MELINDA'S PORCUPINE MEATBALLS

This is, by far, the best recipe for porcupine meatballs I have ever had. This is a recipe that was given to my mom when she married back in 1970. The recipe also includes cooking directions for stovetop cooking or cooking in the oven. Hope you enjoy as much as our family does.

1 pound ground beef
½ cup uncooked white rice
½ cup water
⅓ cup chopped onion
1 teaspoon salt
½ teaspoon celery salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 (15 ounce) can tomato sauce
1 cup water, or more as needed
2 teaspoons Worcestershire sauce

Steps:

  • Mix the ground beef, rice, 1/2 cup water, onion, salt, celery salt, garlic powder, and black pepper in a bowl. Roll the mixture into 12 meatballs.
  • Heat a large skillet over medium-high heat and add the meatballs. Cook meatballs, turning occasionally, until evenly browned. Drain and discard any excess grease. Pour the tomato sauce, 1 cup water, and Worcestershire sauce into the skillet; reduce heat to medium-low. Cover and simmer until the meatballs are no longer pink in the center and the rice is tender, about 45 minutes. Stir in more water if the sauce becomes too dry.

Old-Fashioned Porcupine Meatballs in tomato sauce make a delicious and economical family meal. This recipe has been popular since the Great Depression when it was developed to make ground beef go further. Serve as is or over rice or mashed potatoes for a filling dinner.

1 pound ground beef, (I use 10%)
1/2 cup uncooked long grain rice
1/2 cup water
1/3 cup finely chopped onion
1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon celery salt
1 (28-ounce) can tomato sauce
2 tablespoons light brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • In a large bowl, combine ground beef, rice, water, onion, seasoned salt, garlic powder, black pepper, and celery salt. Mix well and shape into 9 meatballs.
  • Place in a lightly greased baking dish. Preheat oven to 350 degrees.
  • In a bowl, stir together tomato sauce, brown sugar, and Worcestershire sauce. Pour over meatballs. Cover baking dish with foil.
  • Bake covered for 40 minutes. Uncover and bake 15 more minutes.

Number Of Ingredients 8

3/4 cup short-grain rice, sweet (I used medium grain rice) or 3/4 cup rice, sticky (I used medium grain rice)
1/2 lb ground pork
1 egg
2 tablespoons soy sauce
1/2 teaspoon sugar
5 green onions, finely chopped
1 inch gingerroot, peeled and finely shredded (about 1 tbsp.)
1 red bird's eye chilies or 1 serrano chili, seeded and minced

Steps:

  • In a medium bowl, soak rice in 2 cups water for 2 hours. Drain; put on a plate.
  • In a medium bowl, combine pork, egg, soy sauce, sugar, green onions, ginger, and chile. Cover and chill until rice is ready.
  • Divide pork mixture into 32 pieces. Roll into balls, then roll balls in rice. Put balls in parchment-lined steamers (see How to Steam Dim Sum, below). Cook until rice is tender and pork is cooked, about 10 minutes. Serve immediately.
  • How to Steam Dim Sum: Measure your steamer basket and choose a pot with a diameter at least 2 inches wider. To keep dumplings from sticking, cut a circle of parchment paper 1 inches smaller in diameter than the basket (so steam can flow up around the edges) and fit it inches Pour enough water into pot to come 1 inches up side and bring to a boil over high heat. Fill basket with dim sum first, then set it in the pot. Cover and cook, adding hot water as needed.

1 egg
1/2 cup water
1 (2 ounce) envelope Lipton Onion Soup Mix
1 lb ground beef
1/2 cup rice
1 (46 ounce) can tomato juice
1 teaspoon sugar

Steps:

  • Beat egg slightly with water and 2 tablespoons of soup mix.
  • Mix lightly with ground beef and 1/4 cup of the rice.
  • Shape into balls.
  • Roll remaining 1/4 cup of rice pressing tightly into meat.
  • Heat tomato juice to boiling and stir in remaining onion soup mix and sugar; reduce heat to simmer.
  • Place meat balls in saucepan of tomato juice and cover.
  • Simmer, stirring occasionally, 50 minutes or until rice puffs out around meat.

1 (10.75 ounce) can condensed tomato soup
½ cup water
1 ½ pounds ground beef
1 cup uncooked instant rice
1 tablespoon minced onion
1 teaspoon salt
1 dash ground black pepper

Steps:

  • In a medium mixing bowl, combine the tomato soup and the water. Mix thoroughly and set aside.
  • In a large mixing bowl, combine the ground beef, instant rice, onion, salt, pepper and 1/2 cup of the soup mixture. Mix thoroughly, and shape into 1 inch balls.
  • Place meatballs in a large skillet over medium heat. Pour in the remaining soup mixture and bring to a boil. Simmer for 15 to 20 minutes or until meatballs are thoroughly browned and rice is cooked.
