DELICIOUS EASY SPINACH AND STRAWBERRY SALAD WITH FETA
This is a simple salad to put together but big on flavor! --- you can also make this using salad greens mixed with fresh spinach, I just purchase a smaller bag of prewashed spinach for this, prep time does not include washing and drying the fresh spinach, all salad ingredients may be adjusted to taste --- you will love this salad!

Steps:
- In a large bowl toss the spinach with the strawberries and toasted almonds.
- In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.
- Sprinkle the feta over the top of salad.
- Serve immediately.

- Remove stems from Baby Spinach.
- Wash, hull, halve and slice Strawberries.
- Thinly slice Red Onion.
- Crumble Feta.
- Combine in a mixing bowl. Set aside.
- In a blender, or small bowl, combine Extra Virgin Olive Oil and Raspberry Balsamic Vinegar. I use a 2 to 1 ratio, most recipes I have read call for more olive oil and less vinegar than what I use. Mix according to your own taste. Blend for 15 seconds or whisk together.
- Pour dressing over salad and toss. You only need enough dressing to thinly coat everything. If you have extra in the bottom of the bowl leave it there lifting salad out with tongs. Drizzle any extra on a slice of crusty bread to eat with your salad.
- Plate and top with fresh ground white pepper and basil blossoms.

- Pour some cold water into a small bowl or a cup and soak the red onion slices while you’re preparing the salad. That step will help get rid of the harsh oniony taste (you can skip this step if you don’t mind raw onion flavor).
- Toast the pecans in a dry skillet on medium low heat for a couple minutes, shaking often. They should brown on the edges but make sure not to toast them too long or they will get bitter.
- Prepare the dressing. Whisk all dressing ingredients in a small bowl or add to a mason jar, close the lid and shake vigorously. Set aside.
- Assemble the salad. In a large bowl add baby spinach, strawberries, blueberries, toasted pecans, feta cheese and red onions (drained on a sieve). Give the dressing another whisk (or shake) and add 2/3 of the dressing and toss to coat. Depending on how much dressing you like on your salad, add more, if needed.
