CHINESE STYLE SESAME SAUCE
This is the SAUCE for Chinese restaurant style sesame chicken and broccoli. This sauce can be poured over fried chicken, or used as a dipping sauce for fried chicken. I emphasize not using too much vinegar because it turns into a sweet-n-sour type sauce. But you do need a 'touch' of vinegar.

- In a saucepan, mix together sugar and cornstarch. Stir in chicken broth, water, vinegar, soy sauce, sesame oil, chile paste, and garlic. Bring to a boil over medium heat, stirring constantly. Reduce heat, and simmer 5 minutes.

SWEET AND SOUR CHICKEN WITH SPLENDA
I don't remember where I got this recipe but it makes a lovely sweet but healthy chicken recipe that is good with brown rice. I normally make the chicken and then add some of the sauce and veggies to the rice as it is cooking. I don't add pineapple but included it since most people love it. I also

Steps:
- Combine chicken, cornstarch, sherry, salt and ginger. Toss to coat and set aside.
- Put carrots into saucepan and add water to just cover. Boil for one minute and then add pepper and onion and boil for one more minute.
- Drain and rinse veggies. Add pineapple to mix and set aside.
- In saucepan, combine splenda, ketchup, mustard, soy and vinegar. Bring to low simmer.
- Add corn starch and water and cook until thickened. Stir in veggies.
- Heat a pan or wok. Add oil. When hot add chicken and cook until done. Combine sauce mix and chicken.

TEHINA (SESAME SAUCE)
Tahina is one of my favorite foods, I use it as a salad dressing, I drag some pita through it, or spread it on bread as a great base for sandwiches. I have even been known to mix it into tuna fish salad.

Steps:
- If you are opening a jar of tahini, stir to blend the two layers before measuring it.
- Stir it slowly to avoid splashing.
- Refrigerate whats left in the jar and it will stay blended.
- Spoon the tahini paste into a medium bowl.
- Slowly whisk in ¾ cup water.
- Add the salt, lemon juice, garlic, cayenne and cumin.
- Taste and add more salt, lemon juice and cayenne if you like.
- If the sauce is too thick, stir in more water, 1 tablespoon at a time.
- Serve cool or at room temperature.
- You can make this in the blender.
- This is quicker, but I find washing a bowl and whisk easer than washing a blender.
- The Tupperware shaker also is a good tool, my Tupperware lady demonstrated her shaker making tehina, and I just had to have it!
JAPANESE SESAME SAUCE
This is a very popular sauce used for the japanese barbeque. Usually served with salmon but goes well with beef dishes as well. From the "Japanese Country Cookbook, by Russ Rudsinski. Altered by my mom.

- Saute onion and green pepper for 5 minutes.
- Stir in tomato sauce, vinegar, Splenda granular and pepper to taste.

SPLENDA CRANBERRY SAUCE
I had this marvelous cranberry sauce about 5 years ago at a friends house. Since I have Diabetes, I substituted Splenda for an equal amount of sugar...you could switch back if you like. I love this recipe and make it every year at Thanksgiving. It's best if you make it several days ahead to allow the flavors to blend. It's a step above the "norm".

- Mix together in large pot, cranberries, sugar (or Splenda), water& juice, salt, ginger pieces (not ground) and orange zest.
- Bring to boil and cook about 10 minutes or until all berries have burst.
- Remove from heat and allow to cool 1/2 hour.
- Remove ginger pieces and add cinnamon, ground cloves and all spice.
- Blend thoroughly and allow to cool completely.
- Put in covered bowl and refrigerate until ready to use.
