- Pour mango, pineapple, and lime juices into a large pitcher. Top with sparkling water. I usually like to do half juices/half sparkling water, but you can add per your preference.
- Add ice cubes, lime slices, and mint sprigs if desired. Serve immediately.
- If you'd like to prep this ahead of time, combine all juices and store in the fridge. Add sparkling water and garnishes right before serving.

- In a large pot mix the milk, sugar and powdered milk. Bring the mix to a low simmer over medium heat and stir to dissolve the sugar, then turn the heat down and just keep it warm.
- Put the egg yolks in a medium bowl and whisk for 2 minutes until they are thickened.
- While constantly whisking, slowly add 1 cup of the hot milk mixture and whisk until it is blended. Then pour the egg mixture back into the pot of hot milk and increase heat to medium. Stir the mixture constantly with a wooden or plastic spoon, until the mixture is thickened (like gravy).
- Stir in whipping cream and vanilla. Cover and put into the refrigerator for at least 6 hours (or overnight) before making the ice cream in the ice cream maker.
- Blend fruit in a food processor or blender to a puree consistency.
- Stir the pureed fruit into the milk and egg mixture. Mix thoroughly.
- Pour the mixture into an ice cream machine and churn until frozen, 15-20 minutes, according to the manufacturer's instructions.
- Transfer to plastic container and place in the freezer for an hour before serving.
- Serving: take it out for 5-10 minutes before serving, or longer, so it comes to the right scooping temperature.

- Using a sharp knife, cut off the top of the pineapple. Run a knife around the inside of the pineapple about ½-inch from the outer skin. Be careful not to cut through the bottom of the pineapple. Cut the inside of the pineapple into 6-8 wedges. Using a large spoon, wiggle the wedges loose from the bottom and scoop out of the pineapple shell. Wrap the pineapple shell in plastic wrap and refrigerate until ready to use.
- Line a baking sheet with parchment paper. Cut the pineapple flesh into 1-inch pieces and spread on the prepared baking sheet in a single layer. Freeze for 4 hours, or until frozen solid.
- Scoop 1 cup of frozen pineapple chunks into a blender. Transfer the rest to a freezer bag and store in the freezer for another use.
- To the blender, add the rum, coconut milk, lime juice, agave, salt, and frozen mango. Blend until smooth.
- Pour the drink into the pineapple shell, garnish as desired, and serve immediately.
