I was searching for a recipe for sprouted wheat berry bread, and I FINALLY found one from the Boston Globe. I made several minor changes, and for the sake of the nutritional analysis, that is how I am going to post it; but you can use any combination of grains, like some combination of wheat berries, rye berries, barley, spelt, lentils, soybeans, mung beans, or chickpeas. The weird measurement for the yeast is because I halved the original recipe, which called for one envelope. I used an eight-inch loaf pan, but that gave me a pretty flat loaf; next time I'd use a smaller one. If you use the measurements listed, you will get sixteen 70-calorie slices, or eight 140-calorie slices. This bread is dense and chewy; if you're looking for a light sandwich bread, this isn't it!

1 1/2 cups wheat berries
1/4 cup vital wheat gluten flour
1 tablespoon vital wheat gluten flour
1/2 teaspoon salt
1 1/8 teaspoons instant yeast
1 tablespoon raw honey
1/8 cup water
1/8 cup almond milk

Steps:

  • Two to three days before baking, soak the wheat berries in a container of cold water for 12 to 24 hours at room temperature.
  • Drain them, return them to the container, cover with plastic wrap, and leave on the kitchen counter. Wait 2 to 3 days until the grains begin to sprout, rinsing and draining them once or twice so they are always damp. As soon as little tails appear, the wheat berries have sprouted and are ready. You can store them in the fridge until you are ready to make the dough.
  • In a food processor, work the sprouted wheat berries into a pulp. If the processor starts to generate heat, give it a break before continuing.
  • Combine the water with the almond milk. (You want the liquid to be room temperature, so if the almond milk was refrigerated, use boiling water.).
  • Using the dough hook of an electric mixer, combine the sprout pulp, ALL of the vital wheat gluten, salt, yeast, honey, and half of the liquid. Mix on slow speed for 1 minute to bring the ingredients together into a ball, adding additional water as needed. Continue mixing 2 to 3 minutes, occasionally scraping down the bowl. The dough should form a sticky ball.
  • Mist a work surface with a spray of water. Place the dough on the surface and knead with wet hands for 1 to 2 minutes. Although the dough will be sticky on the surface, it should have the strength and feel of normal bread dough. Form the dough into a ball and let it rest on the work surface for 5 minutes. Meanwhile, lightly oil a bowl.
  • Resume kneading the dough for 1 minute with wet hands to strengthen it. The dough should have strength yet still feel soft, supple, and very tacky. Form the dough into a ball and transfer it to the bowl, rolling to coat with oil. Cover loosely with plastic wrap and let it rise at room temperature for 45 to 60 minutes or until it is about 1 1/2 times its original size.
  • Line a loaf pan with foil (not necessary, but makes for an easier cleanup!), and / or spray with nonstick spray. Form the dough into a loaf shape and place it in the pan.   • Preheat the oven to 425 degrees. When you put the loaf in the oven, turn down the heat to 350 degrees. Bake for 20 minutes, rotate the loaf, and then bake for another 30 minutes, until the bottom of the loaf sounds hollow when it is tapped.
  • Let cool on a wire rack for at least one hour before slicing.

This is so healthy and tasty too! For the sprouted grains you may use wheat berries,quinoa, rye, spelt, etc., even lentils! Mix and match grain sprouts to your heart's content. Adapted from the SproutPeople. When using whole wheat and/or rye flours you might add wheat gluten - at a rate of 1/8 cup per cup of flour - as it often produces a nicer loaf. Enjoy!

2 1/2 cups warm water
2 tablespoons active dry yeast
1/2 cup oil
1/2 cup honey
1 tablespoon salt
2 cups grain mixed sprouts (whole or lightly ground)
4 cups flour (any combo of wheat, rye and white you like)

Steps:

  • To soften yeast:.
  • Combine in a large bowl:.
  • 2 1/2 cups warm water.
  • 2 scant Tbs. active dry yeast.
  • Allow the yeast to proof (bubble) for 5 minutes.
  • Stir in:.
  • 1/2 cup oil.
  • 1/2 cup honey.
  • 1 Tbs. salt.
  • 2 cups sprouted grains, whole or ground lightly.
  • 4 cups flour (any combo of wheat, rye and white you like) Beat well. Cover and let this "sponge" sit 45-60 minutes.
  • Stir down and gradually add:.
  • 3-4 cups flour (any combination). Turn dough out onto a lightly floured surface and knead until smooth.
  • Place dough into a greased bowl, turn it over and around to coat all of the dough.
  • Cover and let rise until doubled (60-90 minutes).
  • Knead dough down in the bowl, divide and shape into 2-3 oblong loaves. Place in well greased loaf pans and cover.
  • Let rise 60 minutes or until almost doubled.
  • Bake at 375º for 35 to 40 minutes. Remove loaves from pans and cool on wire racks.

  • Add the wheat berries to a large jar and fill it with water. Let them sit in the water overnight on the counter. The next day, drain the water and cover the top of the jar with cheesecloth or a milk nut bag. If you have a spouter, you can use that too. Just note that the wheat will double in size, so make sure you have a big jar.
  • Once the jar is covered with a breathable lid, rinse the sprouts again, and leave them in upsidedown in a dish to drain (at around a 45-degree angle). Give the sprouts a rinse twice a day with fresh water. Drain the excess water off and leave them to drain fully in the dish.
  • Around the second day the wheat should have sprouted (it can take a little longer depending on temperature) and the sprouts should be as long as the kernel. This is as long as you want the sprouts to get. Any longer than this the sprouts have the risk of tasting bitter and green. Try to keep an eye on them, they grow fast.
  • As soon as your seeds are as long as the grain, you can begin making the bread. If you don’t want to make bread ASAP, the sprouts can be stored in the fridge for a couple of days. They will continue to grow in the fridge, so keep an eye on them (I’d give them a day or two in there at max).

Tip the dough onto a lightly floured surface and knead around 5 minutes then put in an oiled bowl and leave in a warm place to double in size, around 1 hour.
  • Oil a loaf pan (standard size - 8 1/2" x 4 1/4") then gently knock back the dough, form into a log and put in the oiled pan. Leave to rise again until the dough comes up to the top of the pan, ideally slightly over (around 1 hour again).
  • Towards the end of the rise, preheat oven to 350F. Bake the bread in the preheated oven approx 30-35 minutes until it is hollow to tap and golden on top. You can cover the top with tented foil if it is browning too quickly.
