Green papaya is usually found in Asian, Vietnamese, and Thai salads and dishes. I've taken the crisp crunchiness of green papaya and given it a Mexican/Tex-Mex twist! My kids love it when I use a bit less cilantro and chili powder.

¼ cup chopped fresh cilantro, or to taste
3 cloves garlic, minced, or more to taste
2 limes, juiced
2 tablespoons olive oil
1 tablespoon brown sugar
1 pinch chili powder, or more to taste
salt to taste
1 green papaya, peeled and shredded
2 cups cold cooked black beans
1 cup cold cooked corn
1 red bell pepper, cut into small dice

Steps:

  • Blend cilantro, garlic, lime juice, olive oil, brown sugar, chili powder, and salt in a blender until smooth.
  • Toss shredded papaya, black beans, corn, and red bell pepper together in a large mixing bowl; add dressing and toss to coat.
  • Cover bowl with plastic wrap and refrigerate at least 30 minutes.

This tangy, piquant salad is a version of the classic Vietnamese dish, which can be served as a first course, or a fiery side dish next to simple grilled meats or fish. It comes from Chris Shepherd, a Houston chef who is trying to tell the story of his city's food, among the most diverse in the country. If Thai chiles are too hot to bear (or not available), substitute other, milder peppers like serrano or jalapeño. Just don't use regular papaya even if it seems unripe; it won't have the right flavor and texture as a true green papaya. And if you can't get green papaya, you can make this with green mango, seeded cucumber, cabbage or kohlrabi. The intense, funky dressing will work with any practically any cooling, crunchy vegetable you've got.

1 tablespoon chopped dried shrimp
1/4 cup fish sauce
1/4 cup sugar
4 garlic cloves, finely grated or minced
1 lime, quartered
1 to 2 Thai chiles, preferably red, stemmed and thinly sliced (or more, if you'd like more heat)
4 cups peeled, shredded green papaya (from 1 medium green papaya)
10 cherry tomatoes, halved
2 tablespoons roasted unsalted peanuts, roughly chopped

Steps:

  • In a large metal or wooden bowl (not glass), stir together dried shrimp, fish sauce, sugar, garlic, lime and chiles. Using a wooden muddler or pestle (or a wooden spoon), lightly pound the ingredients to bruise and release their flavors.
  • Mix shredded papaya and tomatoes into fish sauce mixture, tossing until well combined. Refrigerate until ready to serve, then top with chopped peanuts.

Chef Stanley Wong of TanDa restaurant in New York City finds it easier to freeze the beef tenderloin before slicing it.

8 ounces beef tenderloin
Coarse salt and freshly ground pepper
1 tablespoon vegetable oil
1 tablespoon short-grain rice

Steps:

  • Season beef tenderloin evenly with pepper. In a medium cast-iron skillet, heat vegetable oil over high heat. Add beef tenderloin, and sear 1 minute on each side. Remove from skillet, and bring to room temperature. Wrap in plastic wrap, and freeze for 2 hours.
  • In a small dry skillet, toast rice until golden brown. Transfer to a spice grinder, and grind to a fine powder; set aside.
  • Using a very sharp knife, slice beef crosswise as thinly as possible. Season with salt and pepper, and sprinkle with rice powder. Serve with green papaya salad.

6 ounce green papaya, shredded
6 small cherry tomatoes
2 garlic cloves
1 small Thai bird chile
2 tablespoons fish sauce
2 tablespoons freshly squeezed lime or lemon juice
1 teaspoon palm or cane sugar
1 cabbage, sliced and chilled
Dried shrimp, for garnish
Ground peanuts, for garnish

Steps:

  • In a mixing bowl, combine the fish sauce, lime or lemon juice, and the sugar. Stir until the sugar is dissolved.
  • Using a mortar and a wood pestle, pound the garlic and chili with a little bit of the papaya to prevent the pepper from spraying you in the eyes. Add the rest of the papaya, tomatoes and fish sauce mixture. Pound gently to blend then adjust seasoning. To serve, place a scoop of the salad in the middle of a plate surrounded by the sliced cabbage then garnish with the dried shrimp and ground peanuts.

2 cups light soy sauce
2 tablespoons rice wine vinegar
2 teaspoons Sriracha sauce* or other Asian hot chile sauce
2 cloves garlic, finely chopped (about 2 teaspoons)
2 tablespoons sugar
1 green papaya**
1 cup Vietnamese beef jerky, thinly sliced*** (about 1/4 pound)
1 cup Vietnamese pork liver jerky, thinly sliced **** (about 1/4 pound; optional)
1 bunch fresh Thai basil leaves, coarsely chopped (about 1 cup)

** Available at supermarkets and Vietnamese markets in produce section.
*** Available at Vietnamese or Chinese markets. The sweet, thin sheets of jerky are sold in plastic bags or boxes.

Steps:

  • In medium bowl, whisk together soy sauce, rice wine vinegar, chile sauce, garlic, and sugar until sugar dissolves, about 1 to 2 minutes. Set aside.
  • Peel, halve, and seed papaya. Using shredding plate of food processor, shred papaya, then place on large plate.
  • Use scissors to cut beef jerky and pork liver jerky, if using, into thin strips then place on top of papaya and sprinkle with Thai basil. Serve dressing on side for guests to toss their own salads.

1/2 cup chopped fresh Thai basil
1/3 cup finely chopped roasted peanuts

  • Note: You can add lime grilled chicken or shrimp and make this a meal.
  • Whisk the first 3 ingredients together.
  • Add the next 3, toss well.
  • Let it stand for 15-20 minutes, sprinkle with peanuts and herbs before serving (time included in cooking time).

1 cup Thai chile dressing, or to taste, divided
½ green papaya, cut into matchsticks
1 bunch green onions, chopped
1 cup chopped string beans
7 yellow cherry tomatoes, halved
2 teaspoons black sesame seeds, divided
1 ½ teaspoons chopped fresh cilantro
1 teaspoon red pepper flakes
1 dash sriracha sauce, or to taste

Steps:

  • Bring a large pot of water to a boil. Add soba noodles; cook in the boiling water until tender, about 6 minutes. Drain and transfer to a large bowl.
  • Pour 1/2 cup chile dressing over noodles; mix thoroughly. Cover bowl with plastic wrap and place in the refrigerator.
  • Combine green papaya, green onions, string beans, cherry tomatoes, 1 teaspoon black sesame seeds, cilantro, and red pepper flakes in a bowl. Pour in remaining 1/2 cup chile dressing; mix thoroughly. Refrigerate until flavors combine, 15 to 20 minutes.
  • Divide noodles among serving plates. Spoon papaya mixture on top. Garnish with remaining 1 teaspoon sesame seeds and sriracha sauce.
