1 cup Progresso™ chicken broth (from 32-oz carton)
2 tablespoons steak sauce
1 tablespoon Dijon mustard
1 lb ground beef
2 tablespoons butter
8 oz mushrooms, thinly sliced
1 cup white onion, coarsely chopped (from 1 small onion)
1 teaspoon Montreal steak seasoning
2 tablespoons all-purpose flour
8 regular-size burger buns, toasted if desired
1/2 cup shredded sharp Cheddar cheese (2 oz)

Steps:

  • In medium bowl, mix broth, steak sauce and mustard; set aside.
  • In 12-inch skillet, cook beef over medium-high heat 7 to 8 minutes, stirring frequently, until browned; drain. Set aside. Add butter to any remaining drippings in skillet; add mushrooms, onion and steak seasoning. Cook 7 to 8 minutes or until onions are translucent and mushrooms are browned.
  • Sprinkle flour over vegetables. Cook 1 to 2 minutes or until flour browns and begins to smell nutty. Return beef to pan, and stir in broth mixture. Return to simmering; cook 3 to 4 minutes or until thickened. Place about 1/3 cup mixture over bottom of each bun, top with 1 tablespoon cheese, then top bun.

2 tablespoons salted butter
1 medium white onion, diced
1 medium green bell pepper, diced
2 pounds ground beef
4 cloves garlic, minced

2 tablespoons Worcestershire sauce

Steps:

  • Melt butter in a large pot over medium heat. Add onion and bell pepper; saute until soft, 5 to 7 minutes. Add ground beef, garlic, salt, and 1 teaspoon pepper. Cook and stir until beef is browned and crumbly, 7 to 8 minutes. Drain and discard grease.
  • Add broth, steak sauce, Worcestershire sauce, jalapeno peppers and juice, and 1/2 teaspoon Creole seasoning; stir to combine, then bring to a boil. Reduce heat and simmer for 5 minutes.
  • Meanwhile, mix cornstarch and water together in a small bowl.
  • Add cornstarch slurry to beef mixture and cook to desired consistency, 1 to 2 minutes. Taste and add additional Creole seasoning and pepper if needed. Turn off heat.

Steps:

1 tablespoon olive oil
1 pound ground beef
1 tablespoon Worcestershire sauce
1 teaspoon granulated garlic or garlic powder
Kosher salt and freshly cracked black pepper
1 yellow onion, diced
1/2 green bell pepper, roughly diced
1/2 red bell pepper, roughly diced
2 tablespoons unsalted butter
1 cup beef stock
5 ounces provolone cheese (7 to 8 slices)
4 to 6 potato hamburger buns, buttered and toasted
Pickled banana peppers, for serving
Sweet potato fries, for serving

Steps:

  • Heat the oil in a large skillet with a lid over medium-high heat. Add the ground beef and break it up with the back of a wooden spoon. Sprinkle the Worcestershire, granulated garlic, 1/2 teaspoon salt and some pepper over the beef. Cook, stirring and breaking the beef up frequently, until it is no longer pink and develops a deep brown crust, about 6 minutes. Add the onion and bell peppers. Add the butter and cook, stirring frequently, until the onions and peppers are softened and browning on the edges, about 5 minutes. There should also be browning forming on the bottom of the skillet. Pour the stock into the skillet, a little at a time, scraping up any browned bits. Bring everything to a simmer, reduce the heat to medium, cover and cook until the sauce reduces and thickens slightly, 6 to 8 minutes.

2 large cloves garlic, sliced
2 small sprigs fresh marjoram or oregano or a generous sprinkle of dried leaves
2 sprigs rosemary
Salt and freshly ground black pepper
Extra-virgin olive oil, for liberal drizzling
1/2 cup beef stock
1 cup organic ketchup
2 large cloves garlic, finely chopped
3 tablespoons Worcestershire sauce
3 tablespoons dark brown sugar
2 tablespoons red wine vinegar
Coarsely ground black pepper
1 medium shallot, peeled
1 rounded tablespoon Dijon mustard
2 teaspoons agave syrup or 1 teaspoon superfine sugar
2 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
2 cups slaw salad mix or shredded cabbage
Celery salt
Salt and freshly ground black pepper
4 (6-inch) slabs ciabatta bread or other large crusty rolls, split and toasted

Steps:

  • Bring the steaks to room temperature before cooking. Put them in a shallow dish and rub both sides of the meat liberally with garlic. Season with marjoram, rosemary, and salt and pepper, to taste. Drizzle with a liberal dose of extra-virgin olive oil and let marinate for 15 minutes.
  • Preheat a cast iron griddle or large grill pan over medium-high heat. Grill the steaks for 4 minutes on each side for medium-rare. Remove the steaks from the grill to a cutting board and let rest for a few minutes before thinly slicing against the grain.
  • In a small pot over medium heat, add the beef stock, ketchup, chopped garlic, Worcestershire, dark brown sugar, vinegar and lots of black pepper, to taste. Bring to a boil, then reduce the heat and simmer for 20 minutes for the perfect sloppy sauce. Cook's Note: Try the same sauce recipe atop of thinly sliced grilled chicken breast or thighs for sloppy sliced chickenwiches.
  • Grate the shallot into a bowl and add the mustard, agave or sugar, and wine vinegar. Whisk in extra-virgin olive oil until well combined. Add the slaw and toss to coat. Season with celery salt, and salt and pepper, to taste.
  • Pile the sliced meat on the bottom halves of the bread and top each with lots of sauce, slaw and onions and/or hot vegetable relish and pickles. Cover with the top half of the bread and serve.

1 softball-sized onion, chopped

8 ounces salami, chopped

Steps:

  • Preheat broiler.
  • In large skillet over medium-high heat with 1 turn of the pan of olive oil, brown the ground sirloin (about 5-6 minutes).
