1/2 pound bulk pork sausage
1 large egg, room temperature
2/3 cup whole milk
2 tablespoons canola oil
1 cup pancake mix
1/2 teaspoon ground cinnamon
1/2 cup shredded peeled apple
CIDER SYRUP:
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon pumpkin pie spice
1 cup apple cider
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In a large bowl, beat the egg, milk and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple and sausage. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles from on top. Cook until second side is golden brown., For syrup, combine the sugar, cornstarch and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter until melted. Serve warm with the pancakes.

1 large egg, lightly beaten

1/2 cup diced apples
3/4 cup Jimmy Dean(R) Hearty Original Sausage Crumbles
2 tablespoons butter, for greasing griddle
Cinnamon Walnut Butter, recipe follows
1 stick unsalted butter, softened
2 tablespoons toasted walnuts, finely chopped
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Pinch of salt

Steps:

  • In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and 1/2 teaspoon salt.
  • In a large measuring cup combine the buttermilk, egg, and 3 tablespoons maple syrup and stir with a fork. Stir into the flour mixture with a spatula until just combined. Mix in the diced apple and sausage crumbles.
  • Heat a pancake griddle over medium-low heat and then grease with a small amount of butter. Drop ladles of batter to form 4-inch pancakes, cooking pancakes for 2 to 3 minutes before flipping, or until the batter puffs up and bubbles form. Flip pancakes and continue to cook for an additional 1 to 2 minutes, until cooked through and nicely browned. Top with Cinnamon Walnut Butter and additional maple syrup, if desired.
  • Combine the butter, maple syrup, cinnamon, vanilla, and salt in a bowl and mix until well blended. Serve with pancakes.

Steps:

  • Heat oven to 350°F. Spread apple slices evenly over bottom of ungreased 13x9-inch pan. In 1-quart saucepan, heat 1/2 cup brown sugar, the butter and syrup over low heat, stirring occasionally, until melted. Pour syrup mixture over apples.
