MUSTARD MARINATED FLANK STEAK

A great make ahead flank or skirt steak recipe that is great for grilling season. Mustard Marinated Flank Steak

Number Of Ingredients 8

1 flank steak, 2 pounds
1/3 cup dry white wine, like Pinot Grigio
1/3 cup good olive oil
1/3 cup Dijon mustard
Kosher salt and freshly ground black pepper
1/3 cup chopped shallots, 2 shallots
1 tablespoon minced garlic, 3 cloves
2 tablespoon chopped fresh tarragon

Steps:

  • Score the top of the steak diagonally in a large crisscross pattern. This allows the marinate to penetrate into the meat. I have never done this before so this is a great tip!
  • In a large measuring cup, whisk together the wine, olive oil, mustard, 1 teaspoon of salt, and 1/2 teaspoon pepper. Stir in shallots and garlic.
  • Place steak in a large Ziploc bag and pour the marinate over the steak. Scatter dried tarragon over the top. Close the bag and squish marinate over all of the steak. Place in refrigerator for at least 2 hours or overnight.
  • Take steak out of the fridge ½ hour prior to grilling to reach room temp.
  • Heat the grill to about 400 degrees. Remove the steak from the bag and discard the remaining marinate.
  • Grill the steak about 5 minutes on each side for medium-rare. Just adjust according to your tastes and thickness of steak

12 ounces sparkling apple cider
1/2 cup vegetable oil
6 cloves garlic, minced
1 tablespoon dry mustard
1/4 cup Worcestershire sauce
1 tablespoon paprika
1/2 tablespoon black pepper
3/4 teaspoon onion powder
1/2 teaspoon cayenne
1 teaspoon hot pepper sauce, to taste
1 lemon, juice of
1 teaspoon salt
4 teaspoons coarsely crushed peppercorns

Steps:

  • Cut several small slits in 2 lbs.
  • of steaks (choose New York strip, sirloin, T-bone, porterhouse or Delmonico steaks), sliced 1 1/2" thick.
  • Mix marinade and pour over steaks, place in refrigerator 1 to 2 hours.
  • Drain marinade.
  • Press crushed peppercorns into both sides of steaks.
  • Oil broiler pan lightly with nonstick cooking spray, then preheat pan under broiler.
  • Sear steaks in hot broiler pan, flip to quickly brown other side.
  • For medium steaks, broil eight minutes each side on top rack.

2 tablespoons soya sauce
2 tablespoons lemon juice
1 ½ tablespoons steak seasoning
1 teaspoon seasoned salt
1 teaspoon onion powder
½ teaspoon white sugar

Steps:

  • Stir salad dressing, barbeque sauce, garlic, soya sauce, lemon juice, steak seasoning, seasoned salt, onion powder, and sugar in a bowl until the seasonings dissolve into the liquids.

⅓ cup soy sauce
½ cup olive oil
⅓ cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ tablespoons garlic powder
3 tablespoons dried basil
1 ½ tablespoons dried parsley flakes
1 teaspoon ground white pepper
¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic

Steps:

  • Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
  • Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.
