SPINACH ALFREDO PASTA BAKE



Spinach Alfredo Pasta Bake image

1 pound short pasta, such as penne or gemelli
1 cup ricotta cheese
2 tablespoons chopped fresh parsley
Zest of 1 lemon
7 tablespoons butter
One 10-ounce container mushrooms, sliced
Kosher salt and freshly ground black pepper
One 8-ounce bag fresh spinach
2 cloves garlic, minced
1 cup dry white wine or low-sodium vegetable broth
1 cup half-and-half
1/2 cup heavy cream
Low-sodium vegetable broth, as needed, for thinning
1 cup grated Parmesan
3/4 cup panko breadcrumbs

Steps:

  • Bring a large pot of water to a boil. Cook the pasta in the boiling water, draining it about 2 minutes before the time on the package. It should still be a bit firm. Rinse it in cold water to stop the cooking process and set aside.
  • Mix the ricotta with the parsley and lemon zest in a small bowl and set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • In a large deep skillet over medium-high heat, melt 2 tablespoons of butter. Add the mushrooms and season with salt and pepper. Cook until the mushrooms have given up their liquid, 5 to 6 minutes. Add the spinach and garlic and cook, stirring frequently, until the spinach has wilted. Remove the vegetables and set aside, leaving any liquid in the skillet.
  • Add 2 tablespoons of butter to the skillet. Pour in the wine and let it bubble up and reduce for 1 1/2 to 2 minutes. Add the half-and-half and cream, season with salt and pepper and cook, whisking, until it's all combined. If it gets too thick as it cooks, you can thin it with a little vegetable broth. When the sauce looks good, remove it from the heat and stir in 3/4 cup of the Parmesan.
  • Melt the remaining 2 tablespoons butter in a small pan. Remove from the heat and stir in the breadcrumbs and remaining 1/4 cup Parmesan.
  • In the buttered baking dish, stir together the pasta, vegetables and sauce. (Add a splash of broth if needed). Add spoonfuls of the ricotta mixture, pushing them a bit into the pasta. Sprinkle the breadcrumb mixture over the top of the pasta. Cover and bake for 20 minutes. Uncover and cook until the top is brown and the mixture is bubbling, about 20 minutes more.

Steps:

  • Heat oven to 375°F. Melt margarine in large skillet over medium-high heat. Add 1/2 cup onions; cook and stir 2 minutes or until crisp-tender. Add spinach; cook 1 minute or until spinach is thoroughly heated, stirring occasionally. Remove from heat. Stir in cottage cheese, sour cream and 1 cup of the cheese.
  • Spoon 1/4 cup filling down center of each tortilla; roll up. Place, seam side down, in ungreased 13x9-inch (3-quart) glass baking dish. Pour enchilada sauce evenly over tortillas; sprinkle with remaining cheese.
  • Bake at 375°F. for 15 to 20 minutes or until bubbly and thoroughly heated. Sprinkle with sliced green onions.

1/2 teaspoon ground cumin
1/2 teaspoon garlic-pepper blend
1/2 cup sour cream
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)
1 can (10 oz) Old El Paso™ enchilada sauce
1 package (11.5 oz) Old El Paso™ flour tortillas (8 tortillas)
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown.
  • Stir in spinach; cook, stirring frequently, until thawed. Stir in green chiles, cumin, garlic-pepper blend, sour cream and 1 cup of the cheese.
  • Spread about 1 teaspoon enchilada sauce on each tortilla. Top each with about 1/2 cup beef mixture. Roll up tortillas; place seam sides down in baking dish. In small bowl, mix remaining enchilada sauce and the salsa; spoon over enchiladas. Sprinkle with remaining 1 cup cheese.

1 pound bulk pork sausage

2 cups shredded cheddar cheese
1 carton (15 ounces) ricotta cheese

  • Soak the noodles in hot water for 15 minutes. , Meanwhile, in a large skillet, cook the sausage over medium heat until no longer pink. Drain noodles; set aside. 1 can (6 ounces) tomato paste
3 to 4 teaspoons chili powder
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 greens onions, chopped
1/3 cup sour cream
1/4 cup 4% cottage cheese, drained
1-1/2 cups shredded Colby/Monterey Jack cheese, divided
6 to 8 corn tortillas (7 inches)

Steps:

  • For the sauce, whisk the broth, tomato paste and chili powder in a saucepan. Simmer, uncovered, for 5 minutes. , Meanwhile, combine spinach, onions, sour cream and cottage cheese in a bowl; stir in 1 cup shredded cheese. ½ yellow onion, diced
3 cloves garlic, minced
1 (8 ounce) package sliced fresh mushrooms
1 ½ pounds fresh spinach, stems removed
1 ½ cups shredded Monterey Jack cheese
¾ cup cottage cheese
½ cup sour cream
1 teaspoon salt
½ teaspoon ground black pepper
10 (6 inch) flour tortillas
1 (16 ounce) jar Alfredo sauce
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a saucepan over medium heat; cook and stir onion and garlic until softened, about 2 minutes. Add mushrooms; cook and stir until mushrooms begin to soften, about 1 minute. Fold spinach into mixture and cook until wilted, 3 to 5 minutes. Remove saucepan from heat.

1 tablespoon vegetable oil
2 tablespoons all-purpose flour
3 cups store bought alfredo sauce
1 3/4 cups chicken broth
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 red bell pepper, chopped
2 cups fresh baby spinach leaves
1/2 cup sun-dried tomato, drained and chopped
1 (7 ounce) can sweet whole kernel corn
1/2 teaspoon salt
10 -14 corn tortillas
6 slices bacon, cooked and crumbled
1 cup green onion, chopped
3 cups sharp white cheddar cheese, grated

Steps:

  • For the sauce: In a saucepan over medium-low heat, combine vegetable oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the alfredo sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • For the filling: In a large skillet over medium-high heat, add the vegetable oil. Cook the potatoes and bell pepper until tender; about 10 to 12 minutes. Transfer to a large bowl. Using the same skillet and remaining oil, add the spinach leaves. Cook until spinach is wilted; about 5 to 8 minutes. Transfer spinach to the bowl of potatoes. Add corn and, sun-dried tomatoes and salt. Combine well.
  • In a small dry skillet over medium heat, lightly brown the tortillas until soft, but not crisp. Preheat oven to 350 degrees.
  • Spread 1/2 cup of the sauce in the bottom of a 9x13" baking dish. Dip each tortilla into the sauce. Set the sauce-soaked tortillas on a cookie sheet. Onto each tortilla, place some of filling, bacon crumbles and green onions. Top with a generous portion of grated Cheddar.
  • Roll up the tortilla to contain the filling. Place the tortilla seam-side down in the baking dish.
  • Repeat with the rest of the tortillas. Ladle the rest of the sauce over the top of all the enhiladas.
  • Then top with the remaining grated Cheddar. Bake for 25 to 30 minutes or until cheese is melted and bubbly.

1 chopped yellow onion
1 tablespoon oil (canola or vegetable)
1 (12 ounce) jar alfredo sauce
1 (8 ounce) jar medium salsa or 1 (12 ounce) jar of medium salsa
1/4 cup sliced jalapeno (optional)
1/2 cup chopped cilantro
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
1/2 teaspoon cayenne pepper
2 cups chopped lettuce
1 ripe tomatoes, diced
8 ounces mozzarella cheese
6 medium flour tortillas

Steps:

  • Lightly brown chicken in skillet with oil.
  • After chicken has a light brown color, add chopped onion, 1/2 cup water and 1/2 jar of salsa to pan and bring to a boil.
  • Reduce heat and let simmer on low-medium heat for about 15 minutes, stirring and breaking up chicken as it cooks. Stir often.
  • Add in spices while it is cooking.
  • Preheat oven to 385.
  • Spray a baking dish with non-stick cooking spray or coat with a light coating of oil.
  • Add 1/2 jar of alfredo sauce to chicken mixture and stir to combine.
  • Add in sliced jalapenos and 1/2 the cilantro.
  • Shredd the chicken with 2 forks.
  • Spoon equal amounts of the chicken mixture into the 6 tortillas, rolling the tortillas and placing them open side down into the baking dish.
  • In a bowl, mix the rest of the alfredo sauce, the rest of the salsa, and 1/2 cup water.
  • Pour that over the top of all of the enchillada rolls.
  • Sprinkle with the mozzarella cheese and cover with tin foil.
  • Bake for 30 minutes.
  • In the last 5 minutes, remove the tin foil and allow to brown in oven.
  • Top with shredded lettuce, tomatoes, cilantro and sour cream.
