EGGPLANT AND POTATO CURRY



Eggplant and Potato Curry image

This is my version of a spicy dish we had on our last trip to Chicago. It was served with white rice. Recommend Japanese Eggplant. Would also recommend thin skinned white potatoes so that there is no peeling.

1 tablespoon oil
2 tomatoes, large cut into 1-inch pieces
2 eggplants, medium size cut into 1-inch pieces, Recommend using Japanese Eggplant
2 potatoes, medium size cut into 1-inch pieces, Recommend using thin skinned white potatoes
1/2 teaspoon chili powder
1/2 teaspoon turmeric
1/2 teaspoon coriander
1/2 teaspoon cumin
1/2 teaspoon garam masala
1/4 teaspoon sugar
salt
1 -1 1/2 cup water

Steps:

  • Heat oil in a pan. Add spices, tomatoes, sugar and salt.
  • Cook on medium heat for 3 minutes till the tomatoes are soft.
  • Add potatoes and eggplant. Cook for about 5 minutes.
  • Add a 1 cup of water and continue to cook over medium heat for about 5 to 10 minutes more till the vegetables are tender. Watch the pot as you may need to add another 1/4 to 1/2 cup of water to prevent scorching.
  • Serve hot with white rice.

This is a traditional North Indian (Punjabi) Bhurtha made with eggplant and tomato, and seasoned with cumin, turmeric garlic and ginger. Serve with fresh roti or naan.

1 eggplant
2 tablespoons vegetable oil
½ teaspoon cumin seeds
1 medium onion, sliced
1 teaspoon chopped fresh ginger
1 large tomato - peeled, seeded and diced
1 clove garlic, minced
½ teaspoon ground turmeric
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
½ teaspoon salt, or to taste
ground black pepper to taste
¼ cup chopped fresh cilantro

Steps:

  • Preheat the oven's broiler. Rub oil on the outside of the egg plant, or coat with cooking spray. Place under the broiler, and cook until the flesh is soft and the skin is blistering off, about 30 minutes. Turn as needed for even cooking. Cut the eggplant in half lengthwise, and scoop the flesh out of the skin. Discard the skin; chop up the flesh, and set aside.
  • Heat the oil in a large skillet or wok over medium-high heat. Add the cumin seeds, and let them crackle for a few seconds and turn golden brown. Be careful not to burn them. Add the onion, ginger and garlic; cook and stir until tender. I don't let the onions get very brown. Stir in the tomato, and season with turmeric, ground cumin, ground coriander, cayenne pepper, salt and black pepper. Cook and stir for a few minutes.
  • Place the eggplant pieces in the skillet, and cook for 10 to 15 minutes so some of the moisture evaporates. Taste, and adjust seasonings if desired. Garnish with fresh cilantro, and serve.

2 Eggplant diced
1 Potato peeled and diced
1 Onion peeled and chopped
1 teaspoon Ginger Paste
6 cloves Garlic chopped
2 jalapeno peppers seeded and minced
1 Tablespoon Ground Cumin
1 Teaspoon Ground Red Chile Pepper
1 Tablespoon Garam Masala
1 Teaspoon Turmeric
1/4 Cup Canola Oil
1 Tablespoon Kosher Salt
1-2 Tablespoons cilantro

Steps:

  • Combine eggplant, potato, onion, ginger, garlic, jalapeño peppers, cumin, ground chile pepper, garam masala, turmeric and oil in a 4- or 5-quart slow cooker. Stir as best you can to distribute the spices and oil. (The smaller cooker will be frighteningly full, but don't worry; the eggplant will cook down.) Cook on HIGH for 2 hours, stirring after 1 hour. After the first two hours of cooking, stir well. There should be a nice amount of moisture in the cooker, and the eggplant should have collapsed a bit. If there is plenty of liquid in the pot, continue cooking on LOW for 30 minutes, uncovered. If there's not much liquid, cook on LOW for 30 minutes with the cover on. Add the salt and cilantro, to taste. (Salt added during the cooking will draw more moisture out of the eggplant, so it's best added at the end.) Serve at room temperature, over rice or topped with raita, or make ahead.

EASY PUNJABI-STYLE CHICKPEA AND POTATOES



Easy Punjabi-Style Chickpea and Potatoes image

I came up with this when I was in the mood for spicy potatoes, and immediately thought of my favorite side dish at the Jackson Diner buffet. This is a great sidedish but I also like it as a main meal too, with some rice or naan. Green peas would work in this recipe too, either as a third main ingredient or to replace the chickpeas, but I love the richness of the chickpeas and couldn't get over not only how close it was to Indian restaurant quality, but also how simple and quick it was to make! By accident better yet! You'll find it hard to believe it's homemade and from canned food better yet. The taste is very hot and spicy, and what I love the most is the way the kick sneaks up on you after a minute! :) Important note-- I created this dish by accident so I just ballparked the spices before tweaking measurements. This yields about 4 cups (I'd have about a 2-cup serving with one more leftover for the next day), so if you're planning on a potluck, larger amount to cook for your family, OAWC/OAMC, etc. you might want to use the multiplier on here to figure out the correct proportions for the ingredients.

1 (16 ounce) can diced new potatoes
1 (16 ounce) can chickpeas
1/4 cup canola oil
2 tablespoons garam masala (sometimes I like to up it to 2.5 tbsp)
1 tablespoon curry powder (as hot as you'd like, I like it hot)
1 1/2 teaspoons coriander
1 teaspoon cumin
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika

Steps:

  • Rinse and drain the chickpeas and potatoes thoroughly.
  • In a saucepan, mix them together with the canola oil so all the pieces are thoroughly coated. I listed 1/4 cup to start with-- but add more if there's not enough to coat the food.
  • Add all the seasonings listed, then mix together until thoroughly blended.
  • Turn on high heat until oil starts bubbling.
  • Lower the heat to medium-low, cover, and let simmer for 10 minutes, stir it occasionally to make sure pieces don't get stuck to the bottom of the pot.
  • Remove from the heat element and let sit on a trivet for 5 minutes still covered.
  • Uncover and enjoy! It's like eating samosa filling! Great with naan, a good curry, or as a wonderful side dish/accompaniment to prantha, bhajia, rice and dal, curried vegetables, or mash it up a bit to use for samosa and masala dosa filling.

2 to 3 small oval eggplant (about 1 pound total)
2 tablespoons peanut oil
1 1/2 teaspoons cumin seeds
2 tablespoons peeled minced fresh ginger
1 1/2 tablespoons ground coriander
1 teaspoon ground cumin
2 medium-large russet potatoes (about 3/4 pound), peeled and finely chopped
1 large tomato, finely chopped
1 cup finely chopped fresh cilantro, including soft stems
1 to 2 fresh green chili pepper, such as serrano, minced with seeds
1 teaspoon salt, or to taste
1 teaspoon melted ghee (optional)
Chopped cilantro

Steps:

  • 1. Peel and coarsely chop the eggplants. Then place them in a microwave-safe dish. Cover and cook on high 5 to 6 minutes, or until quite soft. Let cool, then coarsely mash. 2. Heat the oil in a small nonstick wok or skillet and add the cumin seeds they should sizzle upon contact with the hot oil., Quickly add the ginger, coriander, and cumin, then mix in the potatoes, tomato, cilantro, green chili peppers, and salt. Cover the pan and cook, stirring occasionally, over medium-high heat, about 5 minutes.3. Mix in the mashed eggplant, reduce the heat to low and continue to cook until the potatoes are soft, 15 to 20 minutes. An unusual combination of textures and flavors, but-like the eggplant and apple mixture on page 458-one that really works. Serve in combination with other Indian dishes or as an unusual side dish with Western food. Other vegetables you can prepare this way: for the eggplant, substitute cauliflower or thick slices of red or yellow bell pepper or a combination.

Number Of Ingredients 11

About 1 1/2 pounds waxy potatoes
About 1 1/2 pounds firm eggplant, preferably a small variety
1/4 cup peanut oil (preferred) or neutral oil, like corn or grapeseed, or butter
1 jalapeño or 2 smaller fresh chiles, stemmed, seeded, and minced, or 1 teaspoon hot red pepper flakes, or to taste
1 tablespoon minced garlic
1 teaspoon mustard seeds
1 teaspoon cumin seeds
Salt and black pepper to taste
1/2 cup chopped onion
Fresh lemon juice to taste
Chopped fresh cilantro leaves for garnish

Steps:

  • Peel the potatoes and cut them the long way into wedges, 6 to 10 per potato. Peel the eggplant (salt it if necessary; see page 456) and cut it into similar-sized wedges.
  • Put the oil in a 12-inch nonstick skillet with a lid over medium heat. Wait a couple of minutes, then add the chiles, garlic, mustard, and cumin; cook, stirring, until the garlic colors and the mustard seeds pop, a couple of minutes. Add the potatoes and eggplant, along with 1/4 cup water and a sprinkling of salt and pepper, and cover. Cook for about 10 minutes, checking once or twice and adding a little water if necessary, until the vegetables begin to soften. Remove the cover and raise the heat to medium-high. Cook, stirring occasionally, until both potatoes and eggplant brown nicely and become completely tender, another 10 to 15 minutes.
  • Add the onion and continue to cook, stirring occasionally, until it softens and begins to brown, another 5 minutes or so. Stir in the lemon juice, taste and adjust the seasoning, then garnish and serve hot or at room temperature.
  • You can make these with or without the eggplant: In step 3, add 2 cups seeded and chopped tomatoes about 2 minutes after adding the onion. Cook, stirring occasionally, until the tomatoes begin to break up, about 5 minutes. Serve as directed.

1 large potato
1 med yellor or red onion
1 2 in piece ginger, peeled and cut into 1 1/2 matchsticks
6 cloves garlic, coarsely chopped
3-4 green thai, serrano or cayenne chilies, stems removed, choped or sliced lenthwise
1 T cumin seeds
1 T red chili powder
1 T garam masala
1 t turmeric powder
1/4 c oil
2 T salt
2 T fresh cilantro, chopped

Steps:

  • Add everything but the last two ingredients. Cook on low for 3 hours. Remove the lid and cook for another 2 hours (help dry up some of the moisture from the eggplant). Add the salt and cilnatry. Serve w/roti or naan.
