1-1/2 pounds uncooked penne pasta
1 pound bulk Italian sausage
1 pound sliced fresh mushrooms
1 large onion, chopped
3 tablespoons olive oil
6 garlic cloves, minced
1 tablespoon dried oregano
1-1/2 cups dry red wine or beef broth, divided
2 cans (14-1/2 ounces each) stewed tomatoes, cut up
1 can (15 ounces) tomato sauce
1 cup beef broth
4 cups shredded part-skim mozzarella cheese
4 cups shredded fontina cheese
Minced fresh parsley, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook sausage over medium heat until no longer pink; drain and set aside., In the same Dutch oven, saute mushrooms and onion in oil until tender. Add garlic and oregano; cook 1 minute longer. Stir in 1 cup wine. Bring to a boil; cook until liquid is reduced by half. Stir in the tomatoes, tomato sauce, broth, sausage and remaining wine. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Drain pasta. Spread 1/2 cup sauce in each of two greased 13x9-in. baking dishes. Divide half of the pasta between the dishes; layer each with 2-1/2 cups sauce and 1 cup each of the cheeses. Repeat layers., Cover and bake at 350° for 25 minutes. Uncover; bake 5-10 minutes longer or until bubbly and cheese is melted. Sprinkle with parsley if desired.

1 lb smoked sausage, sliced into coins
1 lb rotini pasta
1 tbsp olive oil
2 tbsp minced garlic
1 large onion, diced
3 cups chicken broth
1 cup half & half
1 10 oz can diced tomatoes & green chilies
2 cups shredded Mexican blend cheese
salt & pepper, to taste
1/3 cup thinly sliced green onions

Steps:

  • Over medium high heat, add olive oil to a dutch oven and toss with smoke sausage and onions. Saute until lightly browned. Add garlic and cook until fragrant, only about 30 seconds.
  • Add in broth, tomatoes, half and half, pasta, salt, and pepper. Stir to combine.
  • Bring to a boil, cover, and reduce heat to medium low. Simmer until pasta is tender.
  • Remove the pot from heat and stir in 1 cup of cheese.
  • Transfer to a casserole or baking dish and top with remaining cup of cheese and scallions. Broil until cheese is slightly browned and bubbly.

2 teaspoons olive oil
1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine
1 (15 ounce) can tomato sauce

2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.

1 lb ziti noodles
1.5 lbs ground spicy or sweet Italian sausage (or removed from casings)
4 cloves garlic, minced
1 (28-oz) can crushed tomatoes
1 teaspoon salt
1½ teaspoons sugar
¼ teaspoon crushed red pepper flakes
1 cup heavy cream
⅓ cup plus 3 tablespoons grated pecorino Romano (or Parmigiano Reggiano) cheese, divided
⅓ cup chopped fresh basil, plus more for serving
8 oz whole milk mozzarella cheese, shredded (about 2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Cook the ziti according to the package directions for very al dente, about 7 minutes. (It will continue to cook in the oven so you want to undercook it just a bit.) Drain and add the pasta back to the pot. Set aside.
  • Preheat the oven to 425°F and set the oven rack in the middle position.
  • Heat a large sauté pan (preferably nonstick) over medium-high heat. Crumble the sausage into the pan and cook, breaking apart with a wooden spoon, until lightly browned and just cooked through, 5 to 6 minutes. Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tablespoon of the fat from the pan and set over low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the garlic and cook, stirring constantly with a wooden spoon, until soft but not browned, about 1 minute. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer, uncovered, for 10 minutes.
  • Add the cream, ⅓ cup of the pecorino Romano, cooked sausage, and basil to the pan; stir until evenly combined. Carefully pour the contents of the sauté pan into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 9 x 13-inch baking dish. Sprinkle with half of the shredded mozzarella and half the remaining pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and pecorino Romano. Transfer to the oven and bake, uncovered, until the cheese has melted and browned, 15 to 20 minutes. Sprinkle with more basil and serve.
  • Make-Ahead/Freezer-Friendly Instructions: The dish can be assembled, covered, and refrigerated for up to 2 days in advance, or frozen for up to 3 months. (If frozen, defrost in the refrigerator overnight.) Whether refrigerated or frozen and defrosted, bake, covered tightly with aluminum foil, in a 425°F oven for 25 minutes. Then uncover and bake for another 10 to 15 minutes, until the cheese is lightly browned and the pasta is hot throughout.

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
  • While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
  • Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

3 can(s) fire roasted diced tomatoes with garlic
1 can(s) diced tomatoes with oregano,basil and garlic
1 medium onion, chopped
1 medium green pepper, chopped
1 small zucchini, diced
2 Tbsp italian seasoning
4 links hot italian sausage
1 lb ground beef
2 Tbsp minced garlic
1/2 tsp red pepper flakes
1 c cremini mushrooms, chopped
salt and pepper
1/2 lb mozzarella cheese, shredded
1 lb rigatoni pasta, uncooked

Steps:

  • 1. In a large pot brown the ground beef with sausage(remove sausage from casing and break apart as you brown it) add onion,garlic,red pepper flakes,and italian seasoning. Cook until the onion is translucent.
  • 2. Add to the ground beef and sausage the fire roasted tomatoes along with the regular diced tomatoes. Stir to blend well.
  • 3. Once blended add your zucchini, green peppers, mushrooms, salt and pepper to taste. Cover with lid and let simmer approx 30 minutes, stirring occasionally.
  • 4. Meanwhile cook pasta according to directions for al dente. Drain but do not rinse.
  • 5. Preheat oven to 350. Put pasta in a 9 x 13 casserole dish. Add pasta sauce a ladle at a time, mixing after each ladle (there will be sauce left over) until you reach your desired consistency. "I say this because some like it saucy while others prefer less"
  • 6. Sprinkle mozzarella cheese on top and bake 30 - 40 minutes until cheese is melted and casserole is bubbling. Let stand for 5 minutes. Serve with grated Parmesan cheese on the side.

10.6 ounces hot Italian sausages (crumbled (see note))
3 cloves garlic (minced)
1/2 cup chicken broth or white wine
1/2 tablespoon flour
1 (14 fluid ounce) can diced tomatoes (with juices)
1/2 cup heavy/whipping cream
Salt & pepper (to taste)
6 large leaves basil (sliced/torn into small pieces)
Freshly grated parmesan cheese (to taste)

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it for about 5 minutes, stirring occasionally, over medium-high heat until browned.
  • Once the sausage is browned, take it out of the pan and set it aside. Drain the fat.
  • Add the garlic, followed by the chicken broth to the skillet. Sprinkle the flour in. Whisk it until the flour has dissolved, and scrape any browned bits from the bottom of the pan. Cook this mixture until it's significantly reduced (should only take a minute or two in total).
  • Add in the tomatoes, cream, and the sausage meat. Cook the sauce for a few more minutes until it's thickened to your liking. Season with salt & pepper as needed.
  • Just prior to serving, add in the torn basil leaves and then toss with the drained pasta. Serve with freshly grated parmesan cheese.

7 oz Italian sausages ((200g))

2 1/2 cups passata/crushed strained tomatoes ((700g))
1/2 cup reserved pasta water ((125ml))
1 ball fresh mozzarella ((4.4oz/125g))
1/2 tsp red pepper flakes ((chilli flakes))

1 small bunch basil for garnish ( (optional))

Steps:

  • Preheat the oven to 350°F/180F. Bring a pot of salted water to a boil and boil the pasta around 3 minutes less than advised on the packet instructions. Reserve 1/2 cup (125ml) of pasta water.
  • Squeeze the sausages out of their skins and brown in the pan on a medium heat. Add the finely chopped garlic, chili flakes, and oregano. Stir into the sausages and fry for 1 minute.
  • Add the passata (crushed strained tomatoes) along with the reserved pasta water and a good pinch of salt and pepper, simmer for around 5 minutes.
  • Turn the heat off and add the mascarpone, stir the sauce until the mascarpone is mixed in thoroughly.
  • Drain the pasta and add to the sauce, mix until it's completely coated. Transfer the pasta to an ovenproof baking dish and top with mozzarella. Bake in the oven for around 7-8 minutes or until the mozzarella is melted and bubbling. Serve with torn basil (optional).

1 onion (medium chopped)
2 teaspoons oil
2 cloves garlic (minced or crushed)
14 oz chicken broth (Low sodium suggested)
10.5 oz RoTel (or drained diced tomatoes)
1/2 cup sour cream (low fat suggested)
1/2 teaspoon salt
1/2 teaspoon pepper
8 oz dry pasta (of choice)
1 1/2 cup shredded cheese (Monterey, cheddar, or mozzarella. Low fat suggested.)
2 green onion ( sliced to garnish optional)

Steps:

  • Preheat 1 1/2 teaspoons olive oil over medium-high heat in a large oven-safe skillet.
  • Chop one medium onion and 1 pound of cooked sausage of your choice into 1/4 inch medallions. I suggest turkey smoked sausage.
  • Add the onion and sausage to the pan. Cook until onion is clearing nicely and sausage is browning-about 5 minutes. Add two cloves of minced garlic and cook another 30 seconds.
  • Add 1 - 14 oz can low sodium chicken broth, 1 - 10 1/2 oz can RoTel, 1/2 cup low fat sour cream, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Mix well.

10.5 ounces cream of mushroom soup
10 ounces Rotel tomatoes (undrained)
1 1/2 cups reserved pasta cooking water
1 1/2 cups shredded medium cheddar cheese (divided)
1 1/2 cups shredded Monterrey jack cheese (divided)
1 small green bell pepper (thinly sliced)
1 small red bell pepper (thinly sliced)
1/2 small onion (thinly sliced)
1 tablespoon oil or bacon grease
2 teaspoons Frank's hot sauce
1 teaspoon Tony's Cajun seasoning (or preferred brand)

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13 baking dish with non stick spray and set aside.
  • In a skillet, heat oil or bacon grease to medium high. Slice the Cajun sausage into bite sized pieces. Cook in the oil, stirring until browned on all sides. Stir in the thinly sliced peppers and onions. Reduce heat to medium low. Continue to cook and stir until the vegetables are crisp tender.
  • Cook pasta according to package directions for al dente. (You want the pasta to be slightly firm. It will finish cooking during baking.)

  • Fold in the sausage and vegetables. Transfer to the baking dish. Sprinkle with the remaining cheese.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for 10 more minutes until the cheese is golden and bubbly.
  • Serve hot!

Spicy Sausage Pasta is s lovely twist on the normal pasta dish. The addition of chillies and Italian sausage takes this up a level.

400 g tagliatelle (fresh)
8 tbsp Italian olive oil
1 bunch asparagus (fine)
1 medium onion (finely sliced)
4 large Italian sausages (chopped)
100 g chestnut mushrooms (sliced)
1 medium red chilli
1 hand pine nuts
100 g Pecorino cheese (grated)
salt (to taste)
ground black pepper (to taste)

Steps:

  • Cook the pasta in salted boiling water until al dente.
  • In a frying pan, heat the olive oil and shallow fry the onion and sausage until golden. Add the asparagus and cook in the pan at the same time.
  • Add the mushrooms, chilli and the pine kernels, season with salt and pepper and cook for about three minutes.
  • Drain the pasta, add to the sauce and mix well.
  • Serve immediately with some freshly grated pecorino on top.

Make a spicy version of macaroni and cheese, with mini penne pasta, smoked andouille sausage, onion, cheese, and Creole seasoning.

8 ounces mini penne pasta, or elbow macaroni
12 to 16 ounces smoked andouille sausage, thinly sliced
1/2 cup onion, chopped
1/2 cup green bell pepper, or red; chopped
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
2 cups shredded Cheddar cheese
1 teaspoon Creole seasoning
Salt and pepper, to taste
For the Topping:
1/2 to 1 cup soft fine bread crumbs
2 to 3 teaspoons butter, melted

Steps:

  • Gather the ingredients.
  • Cook pasta following package directions. Drain and set aside.
  • In a large saucepan or skillet, cook the andouille sausage with the onion and bell pepper until the onions are translucent. Remove the sausage mixture to a plate and set aside. Preheat the oven to 350 F. Lightly grease a 2-quart casserole or spray with nonstick cooking spray.
  • Over medium heat melt 2 tablespoons of butter in the same skillet you used to cook the vegetables. Stir in the flour until blended.
  • Gradually add the milk and Creole seasoning to the skillet. Cook, stirring constantly until thickened.
  • Add the cheese and stir until melted. Taste and add salt and pepper, as needed.
  • Stir in the drained pasta and sausage mixture.
  • Spoon the pasta into the prepared casserole.
  • Mix the bread crumbs with the butter and sprinkle it over the top of the casserole.
  • Bake for 30 minutes, or until topping is browned and casserole is bubbly.
  • Enjoy!
