LEMONY SPIKED SWEET TEA



Lemony Spiked Sweet Tea image

Kicked up with golden rum, this sweet tea is an interesting take on a longtime Southern classic. This recipe is from"Emeril at the Grill" by Emeril Lagasse.

Number Of Ingredients 6

7 cups water
6 orange pekoe tea bags
1 1/2 cups sugar
1 1/3 cups freshly squeezed lemon juice
1 cup Bacardi 151 or other high-proof golden rum
Fresh mint sprigs, for garnish

Steps:

  • Bring 4 cups of the water to a boil in a medium saucepan and add the tea bags. Remove the pan from the heat, cover it, and allow the tea bags to steep for5 minutes.
  • Remove and discard the tea bags. Add the sugar to the saucepan and stir until dissolved. Add the remaining 3 cups water and stir to combine. Transfer the mixture to a pitcher, and add the lemon juice and rum. Chill thoroughly before serving.
  • Serve over ice, in tall glasses garnished with mint sprigs.

Hot Spiced Tea for the Holidays image

This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

6 cups water
1 teaspoon whole cloves
1 (1 inch) piece cinnamon stick
6 tea bags (such as Lipton®)
¾ cup orange juice
½ cup white sugar
¼ cup pineapple juice
2 tablespoons lemon juice

Steps:

  • Pour water into a pot; add cloves and cinnamon stick. Bring water to a boil; remove from heat. Add tea bags to water and set aside to steep until the tea is to your preferred strength, at least 5 minutes. Remove and discard cloves, cinnamon stick, and tea bags.
  • Stir orange juice, sugar, pineapple juice, and lemon juice together in a saucepan; bring to a boil. Cook and stir the juice mixture until the sugar dissolves completely. Pour juice mixture into the spiced tea; serve hot.

3 pounds mushrooms, cleaned and quartered
3 pounds chicken parts or scraps
1 medium white onion, quartered
2 carrots, trimmed
1 rib celery
12 black peppercorns
1/4 teaspoon ground allspice
2 bay leaves
1/2 bunch parsley
1/2 teaspoon fresh thyme
1/2 teaspoon salt
2 gallons water
Salt and freshly ground pepper to taste
8 ounces aquavit or vodka

Steps:

  • In a large stock pot, combine all the ingredients except the liquor and simmer over low heat for at least 6 hours and up to 24, skimming frequently to remove the chicken fat. The soup should simmer until it has turned very dark and there is one gallon of broth.
  • Strain the soup through a fine mesh strainer and adjust the seasoning with additional salt and pepper. Serve in warm mugs and spike each with an ounce of aquavit or vodka to each.

GINA'S SPIKED SWEET TEA

2 quarts water
4 hibiscus tea bags
1 cup superfine sugar
1 bunch mint leaves, reserve 10 sprigs, for garnish
2 cups sweet tea vodka, chilled (recommended: Firefly)
2 lemons, sliced
Crushed ice
Mint, for garnish

Steps:

  • Bring the water to a boil in a large pot over medium heat. Add the tea bags and turn off the heat. Let steep for 10 minutes. Remove the tea bags, stir in sugar and let cool completely.
  • Muddle the mint leaves in a glass pitcher along with, the tea, the vodka, and the lemon wheels. Stir to combine with a wooden spoon. Serve in tall glasses filled with crushed ice and garnished with a sprig of mint.

6 cups sugar
3 cups water, plus 2 quarts, divided
1 1/2 ounces (or 3/4 cup) loose black tea leaves
Ice cubes
2 lemons, zested
1/2 bunch fresh mint
2 ounces your favorite whiskey or bourbon per serving (recommended: Maker's Mark)

Steps:

  • Combine sugar and 3 cups water in a non-reactive saucepan. Slowly heat until sugar melts. Remove from heat and cool.
  • Infuse the black tea in 1 quart of just boiled water for 2 minutes. Strain tea into a pitcher and then add 1 quart of room temperature water.
  • Combine the tea and the cooled simple syrup, mixing well. Refrigerate until cool.
  • To serve, fill a 12-ounce glass with ice cubes, a pinch of zest, and a sprig of mint. Add 2 ounces whiskey or bourbon and fill to the top with the sweetened tea. Stir and serve. Repeat as needed.

From broth to bowl, you'll need only about 15 minutes to whip up this recipe. You can make it heartier by throwing in cooked rice or quinoa just before serving, or make extra if friends stop in (just multiply the ingredients by the number of guests).

2 cups store-bought mushroom broth
One 3-inch piece fresh ginger, peeled
3 sprigs fresh dill
3 sprigs fresh mint
3 sprigs fresh thyme
1/2 red or green jalapeno, thinly sliced
2 slices dried porcini mushroom
1 teaspoon coarse salt
2 to 3 tablespoons extra-virgin olive oil
6 ounces assorted wild mushrooms, such as chanterelle, shiitake, and oyster
1/2 shallot, thinly sliced
2 tablespoons white wine
2 to 3 thin slices red or green jalapeno
1/4 teaspoon fresh thyme leaves

Steps:

  • In a small saucepan, combine all ingredients for the broth. Bring to a boil, and remove from heat. Cover, and let sit for 5 minutes. Strain.
  • In a medium saucepan, heat oil until very hot but not smoking. Add mushrooms and cook 4 to 5 minutes, until golden. Add shallot and cook, about 2 minutes. Add wine and cook, about 30 seconds.
  • Add broth and bring to a boil. Remove from heat; let steep, covered, for 5 minutes. Serve topped with sliced jalapeno and thyme leaves.
