SPINACH BEET SOUP

Steps:

• Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain, reserving some of the water.
• Combine spinach and beets in a blender adding as much of the reserved water as needed to help the mixture blend smoothly; blend until smooth.
• Melt butter in a large pot over medium heat. Stir blended spinach mixture with the melted butter; cook until the color begins to change, 5 to 7 minutes. Stir water into the mixture to thin the liquid. Stir drained orzo pasta into the soup; season with thyme, salt, and pepper. Remove pot from heat and stir sour cream through the soup. Sprinkle with Cheddar cheese to serve.

HEARTY SPINACH SOUP WITH BEETS AND POTATOES

Steps:

• Place the butter in a large stockpot and melt over medium-high heat.
• Add the onion and garlic and saute for 1 minute.
• Add the spinach and paprika and saute for about 1 minute, until the spinach is wilted.
• Add the stock, potatoes, beets and tomato and bring to a boil.
• Reduce the heat to a light simmer and cook for about 30 minutes, or until the potatoes and beets are tender.
• Transfer the soup to a food processor in batches and puree until smooth.
• Season with salt and pepper.
• Ladle the soup into serving bowls and garnish with the sour cream and a parsley sprig.

BEET AND BRAISED BEEF SOUP

Steps:

• Salt the short ribs and, if possible, allow them to sit overnight or for several hours in the refrigerator. (If you don't have time for this step, salt the short ribs and proceed directly to the next step.)
• Heat one tablespoon of olive oil in a stockpot on high heat, and brown the short ribs in batches.
• Remove the ribs from the pot, turn the heat down to medium-high, then add the onions and garlic, which will deglaze the pan. Stir occasionally.
• Brown the onions and garlic.
• Put the meat back into pot, cover with water (approximately 8 cups), and simmer for one hour.
• Add the soaked lima beans, and simmer for another 30 minutes.
• Add the cut vegetables and enough water to generously cover them.
• Simmer for 45 minutes or until the vegetables are softened and their flavors are melding together.
• Add some of the dill now (reserve the rest for a garnish when you serve the soup).
• The meat should be pulling off the bone at this point, and the bones can be discarded. If the meat has not yet reached this stage of doneness, it can be cut up into chunks and put back into the soup to finish cooking.

ONE-POT SPINACH BEEF SOUP

Steps:

• In a 6-qt. stockpot, cook beef and garlic over medium heat until beef is no longer pink, breaking up beef into crumbles, 6-8 minutes; drain. Stir in broth, tomatoes and seasonings; bring to a boil. Stir in pasta; return to a boil. Cook, uncovered, until pasta is tender, 7-9 minutes., Stir in spinach until wilted. Sprinkle servings with cheese.

VIETNAMESE BEEF AND SPINACH SOUP

Steps:

• Bring a large pan of salted water to the boil and blanch the spinach leaves for a few seconds until they are just wilted. Drain well and refresh in cold water to prevent further cooking. Drain again, squeezing out excess water.
• Combine the steak strips with the shallots, garlic, 1 tablespoon of fish sauce and a grinding of black pepper, and then set aside.
• Just before you are ready to eat, bring the chicken broth to a simmer in a large saucepan and stir in the remaining fish sauce, together with the lemon juice, sugar and chili.
• Stir in the blanched spinach and the beef, with its marinade.
• Bring the soup back to simmering point; add another good grinding of black pepper and serve at once.
