1 (15 ounce) can chickpeas
3 -4 tablespoons olive oil
1/4 cup lemon juice
1/4 cup tahini
2 garlic cloves
1/2 teaspoon cumin
1/2 teaspoon salt
2 tablespoons sriracha asian garlic sauce, to taste

Steps:

  • Drain the chickpeas and add to a food processor along with the olive oil, tahini, lemon juice, garlic, salt and cumin. Process until smooth, adding additional olive oil (or water), as needed.
  • Start with 1 tablespoon of sriracha and add to the hummus or more to taste.

  • Juice the lemon. Remove the garlic cloves from their skins. Open the cans of garbanzo beans and drain most of the the liquid, remembering to save a little bit of it (aquafaba). Note: Some people like to separate the garbanzo bean skins from the bean, and use only the bean. This will give you a creamier, smoother hummus. I choose to skip this step to save time, but it's up to you!
  • Add all the recipe ingredients to your food processor, starting with a smaller amount of sriracha. You can always add more! Pulse 2-3 times to break the ingredients down. Puree until the texture is creamy and smooth, stopping occasionally to scrape down the sides of the food processor if necessary. Add additional water or oil if needed, 1 teaspoon at a time, to get to your preferred creamy, thick texture.
  • Transfer the hummus to a dish or bowl, then garnish with extra sriracha and lemon. Serve chilled with pita, chips, or veggies.

Blend until smooth, if necessary stopping blender a few times and stirring mixture to help it blend smooth. If needed add one tablespoon of water at a time to make the hummus creamy and smooth or to your desired consistency. Use a rubber spatula to scrape down the sides of the blender to get all the mix down to the bottom. Rubber spatulas work better than wooden spoons. Taste for seasoning and blend in a little salt if desired.
  • Refrigerate for 30 minutes or up to overnight, allowing the flavors to marry. Hummus will keep for several days stored airtight in the refrigerator.
