SPICY TANGY PRAWNS KERALA STYLE
Spicy tangy Prawns Kerala style is an excellent dish made with prawns cooked in a tangy freshly ground Kerala masala.

- Take a pan add whole red chilly, coriander seeds, peppercorn, fenugreek seeds, and dry roast the ingredients in a slow flame, add garlic, ginger, and put it in the blender make a fine paste. Heat oil in a pan add mustard seeds, chopped onions, salt, curry leaves, cooks these onions till brown colour. In this add made masala, turmeric powder, cook it for few minutes, then add tomatoes, put the lid and cook for 4 minutes. Add green chilly, kokum, then add prawns and add coconut milk mix it well and cook for 2 minutes, switch off the flame. Serve this hot with rice.

Steps:
- In a food processor, blitz the onion, chili, ginger and garlic together to make a paste. Set aside.
- In a large pan, heat the oil over a medium heat.
- Add the fenugreek, turmeric, asafoetida, mustard seeds, and curry leaves to the pan, and fry for a couple of minutes.
- Add the paste and continue to cook for 2-3 minutes.
- Add the prawns and water. Cook until they start to turn pink.
- Pour in the coconut milk, salt, pepper, and lime juice, and cook for another few minutes.
- Serve with parathas, naan bread, and rice.
- Enjoy!

Steps:
- In a food processor, blitz the chillies, onion and ginger with 3 tbsp water into a smoothish paste - you may need to scrape it down the sides.
- Heat the oil in a heavy pan or wok. When hot, toss in the mustard and fenugreek seeds, and curry leaves - they'll crackle and pop - and fry for 10 seconds. Add the onion paste, turn the heat down a tad and cook without colouring for about 5 minutes. Splash in some water if it starts to catch.
- Add the turmeric and cracked peppercorns and stir the spices around for a few seconds before tipping in the prawns. Pour in the coconut milk and bring to a simmer, stirring all the time. The milk will take on a yellow colour from the turmeric. Cook for 1 minute until everything's heated through. Squeeze over some lime, sprinkle with fresh coriander and serve with rice.

- Marinate the the cleaned and de-veined prawns in some salt, 1 tsp chilli powder, coriander powder and turmeric. Set aside for 5 minutes.
- Place a pan with coconut oil on medium heat and add the sliced onions. Saute for 2-3 minutes till the onions start to caramelize slightly.
- Now tip in the prawns and chopped curry leaves and mix well with the onion masala. Continue to cook for 10-12 minutes, stirring intermittently. The prawns will release some moisture. Allow the water to dry so that the spice paste has a thick, coating consistency.
