2 teaspoons olive oil, divided
1 cup grape or cherry tomatoes
1 bunch spinach, stems removed
Salt and pepper
2 large eggs

Steps:

  • In a medium nonstick skillet, heat 1 1/2 teaspoons oil over medium. Add tomatoes and cook until softened, about 3 minutes. Add spinach and cook until wilted, 2 minutes; season with salt and pepper. Transfer to a bowl, wipe out pan, and add remaining 1/2 teaspoon oil. Add eggs to skillet and cook until whites are set but yolks are still runny, 2 to 3 minutes. Season with salt and pepper and serve on top of vegetables.

Spinach, Parmesan and Tomato Quiche image

Speed up the preparation of this savory quiche with a frozen pie shell and frozen chopped spinach.

One 9-inch frozen pie shell
1/4 cup thinly sliced fresh chives
3/4 cup finely grated Parmesan
1/2 cup roughly chopped thawed frozen spinach (squeezed dry)
1/2 cup halved cherry tomatoes
1 1/4 cups heavy cream
1 teaspoon finely chopped fresh rosemary
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • For the crust: Par-bake the crust according to package directions. Let cool slightly before adding the filling.
  • Adjust the oven temperature to 350 degrees.
  • For the filling: Sprinkle the chives evenly over the crust. Toss the Parmesan, spinach and tomato in a small bowl and sprinkle it in an even layer over the chives.
  • For the custard: Whisk the heavy cream, rosemary, eggs, 1 teaspoon salt and 1/2 teaspoon pepper together in a medium bowl.
  • Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

1/2 teaspoon garlic salt
Assorted crackers

Steps:

  • In a bowl, beat cream cheese until fluffy. Stir in the spinach, Monterey Jack cheese, tomatoes, cream, onion and garlic salt. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Serve with crackers.

  • Heat 1 tsp oil in a large non-stick frying pan, add the tomatoes and cook, cut-side down, over a medium heat. While they are cooking, beat the eggs in a jug with the yogurt, 2 tbsp water, plenty of black pepper and the basil.

olive oil flavored cooking spray
1 full egg
2 egg whites
1 pinch dried garlic (to taste)
1 pinch black pepper (to taste)
1 1/2 cups fresh spinach leaves
3 tablespoons goat cheese

Steps:

  • Spray a pan with olive oil spray.
  • Crack one full egg into the pan, adding only the egg whites of 2 other eggs.
  • Sprinkle dried garlic and black pepper to taste (garlic salt can be added instead if you prefer that).
  • When the egg has just hardened on the bottom (the eggs on the top should still be in liquid form), scramble the eggs.
  • Squeeze any excess water from the spinach leaves and add them to the eggs. Let the spinach leaves cook until it's time to stir the scrambled eggs again.
  • Cook until the spinach leaves are wilted.
  • Add the goat cheese (you can use crumbles if you prefer) to the SIDE of the plate and use as a "dip". I find if you mix the goat cheese into the scrambled eggs, it dilutes the flavor of the goat cheese greatly.
  • Enjoy!
