STEAK TARTARE-FLAVORED GRILLED TURKEY BURGERS

STEAK TARTARE-FLAVORED GRILLED TURKEY BURGERS image

Categories     turkey     Dinner     Grill/Barbecue

Yield 6 burgers

Number Of Ingredients 10

2¼ pounds ground turkey, no more than 93 percent lean
2 large egg yolks
¼ cup capers, chopped
3 medium shallots, finely chopped
½ cup finely chopped fresh parsley
2 tablespoons Dijon mustard
1½ tablespoons Worcestershire sauce
1 teaspoon hot sauce, such as Tabasco
Salt and pepper
Toasted English muffins, for serving

Steps:

  • Prepare a medium-low fire in a charcoal grill or preheat a gas grill on high. Meanwhile, in a large bowl, break up the ground turkey into rough chunks. Add the egg yolks, capers, shallots, parsley, mustard, Worcestershire sauce, hot sauce, 1 teaspoon salt, and ½ teaspoon pepper, and toss lightly with your hands to distribute the seasonings (the mixture will be very moist and sticky). Divide the mixture into 6 6-ounce portions and, with a light hand, gently form the portions into patties roughly 4 inches in diameter and 1 inch thick. Press a divot (see Kitchen Aide) into the top of each patty. If using a gas grill, adjust the burners to medium-low. Grill the burgers without moving them until grill-marked on the bottom, about 8 minutes. Flip the burgers and continue grilling until the meat is cooked through (the centers of the burgers should register 160 degrees on an instant-read thermometer), about 7 minutes longer. Serve immediately with toasted English muffins.

SPICY GRILLED TURKEY BURGERS

Spicy Grilled Turkey Burgers image

I'd never tried ground turkey meat before. I got curious when our small grocery store down the road got some in and I just had to try it. I came up with this recipe through a magazine I had that my (of all people) gastro doctor suggested. It's called EatingWell and it has healthy recipes. Some of them are frankly off the wall, but this one wasn't bad.

Provided by Redneck Epicurean

Categories     Poultry

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb ground turkey
2 tablespoons fresh cilantro, chopped
1 1/2 teaspoons cumin
1/2 teaspoon chili pepper
1/2 teaspoon salt
1 dash allspice
1 teaspoon oil
4 buns (I prefer onion buns from the bakery)

Steps:

  • Preheat the grill.
  • Mix together, but don't overmix, the burger ingredients and brush with oil.
  • Place on the grill when hot and grill until the center is no longer pink.
  • Place on warmed buns and top with any burger fixin's. I tried mayo and dill pickles and that was pretty good.

GRILLED TURKEY BURGERS

Grilled Turkey Burgers image

I love to serve these burgers up on a hot day! I enjoy turkey burgers much more than beef burgers. :-) For a jucier burger, try not to use the leanest ground turkey. The leaner the turkey, the drier your burgers will be.

Provided by love4culinary

Categories     Lunch/Snacks

Time 32m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2 lbs ground turkey
1/2 cup gruyere cheese, finely grated
4 scallions, thinly sliced
1/4 cup dried breadcrumbs (may need to add more)
1/4 cup Dijon mustard
2 cloves garlic, minced
salt and pepper, to season
olive oil, to oil grill

Steps:

  • First you will want to heat your grill to HIGH.
  • In a bowl, combine your turkey with grated cheese with a fork.
  • Then add the scallions, breadcrumbs, garlic, and mustard.
  • Season with salt and pepper.
  • Then gently form turkey mixture into four patties, approximately 1 inch thick.
  • If you have trouble forming patties, you may need to add more breadcrumbs; it really depends on the amount of moisture that your meat contains.
  • Lightly oil your grill and place patties on the hottest point of your grill, and sear them until they are browned*this will take approximately 1-2 minutes on each side* Move the patties to a"cooler" part of the grill, and continue grilling until they are cooked through, aproximately 5-10 minutes on each side.
  • I serve these on buns (i grill my buns a little!), tomato, lettuce, and some enjoy pickles on them!

BEEF TARTARE BURGER

Beef Tartare Burger image

Provided by Mark Bittman

Categories     dinner, easy, quick, weekday, burgers, main course

Time 30m

Yield 4 burgers

Number Of Ingredients 16

1 1/2 pounds fatty sirloin or chuck, cut into 1-inch chunks
1 shallot
1 medium garlic clove
1 tablespoon capers
2 anchovy fillets (optional)
1/2 cup chopped parsley
1/2 teaspoon Tabasco sauce, or more to taste
2 teaspoons Worcestershire sauce
Salt
pepper to taste
Chopped medium-cooked egg to garnish (optional)
capers to garnish (optional)
whole anchovies to garnish (optional)
diced sweet white onion to garnish (optional)
chopped parsley to garnish (optional)
peeled lemon slices, to garnish (optional)

Steps:

  • If grilling or broiling, heat should be medium-high and rack about 4 inches from fire. Put beef, shallot, garlic, capers and anchovy, if using, into a food processor and pulse until coarsely ground - finer than chopped, but not much. Put it into a bowl with parsley, Tabasco sauce and Worcestershire sauce, and sprinkle with salt and pepper. Mix gently, then taste and adjust seasoning. Handling meat as lightly as possible to avoid compressing it, shape it into 4 or more burgers.
  • To broil or grill, cook about 3 minutes on each side for rare and another minute per side for each increasing stage of doneness. For stovetop, heat a large skillet over medium heat for 2 or 3 minutes, then add patties; cook, undisturbed, for about 2 minutes, then rotate them so they brown evenly. Turn once and cook for a total of about 6 minutes for rare.
  • Garnish with chopped medium-cooked egg, capers, whole anchovies, diced sweet white onion, chopped parsley and peeled lemon slices.

  • Buy the right meat. For juicy burgers, get ground chuck with a fat content of at least 18%. Lean and extra-lean meat make tough, dry burgers. Also, the more freshly ground the meat is, the more tender and flavorful the burger: If your store has butchers, ask them to grind the meat fresh for you. (Or just grind your own, following our no-fuss method, see below.)
  • Mix in your seasonings very, very gently. The more you handle the meat, the tougher your burger will be. In a large bowl, pull the meat apart into small chunks, add egg yolks, gherkins, shallots, capers, peppercorns if using, and salt and toss gently with fingers spread apart until loosely mixed.
  • Use wet hands to form patties. This keeps your hands from getting sticky. It also allows the meat to come together faster and prevents overhandling.
  • Make patties thinner in the center. Divide the meat into 4 equal portions and form patties about 3/4 inch thick at the edges and 1/2 inch thick in the center. They'll shrink and even out when cooking.
