HEALTHY GROUND PORK STIR FRY WITH PEANUT SAUCE

- Cook rice as directed on package. Mince garlic. Peel ginger and mince. Chop mushrooms. Thinly slice green onions.
- Make peanut sauce: whisk together peanut butter, soy sauce, sriracha (add more if you like spice!), honey, and rice wine vinegar.
- Heat large pan over medium-high heat. Add olive oil to pan and when hot, add pork to pan. Break up with a wooden spoon for about 1 minute, then add mushrooms, garlic, and ginger to pan. Season with 1/4 tsp. salt. Cook, stirring occasionally, for about 5 minutes.
- Add spinach to pan, toss with pork and cook for about 1 minute, until wilted.
- Serve with peanut sauce, sliced green onions and sesame seeds.

EASY THAI PEANUT PORK STIR FRY
Juicy, tender pork tenderloin along with crunchy veggies combine with an easy homemade peanut sauce to create this delicious Thai inspired stir fry.

- In a small bowl, combine peanut butter, lime juice, soy sauce, vinegar, sriracha, garlic powder and black pepper.
- Whisk together until well combined and smooth. It will look lumpy at first, but as you whisk, it will get nice and creamy. Stir in cilantro.
- Heat oil in a wok or large skillet over high heat until oil is very hot.
- Add pork and stir fry in batches without crowding the pan. Cook until pork is starting to brown around the edges, being careful not to over cook. It will take about 2-3 minutes per batch.
- Remove pork from the pan and set aside.
- Add green onions, stir fry for 1 minute.
- Add red peppers and stir fry for 1 minute.
- Add garlic and stir fry for another 30 seconds.
- Add water chestnuts and cook for an additional 30 seconds.
- Add pork to to the mixture.
- Pour sauce over mixture and toss to coat. Cook for another minute until sauce is heated through.
- Serve over hot cauliflower rice.
- Garnish with green onions, cilantro, lime slices and chopped peanuts, if desired.

Steps:
- In a medium bowl, mix 2 tablespoons soy sauce, 1 tablespoon cornstarch and water.
- Wisk together until smooth then stir in the pork cubes.
- Cover and refrigerate for 30 to 45 minutes.
- In another bowl combine the lime juice, 1 tablespoon soy sauce, vinegar, 1 teaspoon cornstarch and sesame oil.
- Mix together and set aside.
- Remove pork and marinade from refrigerator.
- In a large fry pan or wok heat peanut oil until hot.
- Stir in ginger and chile pepper and saute for 1 minute.
- Then stir in pork with marinade, carrots, and sugar peas and stir-fry for 6 to 8 minutes or until pork is tender.
- Pour in lime mixture, reduce heat and simmer until sauce thickens, approximately 6 to 8 minutes.
- Remove from heat and stir in hot chile oil, green onions and peanuts.

- Cut the pork into 1/8-in. wide slices; cut each slice into 3-in. strips. In a bowl, combine the soy sauce, cornstarch, salt, sugar, ginger and cayenne. Add pork; toss to coat and set aside. , In a large skillet or wok, stir-fry onion, carrot and garlic in oil until crisp-tender. Remove with a slotted spoon and keep warm. , In the same skillet, stir-fry pork over medium-high heat until browned and no longer pink. Add onion mixture and peas; heat through. Serve in lettuce cups or over rice. Sprinkle with sesame seeds if desired.

- Heat 1 tbsp oil over medium-high heat in a large cast-iron skillet or a wok. When oil is shimmering hot, add pork and cook, breaking up with a spoon, until cooked through and starting to crisp up.
- Meanwhile, whisk 3/4 cup chicken stock with peanut butter, soy sauce, brown sugar, garlic and chiles in a large mixing bowl (you need a lot of room to whisk in the peanut butter). Set aside.
- Using a slotted spoon, transfer cooked pork to a bowl. Pour fat from pan and discard. Add remaining 1/4 cup chicken broth to pan and return to medium heat. Deglaze the pan by scraping the bottom to release all browned bits. Pour into bowl with pork.
- Add 4 tbsp oil to same pan over medium-high heat. Add onion, cabbage, carrots and gai lan stalks. Cook, stirring frequently, until cabbage is tender, about 4 minutes. Stir in gai lan leaves and cook until just wilted. Return pork to pan, add sauce and cook, tossing with tongs, until well combined and heated through. Serve topped with peanuts with lots of lime wedges on the side.
