1 teaspoon rice-wine vinegar
1 teaspoon sugar
1 red Thai chili, seeded and finely chopped
2 cloves garlic, peeled and minced
1 tablespoon lime juice
1 tablespoon fish sauce (see note)
2 star fruits, thinly sliced
1 unripe banana, peeled and thinly sliced
1 cucumber, peeled, seeded and thinly sliced
1/2 cup chopped mint leaves

Steps:

  • In a medium bowl, whisk together the coconut juice, vinegar, sugar, chili, garlic, lime juice and fish sauce. Add the remaining ingredients and toss to coat. Serve with fragrant beef (see recipe).

1 cup cubed, seeded watermelon
1 mango, peeled and cubed
1 green apple, cored and sliced
¼ cup lime juice
2 tablespoons honey, or more to taste
1 jalapeno pepper, seeded and chopped
2 teaspoons chili-lime seasoning (such as Tajin®)

Steps:

  • Mix pineapple, watermelon, mango, and green apple in a large bowl.
  • Blend lime juice, honey, and jalapeno in a blender until smooth.
  • Pour jalapeno dressing into the large bowl and mix thoroughly. Sprinkle chili-lime seasoning on top. Chill for 1 to 2 hours before serving.

1 (8 ounce) container plain yogurt
1/4 cup honey
2 tablespoons chopped crystallized ginger
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon ground red pepper (optional)
3 ripe mangoes, peeled and diced
3 bananas, peeled and diced
1 (15 1/4 ounce) can pineapple tidbits, drained
1/4 cup pistachios, toasted and chopped

Steps:

1/4 teaspoon kalonji seeds
2 teaspoons ground coriander
1/2 teaspoon sugar
1/4 teaspoon cayenne pepper, or to taste
1/8 teaspoon ground turmeric
1/8 teaspoon ground asafoetida
3 starfruit, (2 1/2 to 3 inches each), thinly sliced or chopped

Steps:

  • 1. Prepare the chaat masala. Then, heat the oil in a small nonstick wok or saucepan over medium-high heat and add the fennel, cumin, mustard, funugreek, and kalonji seeds they should sizzle upon contact with the hot oil. 2. Quickly add the coriander, sugar, cayenne pepper, turmeric, and asafoetida and stir a few seconds. Add the star fruit and cook, stirring, until golden, 3 to 5 minutes. 1/4 ounce jalapeno, seeded, ribs removed, and finely chopped
2 ribs celery, trimmed and cut into 1/4-cubes, leaves reserved
Juice and zest of 1 orange (about 6 tablespoons juice)
2 tablespoons sherry or red-wine vinegar
1 tablespoon honey
Coarse salt and freshly ground pepper
2 firm pears, such as Bosc, peeled, cored, and quartered
2 tart apples, such as Fuji, peeled, cored, and quartered
1/2 teaspoon ground ginger
2 tablespoons dark-brown sugar
Juice and zest of 1 lemon (about 3 tablespoons)
1 small red onion, peeled and cut into 1/2-inch rounds
Olive-oil cooking spray

Steps:

  • Combine jalapeno and celery in a large bowl; set aside. In a small bowl, combine orange juice, sherry, and honey; season with salt and pepper. Pour orange mixture over jalapeno-celery mixture. Add orange zest; toss to combine. Set aside.
  • In a medium bowl, combine pears, apples, ginger, sugar, and lemon juice; set aside. Spray a grill pan with cooking spray. Heat over medium-high heat until hot but not smoking. Grill onion rounds, basting with a little liquid from pear-apple mixture. Cook each side until softened and slightly charred, 3 to 5 minutes per side. Transfer onions to a cutting board; cut into 1/4-inch cubes. Add to jalapeno-celery mixture.
  • Grill apple and pear quarters in batches, until golden brown on each side, basting with collected juices in bowl, 2 to 5 minutes per side. Transfer to a cutting board; cut into 3/4-inch cubes. Add to jalapeno-celery mixture along with juices. Chop celery leaves; add to jalapeno-celery mixture along with lemon zest. Stir to combine. Let sit at least 1 hour at room temperature. Season to taste.
