SPORTS PARTY CAKE
Making dessert for a sporting celebration is child's play thanks to cake mix and ready-to-spread frosting!

- Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
- Make and bake cake as directed on box for 13x9-inch pan. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour. For easier handling, refrigerate or freeze cake 30 to 60 minutes or until firm.
- Meanwhile, tint 2 1/4 cups of the frosting with food color as desired for your favorite team's jersey color. Tint 1/2 cup frosting as desired for team name and numbers. Remove cake from freezer. Using serrated knife, cut rounded top off cake to level surface; place cake cut side down on cutting board.
- Place short side of cake toward you. Poke toothpick in cake at a point 4 inches from top and 1 inch from outside edge, on both sides. Poke toothpick in cake at bottom, 1 inch from outside edge, on both sides. Cut 1x8-inch piece (marked with toothpicks) from outer edge of each side. Cut each piece in half crosswise, forming 4 (1x4-inch) pieces. Cut neck hole from top of cake.
- On tray, place largest piece of cake. Using small amount of jersey-colored frosting, attach 2 small rectangular pieces on each side of top of cake to lengthen sleeves. Frost with a thin layer of frosting to seal in crumbs. Refrigerate or freeze 30 to 60 minutes to set frosting.
- Frost entire cake with jersey-colored frosting. Pipe other color frosting onto cake to create team name, numbers and shirt trim. Store loosely covered.

- Prepare cake batter according to package directions. Pour into a greased and floured 2-1/2-qt. ovenproof bowl., Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from bowl to a wire rack to cool completely., In a small bowl, combine frosting and food coloring. Place cake on a serving plate. Spread with frosting. Gently press a meat mallet into frosting so texture resembles a basketball. For seams, gently press licorice into frosting.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour two 8 inch cake pans.
- Sift together; the cake flour, baking powder, 3/4 teaspoon salt, and 1/3 cup sugar. Add the shortening and 3/4 cup of the milk, beat with an electric mixer on medium speed for 2 minutes, scraping bowl while beating. Add 4 of the egg whites and beat the batter for 2 more minutes , scraping bowl while beating.
- Fill each cake layer pan 1/3 full of batter, sprinkle half the cherries over batter, then add remaining batter, sprinkle remaining cherries on top.
- Bake at 350 degrees F (175 degrees C) for about 35 minutes. Remove cakes from pans and let cool. Frost with whipped cream or fluffy boiled icing and sprinkle with flaked coconut and garnish with maraschino cherry halves.
- To Make Fluffy Boiled Icing: Combine in a saucepan: 1 cup of the sugar, water, light corn syrup, and 1/8 teaspoon of the salt. Stir until well blended. Boil slowly without stirring until mixture will spin a long thread when a little is dropped from a spoon about 238 degrees F to 242 degrees F (116 degrees C to 118 degrees C).
- In a large mixing bowl beat 2 of the egg whites until stiff. Pour hot syrup over beaten egg whites while continually beating. Continue beating until mixture is very fluffy and will hold its shape. Then add vanilla and beat until blended. Spread on cake. If icing does not seem stiff enough beat in 2 or 3 tablespoons confectioners' sugar one tablespoon at a time until stiff enough to hold shape.

GRAMMA'S PARTY CAKE
My Grandmother took this recipe to all the family functions. She only gives it out to her Grandkids when they get married. Can be made with different flavors of gelatin and pudding.

Steps:
- Dissolve the gelatin in the boiling water. Mix in the cold water and set aside.
- Mix and bake cake as directed for one 9x13 inch pan. Let cake cool for 20 to 25 minutes.
- Poke holes in cake about 1 inch apart. Pour gelatin into holes and over the top of the cake. Refrigerate cake while making the topping.
- Mix instant pudding, whipped topping mix and milk until stiff. Frost cake and store in refrigerator.

- Heat oven to 350ºF.
- Prepare cake batter as directed on package. Pour 1 cup batter into greased and floured 2-cup ovenproof glass bowl. Pour remaining batter into greased and floured foil-lined 13x9-inch baking dish. Bake both cakes 25 to 30 min. or until toothpick inserted in centers comes out clean. Cool cakes 10 min. Remove from bowl and pan to wire racks; cool completely.
- Reserve 1/2 cup COOL WHIP for later use. Stir 5 drops food coloring into remaining COOL WHIP. Transfer 13x9-inch cake to platter; frost with green-tinted COOL WHIP.
- Invert round cake and place on top of 13x9-inch cake; spread with reserved COOL WHIP. Decorate with black decorating gel as shown in photo to resemble soccer ball. Tint coconut with remaining food coloring; sprinkle over cake.

- Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. In small bowl, toss chocolate chips with 1 tablespoon of the cake mix. In large bowl, beat remaining cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in coated chocolate chips. Divide batter evenly among muffin cups (about two-thirds full).
- Bake 20 to 26 minutes (23 to 30 minutes for dark or nonstick pans) or until toothpick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes. Decorate as desired below. Store cupcakes loosely covered. Baseballs: Frost cupcakes with vanilla frosting. With black, red or blue icing, pipe 2 arches on opposite sides of cupcakes, curving lines slightly toward center. Pipe small lines from each arch to look like stitches on a baseball. Basketballs: Color frosting with yellow and red food colors to make orange; frost cupcakes. With black icing, pipe line across center of cupcake. On either side, pipe an arch that curves slightly toward center line. Soccer Balls: Frost cupcakes with vanilla frosting. With black icing, pipe a pentagon shape in the center of cupcake, piping a few rows of icing into center of pentagon. Pipe lines from pentagon to edge of cupcake to look like seams. With toothpick or spatula, spread black icing in center of pentagon to fill in the entire shape. Tennis Balls: Color frosting with yellow and green food colors to make tennis-ball yellow; frost cupcakes. With white icing, pipe curved design to look like tennis balls.
