2 cups self-rising flour
1-1/2 cups water
1 teaspoon salt, divided
3/4 teaspoon cayenne pepper, divided
1/2 teaspoon pepper, divided
10 cups shredded carrots
Oil for frying

Steps:

  • In a large bowl, whisk the flour, water, 1/2 teaspoon salt, 1/4 teaspoon cayenne and 1/4 teaspoon pepper until smooth. Stir in carrots. In a small bowl, combine the remaining salt, cayenne and pepper; set aside. , In an electric skillet or deep-fat fryer, heat oil to 375°. Drop spoonfuls of carrot mixture, a few at a time, into oil; cook for 3-4 minutes or until golden brown, stirring frequently. Drain on paper towels; sprinkle with reserved seasoning mixture.

2 pounds carrots
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons unsalted butter
1 1/2 tablespoons chopped fresh dill or flat-leaf parsley

Steps:

  • Peel the carrots and cut them diagonally in 1/4-inch slices. You should have about 6 cups of carrots. Place the carrots, 1/3 cup water, the salt, and pepper in a large (10- to 12-inch) saute pan and bring to a boil. Cover the pan and cook over medium-low heat for 7 to 8 minutes, until the carrots are just cooked through. Add the butter and saute for another minute, until the water evaporates and the carrots are coated with butter. Off the heat, toss with the dill or parsley. Sprinkle with salt and pepper and serve.

Working in batches, carefully fry the carrots, stirring occasionally, until crispy, 3 to 4 minutes. Remove with a slotted spoon to a paper towel-lined plate. 3 tbsp vegetable oil
400g baby heritage carrots , washed, leafy tops trimmed and roughly chopped (set aside for later), large carrots halved
3 garlic cloves , peeled and sliced
1 tbsp cumin seeds
pinch chilli flakes
handful fresh coriander leaves , chopped
1 shallot , finely chopped
1 lemon , zested, plus a squeeze of juice
50ml olive oil

Steps:

  • Mix all the dressing ingredients together and set aside.
  • Heat the oil in a wok, then add the carrots. Stir-fry for 3-4 mins until lightly charred, then add the garlic, cumin, chilli and a large pinch of salt. Cook for 2 mins more. Turn off the heat, toss through the dressing and a few chopped carrot tops, then serve.

This recipe is from Tom Colicchio, the head judge of Top Chef. I got this recipe from Today's Kitchen cookbook(recipes made on the Today news show). It's simple and delicious! Baby carrots were used for this dish, but feel free to use large carrots, cut to size.

30 baby carrots (3-4 inches long)
2 tablespoons peanut oil (or olive oil)
kosher salt and black fresh ground black pepper
2 tablespoons unsalted butter (or salted butter)
2 sprigs rosemary

Steps:

  • Peel the carrots, trim them, leaving an inch or so of the green top( I use prepackaged baby carrots with no tops).
  • Heat a large skillet over medium heat. Add the oil, then the carrots. Salt and pepper them.
  • Cook, rolling the carrots so they color on all sides, until they are golden, about 5 minutes. Add the buttter and rosemary and continue cooking until the carrots are tender, about 5 more minutes.
  • Drain the carrots on paper towels befoe serving. Enjoy!

1 ½ cups daikon, grated
1 cup rice flour
½ cup tapioca flour
2 cups chicken stock
3 tablespoons cooking oil
1 tablespoon garlic, minced
2 tablespoons pickled radish, chai poh
1 tablespoon fish sauce
1 tablespoon light soy sauce
3 eggs, beaten
1 spring onion
1 teaspoon chilli paste

Steps:

  • Add daikon to a pot of boiling water and cook for five minutes until translucent. Drain then set aside.
  • In a mixing bowl, add rice flour, tapioca flour, and chicken stock. Mix until fully combined then add the daikon.
  • Place a wok on medium heat, then add 1 tbsp of cooking oil. Once it heats up add 1 tbsp of garlic and fry for 1 minute before adding in the daikon mixture. Stir constantly until the mixture thickens up. This will happen rapidly so be careful not to take it too far or it will dry out. The mixture should look like a thick cake batter.
  • Pour the daikon mix into a round cake pan, then place inside a steaming pot and steam for one hour.
  • Once the cake has become a solid mass, remove from the steamer and allow to cool. Then refrigerate for three hours or overnight.
  • Remove the cake from the fridge and set on a chopping board then slice into small rectangular cubes.
  • Add 2 tbsp of cooking oil to a wok and place on high heat, then once the oil starts to smoke add the cubes of cake and fry, stirring occasionally until every side has browned.
  • Lower the heat to medium, then add garlic, pickled radish (chai poh), light soy sauce, and fish sauce. Stir for a minute until each cube is coated in sauce, then add eggs and allow it to set for a moment. Break up the eggs partially once they are cooked then flip onto a plate.
  • Garnish with sliced spring onion, and chilli paste.
  • Enjoy!
