Spinach Raspberry Salad With Balsamic Reduction Recipes
FRESH RASPBERRY BALSAMIC VINAIGRETTE
Super quick and easy salad dressing to use up those extra berries. I'm sure this would be tasty with other berries too.

Steps:
- Mix raspberries and sugar together in a bowl; set aside until mixture is juicy, about 10 minutes. Mash berries using a fork until liquefied. Pour berry mixture into a jar with a lid; add balsamic vinegar, olive oil, honey, and salt. Cover jar with lid and shake until dressing is mixed well. Store in refrigerator.

This was served at our wedding and it was really delicious. I thought all spinach salads were pretty much the same until I tried this dressing.

Steps:
- Mix the oil into the poppyseeds, dijon and honey.
- Add vinegar.
- Shake well-- this dressing stays emulsified very well.
- You can toss with the rest of the salad ingredients or toss with just the spinach and then garnish the top with the other ingredients, or plate each serving and pour dressing over, whatever you choose.

- Heat a skillet over medium heat. Add the walnuts and cook until they start to become aromatic, about 5 minutes. Stir occasionally to prevent burning and toast evenly. Add the balsamic vinegar, stir to coat, and remove from the heat. Toss with sea salt and allow to cool.
- Arrange the spinach in a large platter. Toss with the dressing. Top with the Raspberries, cheese, and caramelized walnuts. Enjoy!
