MEXICAN FISH STEW

Steps:
- Put the fish in a shallow dish and season with salt and pepper. Add the lime juice and toss; set aside. Put the potatoes in a saucepan, cover with water and season with salt. Bring to a boil; add the corn and cook, covered, until the vegetables are tender, about 8 minutes. Reserve 1 cup of the cooking water, then drain. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add all but 1/3 cup of the chopped onion to the skillet along with the thyme and cook until soft, about 2 minutes. Add the garlic, chile powder and half of the cilantro and cook, stirring, 2 minutes. Add the tomatoes and cook, stirring occasionally, until slightly reduced, about 4 minutes. Add the potatoes, corn and reserved cooking water. Add the fish and lime marinade to the skillet and simmer, spooning the sauce over the fish, until cooked through, about 5 minutes. Season with salt and pepper. Divide the stew among bowls and top with the remaining onion and cilantro. Serve with lime wedges.

- Spoon oil over fish. In a small bowl, combine the seasonings; sprinkle over fish and press into both sides. Cover and refrigerate for 30 minutes. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. - In a dish, arrange fish in a single layer.
- Pour lime juice over fish.
- Let stand for 15 minutes.
- Combine the flour, taco seasoning, cumin and cayenne.
- Remove fillets from juice and pat dry with paper towels and discard lime juice.
- Coat fillets with flour mixture.
- In a large skillet, cook fillets, in batches, over medium-high heat in oil for 6-8 minutes on each side or until fish flakes easily with a fork.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Combine tomatoes, green chiles, sugar, garlic, jalapeno, salt, and black pepper in a saucepan over medium heat; bring to a boil. Reduce heat to medium-low; add zucchini. Simmer until sauce is combined, 5 to 10 minutes.
- Place halibut steaks in a shallow casserole dish; pour sauce on top.
- Bake, uncovered, in the preheated oven until fish flakes easily with a fork, about 30 minutes.

MOROCCAN SPICED WHITE FISH
Steps:
- Preheat the oven to 400 degrees F.
- Score the fish with a paring knife by making several 1-inch slits in the skin on each side, being careful not to cut in too deep. Put the fish on a dish and drizzle with the lemon juice and 1/2 of the oil. Press the garlic into the score marks. Rub the spice mix all over the inside and outside of the fish. Cover with plastic wrap, and allow it to marinate in the fridge for one hour. Heat a skillet large enough to hold the whole fish over high heat until it is almost smoking. Carefully pour the remaining oil into the pan and let it heat. Place the fish in the pan, sear it well on both sides, and then place it in the oven for about 7 minutes, or until the fish flakes easily. Transfer the fish to a serving platter.
- Combine all ingredients in a small bowl.
LIGHT AND SPICY FISH
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Place a sheet of aluminum foil onto a baking sheet, and grease lightly.
- Place fillets onto the foil, and sprinkle with garlic powder, salt, and pepper. Spoon picante sauce over fillets, and squeeze lime juice over the top. Bring the sides of the foil together, and fold the seam to seal in the fish.
- Bake in preheated oven for 15 to 20 minutes, or until fish flakes easily with a fork.

SPICY INDONESIAN FISH
Another one of my magazine clippings that is disintegrating. A wonderful spicy fish that tastes wonderful with steamed basmati or jasmine rice and a green vegetable. This is a easy microwave fish dinner. Cook time is marinating and cooking time combined.

Steps:
- Scatter 1/2 onion in 10x6 inch glass baking dish.
- Place fish on top of onion pieces.
- Mix soy sauce, lime juice,coriander, red pepper, turmeric, salt and pepper.
- Pour over fish.
- Turn fish to coat with marinade.
- Cover with remaining onion slices.
- Cover dish tightly with plastic wrap.
- Refrigerate for several hours (3).
- Turn fish over again in marinade.
- Cover lightly with plastic wrap.
- Microwave on high power for 6 minutes.
- Rotate dish and microwave on high for 5-6 minutes or until fish flakes easily when tested with a fork.
- Let stand covered for 5 minutes.
- Remove fish to platter.
- Serve marinade as sauce if desired.
