Sweet and Spicy Cranberry Chutney image

This is by far the best cranberry dish of any type that I've ever tasted. It was passed on to me from my mother-in-law. The garlic adds a hint of savoriness and the fresh ginger gives it a spicy kick. A very easy recipe with a sophisticated flavor. I could not find another cranberry chutney recipe exactly like it anywhere on the web, so I am sharing it here! The flavor gets better the longer it sits, so making it a day or two ahead is preferable.

2 cups water
1 ½ cups brown sugar
1 cup white sugar
4 cups fresh cranberries
1 cup chopped onion
1 cup dates, pitted and chopped
1 cup raisins
½ cup vinegar
½ cup chopped fresh ginger
2 teaspoons ground cinnamon
1 teaspoon salt
1 large garlic clove, chopped
8 cloves

Steps:

  • Combine water, brown sugar, and white sugar in a large pot; stir until sugars dissolve. Add cranberries, onion, dates, raisins, vinegar, ginger, cinnamon, salt, garlic, and cloves. Bring to a boil, stirring occasionally.
  • Reduce heat and simmer, stirring occasionally, until most of the cranberries have burst and sauce begins to thicken, about 15 minutes.
  • Pour into a large bowl and refrigerate until set, about 45 minutes.

8 cups fresh-frozen cranberries
2 minced shallots
2 seeded and minced jalapeno peppers
2 minced garlic cloves
1 1/2 cups brown sugar
1 1/2 cups sugar
1 1/2 cups red wine vinegar
2 tablespoons minced fresh ginger
2 tablespoons whole mustard seeds
1 tablespoon freshly grated orange zest
1 tablespoon freshly grated lemon zest
2 teaspoons salt

Steps:

  • 1.Combine all ingredients in a large saucepan; bring to a boil over high heat. Simmer, uncovered, stirring often, until the cranberries have broken down and the mixture has thickened somewhat, 10 to 15 minutes. 2 .Let cool completely. Ladle the chutney into clean jars and refrigerate.

Dash hot pepper sauce
3/4 cup (about 6 ounces) fat-free or light cream cheese spread (from 8-oz. container)

Steps:

  • Heat oil in small saucepan over medium-low heat until hot. Add onion; cook 3 to 4 minutes or until softened, stirring frequently.
  • Add cranberry sauce, vinegar, pumpkin pie spice, thyme, pepper and hot pepper sauce; mix well. Bring to a boil over medium heat. Cook 10 to 12 minutes or until thickened and reduced slightly, stirring frequently. Cool 20 minutes. Cover; refrigerate at least 4 hours or overnight.

It will keep for 2 weeks or so; make it in advance, as soon as cranberries are available, and have it on hand in the fridge through the holiday season.

2 large jalapeños, preferably red, seeded and finely diced
1 tablespoon lemon juice
1/2 teaspoon salt

12 ounces cranberries

Steps:

  • Put sugar, jalapeños, lemon juice, salt and cayenne in a heavy-bottomed saucepan over medium-high heat. Add 1/2 cup water, then stir with a wooden spoon to dissolve sugar, and simmer 2 minutes.
  • Add ginger and cranberries, and bring to a boil. Reduce heat to medium and let mixture cook, stirring occasionally, until cranberries have softened and no liquid remains in pan, about 15 minutes.
