Grilled zucchini, squash, and onions with a twist of fruit. Just wrap in aluminum foil and place on grill while cooking your meat.

3 zucchinis, sliced
3 yellow squash, sliced
1 onion, sliced
1 large orange, sliced
1 lemon, sliced
½ cup butter, cut into small pieces
1 pinch lemon pepper, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Lay 2 large pieces of heavy duty aluminum foil onto a flat surface in a criss-cross shape. Pile zucchinis, yellow squash, onion, orange, and lemon in the middle of the foil. Scatter butter pieces over the mixture; season with lemon pepper, salt, and black pepper. Wrap aluminum foil around the mixture and seal along the edges making a packet.
  • Cook on the preheated grill until very tender, 30 to 45 minutes.

1/2 cup red wine vinegar
1/4 cup olive oil
2 garlic cloves, minced
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 pound fresh asparagus, trimmed
1 large red onion, sliced and separated into rings
1 large sweet red pepper, cut into 1-inch strips
1 large sweet yellow pepper, cut into 1-inch strips

Steps:

  • In a large resealable plastic bag, combine the first six ingredients. Add vegetables and turn to coat. Seal and refrigerate for 1 hour or overnight, turning once., Drain and reserve marinade. Place vegetables in a grill basket or disposable foil pan with slits cut in the bottom. Grill, uncovered, over medium-high heat for 5 minutes. Turn; baste with reserved marinade. Grill 5-8 minutes longer or until the vegetables are tender.
