Easy, cheesy, and totally decadent baked spinach!

20 ounces frozen spinach, thawed and squeezed dry
4 ounces cream cheese, cut into small cubes
1 1/2 cups shredded monterey jack cheese
6 slices bacon, fried and crumbled
4 large eggs, beaten
1/4 cup butter, melted
2 cloves garlic, minced
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Add all of the ingredients to a large mixing bowl and stir well to combine.
  • Spread mixture into a 8x8 baking dish and bake for 35-40 minutes or until the edges are golden and the center is set.
  • Serve immediately.

Number Of Ingredients 11

3 tablespoons unsalted butter
2 cloves garlic, minced
1 small onion, finely chopped
1 1/4 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne
Two 10-ounce packages frozen chopped spinach, thawed and squeezed dry
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan
2 ounces cream cheese
2 tablespoons panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg and cayenne and bring to a simmer. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Mix in the spinach, 1/2 teaspoon salt and 1/4 cup of the Parmesan. Add the cream cheese and stir until melted. Season with salt and pepper to taste.
  • Transfer the mixture to a 1 1/2- to 2-quart baking dish and sprinkle with the panko and remaining 1/4 cup Parmesan. Bake until bubbling and light golden on top, about 15 minutes.

I have printed it here just like it is in the cookbook, but I would probably use low fat cheddar cheese instead of fat free, because it performs better. That should only add about 3 grams fat per serving.

1 carton (16 oz) fat free cottage cheese
8 oz fat free cheddar cheese, grated
1 pkg (10 oz) chopped spinach (thawed and drained)
3/4 c egg substitute

Steps:

  • 1. Combine all ingredients and mix well.
  • 2. Spoon into a 1-1/2 to 2 quart casserole dish sprayed with nonstick spray. Bake 45 minutes at 350°F.
  • 3. Per 1-cup serving: calories = 127 fat, sat fat = 0g cholesterol = 10mg sodium = 633mg protein = 25g carbohydrate = 7g fiber = 1g Diabetic exchanges: 1/2 vegetables, 3-1/2 very lean meats

LOW FAT SPINACH & BROCCOLI CASSEROLE

Modification of a recipe found on the back of a package of spinach. It is very good if you like vegetable casseroles, but without the fat!

1 (16 ounce) package frozen chopped spinach
1 (16 ounce) package frozen chopped broccoli
1 cup sliced fresh mushrooms, lightly sauteed in margarine & chopped garlic
1 (10 1/2 ounce) can fat-free cream of mushroom soup
1/2 cup low-fat mayonnaise
2 egg whites, well beaten
salt and pepper

Steps:

  • Microwave spinach & broccoli as per package directions; drain well.
  • Meanwhile, saute mushrooms in light margarine & crushed garlic.
  • In a large mixing bowl, combine soup, mayo, egg whites and seasonings.
  • Add cooked vegies, including mushrooms.
  • Mix well.
  • Pour mixture into an 8x8 pan which has been sprayed with nonstick cooking spray.
  • Bake at 350 for about 35-40 minutes, or until firm.

1 (1 ounce) package dry onion soup mix
2 cups sour cream
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Drain spinach. In a medium mixing bowl combine spinach, soup mix and sour cream. Spoon into greased casserole dish and top with cheese.
  • Bake in preheated oven about 25 minutes, or until heated through.

  • Steam the spinach in a pot of boiling water until it is wilted and cooked, about 3 minutes. I use a steamer insert in my large soup pot. It will be a lot of spinach to start but will cook down a lot. Let cool completely.
  • Melt butter in a medium saucepan over medium heat. Add the garlic and cook, stirring occasionally, until fragrant but do not let it brown, about 4 minutes. Add the heavy cream, and bring to a simmer. Next, add the mozzarella and stir to melt and combine evenly. Simmer on low, stirring occasionally, until slightly thickened, about 3 minutes. Add the cream cheese and stir until melted. still on low heat. To the cheese sauce add salt, pepper, red pepper flakes, and nutmeg.
  • Using your hands, grab handfuls of the spinach and squeeze to ensure there is no water remaining in the spinach before you add it to the pot. To the cheese sauce, mix in the spinach and stir to combine evenly.
