You can make this chili as spicy as you like - the combination of the amount of chili powder, cumin and hot pepper sauce provides the option to make this chili as spicy as you like.

- Melt butter in 4-quart saucepan until sizzling; add turkey, onion and garlic. Cook over medium-high heat, stirring occasionally, 10-12 minutes or until lightly browned.
- Reduce heat to medium. Stir in all remaining ingredients except green pepper and Cheddar cheese. Cover; cook, stirring occasionally, 25-35 minutes or until heated through.
- Stir in green pepper. Continue cooking, stirring occasionally, 3-5 minutes or until green pepper is heated through.
- To serve, spoon chili into bowls; top each serving with 2 tablespoons cheese.

- Heat the olive oil in a large, heavy skillet over medium-high heat. Add the onion, garlic, salt, chili powder, and oregano and cook, stirring, until fragrant, about 3 minutes. Stir in the tomato paste and the chipotle chile and sauce; cook 1 minute more. Add the turkey, breaking it up with a wooden spoon, and cook until the meat loses its raw color, about 3 minutes. Add the beer and simmer until reduced by about half, about 8 minutes. Add the tomatoes--crushing them through your fingers into the skillet--along with their juices and the beans; bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes.
- Ladle the chili into bowls and serve with the garnishes of your choice.

QUICK AND SPICY TURKEY CHILI

- Heat the canola oil in a large skillet, preferably cast iron, on high heat. Add the ground turkey and saute until browned, about 3 minutes. Add the onion and garlic and continue cooking until the turkey is cooked through. Add the chili powder, paprika, cumin, salt, and pepper and stir until evenly coated.
- Reduce the heat to medium low and add the canned tomatoes with juices (or sauce) and kidney beans and stir. Add the ketchup, salsa, tomato paste, and Sriracha stirring until well combined. Let simmer for at least 20 minutes. The longer it cooks, the spicier it will be.
- Serve over brown rice topped with Greek yogurt and shredded Monterey Jack cheese. Servings: 6
