Steps:
- Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat.
- Chop the cheese block into cubes and add along with the diced tomatoes and green chiles and chopped green chiles, juice and all.
- Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.
CHORIZO QUESO DIP
When I couldn't figure out what to do with a roll of bulk chorizo sausage, this recipe was born. It may sound similar to other dip recipes, but don't let that fool you...the flavor of this dip definitely sets it apart from the rest. This also reheats well. Enjoy!

- Cook and stir chorizo sausage in a skillet over medium heat until cooked completely, 5 to 7 minutes; drain and transfer to a slow cooker.
- Stir diced tomatoes, cream cheese, and processed cheese in with the chorizo.
- Cook on Low until cheese is melted, stirring occasionally, 1 1/2 to 2 hours.

CARAMELIZED SHALLOT SAUSAGE CON QUESO

Steps:
- Preheat oven to 350°F.
- Bake breadsticks according to package directions, adding seasoning before baking (I used chili powder, parsley, oregano and sea salt and drizzled with extra virgin olive oil).
- Meanwhile, in medium saucepan, heat oil. Add shallots: cook 4 to 5 minutes or until soft and caramelized. Remove from saucepan; spoon onto paper towels to drain.
- In same saucepan, cook sausage, over medium heat, breaking into pieces while stirring until thoroughly cooked. Remove from saucepan; drain on paper towel. Wipe pot clean with paper towel.
- To same saucepan, over medium heat, add cheese product. As cheese product begins to melt, stir in tomatoes and green chilies. Continue to cook and stir until cheese product is melted.
- Add cooked sausage and shallots to cheese product mixture; stir until well combined. Top with chopped green onions. Serve with breadsticks as dippers.

- In a large skillet, cook beef and sausage with onion, jalapenos and garlic over medium-high heat until meat is no longer pink, 5-7 minutes, crumbling meat. Using a slotted spoon, transfer to a 5-qt. slow cooker. Stir in chili, soup, tomatoes, pimientos and cheese. , Cook, covered, on low until heated through, 2-3 hours, stirring halfway through cooking. Serve warm with taquitos or chips.
