EASTER BIRD NESTS

Easter Bird Nests image

Easter Bird Nests are a fun, easy Easter candy recipe. Marshmallow Peeps sit on top of chow mein "nests" made with crunchy noodles and marshmallows.

Provided by Elizabeth LaBau

Categories     Dessert     Snack     Candy

Time 32m

Yield 12

Number Of Ingredients 9

2 1/2 cups miniature marshmallows
4 tablespoons/2 ounces butter
1 tablespoon vanilla extract
2 1/2 cups crispy chow mein noodles
1/4 cup small candy eggs
12 marshmallow Peeps
1/2 cup coconut (shredded)
1 drop green food coloring
Optional: 1/4 cup chocolate chips

Steps:

  • Gather the ingredients.
  • Prepare a muffin tin by spraying it thoroughly with nonstick cooking spray .
  • In a large microwave-safe bowl, combine the marshmallows and butter. Microwave for 1 minute then remove and stir vigorously. If the marshmallows are not fully melted, microwave for an additional 30 to 45 seconds until the marshmallows are melted. Stir the marshmallow and butter mixture until it is smooth and homogenous.
  • Add the vanilla extract and chow mein noodles and stir until the noodles are completely and evenly covered with the mixture. Allow the mixture to sit for a few minutes until it is cool enough to handle, but still warm enough to manipulate.
  • Using a large spoon, evenly divide the chow mein noodles among the 12 muffin tin holes.
  • Spray your hands with nonstick cooking spray, and mold the noodles into a nest shape, indenting the center and pressing the edges up the sides of the tin.
  • Place the nests in the refrigerator to set while you prepare the coconut. Place the coconut in a small bowl and add a drop or two of green food coloring. Using your hands, rub the coconut together until the green color is well-dispersed. (Wear plastic gloves if you don't want to get your hands green-the coloring usually washes out right away, though.)
  • Sprinkle the coconut on top of the nests. Add 2 or 3 eggs to each nest, and top them with a Peep. If you are going to be transporting these, you can melt a few chocolate chips and use the melted chocolate to secure the eggs and Peeps to the nest. Otherwise, you can leave them loose and allow people to eat them piece by piece.
  • Allow the marshmallow mixture to completely set before removing the nests. To remove them, slide a knife around the sides of the tin and gently insert it under the bottom of the nest to pull it out.
  • Enjoy.

EASTER BIRD'S NEST BREAD

Easter Bird's Nest Bread image

This decorative, tasty bread looks like a bird's nest when finished. Use raw eggs that you've colored to put in the center. They cook right along with the bread! This is a favorite in my family, and we have it for breakfast every Easter Sunday with the eggs we've colored. This Easter bread is especially tasty because it has a faint hint of lemon in it. My favorite way to eat it is warmed up, with butter spread on top.

Categories     Bread     Yeast Bread Recipes

Time 4h15m

Yield 24

Number Of Ingredients 16

2 tablespoons active dry yeast
1 cup lukewarm water
2 tablespoons white sugar
1 ½ cups all-purpose flour
¾ cup shortening
1 cup white sugar
1 ½ teaspoons salt
3 eggs
1 egg white
4 teaspoons grated lemon zest
2 tablespoons lemon juice
3 ¼ cups all-purpose flour
6 eggs, in the shell, dyed if desired
1 tablespoon heavy cream
2 tablespoons multicolored candy sprinkles
1 beaten egg yolks

Steps:

  • Sprinkle yeast onto warm water in a mixing bowl; let stand 5 minutes. Stir in 2 tablespoons sugar and 1 1/2 cups flour until smooth, then cover and set aside in a warm place until doubled in bulk, about 1 hour.
  • Cream together the shortening, 1 cup of sugar, and salt in a bowl. Add the 2 eggs and egg white, one at a time, mixing until smooth between each addition. Stir in the yeast mixture along with the lemon zest, lemon juice, and remaining 3 1/4 cups flour until a smooth dough is formed. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into four equal size rounds; cover and let rest for 2 minutes. Roll each round into a long rope about 18 inches long.
  • Grease two large baking sheets. Using the two long pieces of dough, form a loosely braided ring on one of the baking sheets, leaving spaces for three colored eggs. Seal the ends of the ring together and use your fingers to slide the eggs between the braids of dough. Repeat to form second loaf. Cover, and let rise until doubled in bulk , or until your finger leaves a dent when the bread is gently pressed, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Beat egg yolk together with 1 tablespoon heavy cream; set aside.
  • Bake in preheated oven for 10 minutes, then brush on egg yolk mixture and decorate with candy sprinkles. Continue to bake until the loaves are dark brown and sound hollow when tapped on the bottom, 30 to 40 minutes.

EASTER BIRDS NESTS (PEANUT BUTTER FREE)

Easter Birds Nests (Peanut Butter Free) image

I got this wonderful recipe from Dina de Leon on my mom's website that I go to. She posted it in a thread after asking about using PB in the recipe since it was going to her DC's school. After she posted it, I asked if I could add it to my online cookbook. She said yes so here it is. Also, while I'm posting the pic of these super cute nests, I can't take credit for it. Dina also took the picture. Enjoy!
