.
- Add in the mashed bananas and buttermilk; beat until smooth.
- In a small bowl mix together flour with baking soda and salt; add to the creamed mixture; stir with a wooden spoon until JUST blended (do not over mix!).
- Add/mix in nuts (if using).
- Divide the mixture between the two pans.
- Place both pans directly in the MIDDLE of the oven on the oven rack leaving a couple inches between the pans.
- Bake for about 1 hour or until the loaves test done.
- Cool 10 minutes in pan then loosen the sides of loaves and remove from pans.
- Cool completely before slicing.

LOW FAT BANANA AND FRUIT BREAD
This is a low fat, healthy alternative to traditional banana breads. I think it is very good, and I doubt that anyone you serve it to would know the difference between this bread or one made with higher calorie, cholesterol ladened oils. Total calories, as I figured them (RecipeZaar figures them differently) w/ Walnuts/ Craisins - Calories 1485/ Fat 25.75/ Fiber 32 - 1 Loaf Serving = 186/3.2/4 - WW Pts = 3. Half Loaf Srvg = 2 WW Pts. My calorie totals w/ out Walnuts/ Craisins - Calories 1155/ Fat 5.75/ Fiber 27 - 1 Loaf Servings = 144/>1/3.4 - WW Pts = 2. Half Loaf Srvg = 1 WW Pt. If using crushed pineapple instead of mandarin oranges, the calorie count would drop by 60 calories for the whole batch - 140/0/2 - that is, 7.5 calories @ srvg (mini-loaf sz) - fat/fiber would remain the same - so the variance is minimal, and would not change WW Pts. You could also add - 1/3 cup Sweetened Coconut - 117/7.9/1.1 (adds abt. 8g sugar) - with or w/out the walnuts, or double the Coconut to 2/3 cup, dropping the walnuts all together! All variations would change WW Pts count - adding 1/3c coconut in addition to chopped walnuts would change to: 1602/33.65/33.1 - 8 srvgs = 200/4.2/4.2 or 4 Pts. Replacing 1/3 cup coconut flakes for the 1/4 cup walnuts, would leave the point count the same as originally figured: 3 Pts @ mini-loaf srvg. Okay, just a thought here - but, I'll bet this recipe would make great cookie too! They would be moist, soft cookie - if you made 24 cookie - even w/ the walnuts and craisins - they'd be about 1 WW Pt for each cookie. Really, there are so many variations you could do to this recipe! You could add some dried candied fruit to make it a fruit cake type loaf or cookie (probably adding loads of calories and points - but for a occasional treat you might consider it - if you do that, I'd use broken walnuts, not chopped - bigger chunks like in regular fruit cake). I hope I've given you enough info so that you can, without doing much math, figure the various calorie or points totals. Sorry for the lengthy introduction, but I really think this recipe is great! - Combine first 6 ingredients on the list.
- Mash bananas and oranges (drain liquid off first) in separate bowl until blended - some chucky-ness okay. NOTE: Can replace oranges w/ 1 - 8 oz. can crushed pineapple - also drained.

LOW FAT (BUT YOU WOULDN'T KNOW IT) BANANA BREAD
I omitted the oil from my banana bread recipe and replaced it with the same amount of unsweetened applesauce and reduced the amount of sugar added. I also replaced half of the white flour with whole wheat flour. The banana bread tastes exactly the same as it did with the oil but now with much less fat. you can also add nuts, chocolate chips or gum drops to the batter once all the ingredients are mixed!

- Beat the sugar and applesauce together.
- Add eggs and mashed banana and beat well.
- In another bowl combine both flours, baking soda, baking powder and salt. Add this to the banana mixture and mix well.
- Pour the batter into a greased and floured 9x5x21/2" loaf pan.
- Bake at 350oF for about 1 hour. If a wooden tester inserted into the center of the bread comes out clean the bread is done. Turn the bread out of the loaf pan and allow cake to cool on a wire rack. Wrap the bread in tin foil and store overnight berfore slicing.
