Mom's homemade chili recipe was the best! She knew just the right ingredients to put her 'stamp' on it. I could eat it with my eyes closed and know it was hers. It amazed me that she could put it together in so little time. -Marjorie Carey, Alamosa, Colorado

1 medium green pepper, chopped
2 medium onions, chopped
1/2 cup chopped celery
1 tablespoon vegetable oil
2 pounds ground beef
2 cans (28 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup water
2 tablespoons Worcestershire sauce
1 to 2 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
2 cans (16 ounces each) kidney beans, rinsed and drained
Tortilla chips, optional

Steps:

  • In a Dutch oven or large soup kettle, saute green pepper, onions and celery in oil until tender, about 5 minutes. Add ground beef and cook until browned; drain. Stir in tomatoes, tomato sauce, water, Worcestershire sauce and seasonings. Bring to a boil; reduce heat. Cover and simmer for 1-1/2 hours, stirring occasionally. Add kidney beans. Simmer, uncovered, 10 minutes longer. If desired, serve with tortilla chips.

3 lbs round steaks or 3 lbs beef stew meat, cut into small cubes
2 (28 ounce) cans stewed tomatoes
46 ounces spicy hot V8
2 (1 1/2 ounce) packages dry onion soup mix
1 large onion, chopped
3 celery ribs, chopped
2 green peppers, seeded & chopped
2 banana peppers, chopped
1/2 cup banana pepper juice
1/2 cup white vinegar
2 garlic cloves, crushed
1 bay leaf
3 ounces chili powder
1/4 cup barbecue sauce
1/4 cup catsup
1/4 cup liquid hot pepper sauce
2 teaspoons cumin powder
2 teaspoons beef bouillon granules
2 teaspoons salt
1 teaspoon oregano
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
1 dash red pepper
1 dash basil
1 dash thyme
1 dried red pepper
1 -2 cup beer (guiness works best)

Steps:

  • in a large pot, brown the ground beef, drain off excess fat and discard. add cubed round steak, tomatoes, V8 juice, onion soup mix, onion, celery, green peppers, banana peppers, banana pepper juice, vinegar, garlic, bay leaf, chili powder, BBQ sauce, ketchup, liquid hot pepper sauce, cumin powder, beef bouillon granules, salt, oregano, onion powder, paprika, black pepper, crushed red pepper, basil, thyme and dried red pepper.
  • bring the mixture to a boil, reduce heat and simmer for 2 hours, stirring often. correct seasoning and add beer to taste. simmer for 1 hour stirring occasionally.
  • makes about 6 quarts of chili.
