EASY STEAM CHICKEN
This steamed chicken is very delicious, and is popular in Southeast Asian countries... normally served with chicken rice. We love it so much. It is very easy to make.

Steps:
- Place chicken and salt in a bowl. Evenly rub salt into chicken. Refrigerate 30 minutes.
- Rinse chicken and place in a pot fitted with a steamer basket over water. Bring water to a boil, and steam chicken until juices run clear, about 30 minutes.
- Heat vegetable oil in a skillet over medium heat. Stir in onion and cook until tender. Mix in garlic, and cook about 1 minute. Stir in soy sauce and sesame oil, and remove from heat. Scoop over the chicken to serve. Garnish with cilantro.

SAMBAL CHICKEN WITH PEPPERS BY LAZY DARREN
Sambal chilli is a popular condiment particularly in Asia, whether its used as a dipping sauce or as a gravy. Purists will make their own sambal but these days, makers of chilli have raised the bar that some prefer ready mades to the real thing. This sambal chicken that I have prepared is easy, tasty and best of all you can control the heat. For me, if I am dripping buckets at the end of the meal, it's a wrap for me, but you can tone it down if you like.

Steps:
- Slice the chicken into 1 cm thick slices, try to get pieces of equal size. Wash hands.
- Stir fry the garlic and the onions for about 2 mins under medium fire.
- Add the chicken slices, stir fry till slightly cooked.
- Add the chinese wine.
- Add the both chili paste and continue frying for about 1 minute.
- Add in the half the amount of chicken stock and continue to fry until the sauce reduces.
- Squeeze in juice of one lime.
- Add green and red peppers. Fry for 2 minutes.
- Serve with rice.

LAZY PESTO CHICKEN AND RICE
I created this one night when I was looking for a lot of flavor, but wanted something really quick to put together. On my plate, I melt mozzarella cheese on it. I love cheese, but the rest of my family isn't into it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.
- Spread rice in the bottom of the baking pan. Layer chicken on top.
- Mix cream of chicken soup, milk, and cheese wedges together in a bowl until smooth. Stir in chicken broth and pesto. Pour over chicken and rice. Cover baking pan tightly with aluminum foil.
- Bake in the preheated oven until most of the liquid has been absorbed, about 45 minutes. Remove from oven carefully; stir. Replace aluminum foil cover. Continue baking until rice is tender, about 15 minutes more. Remove from oven; uncover and sprinkle Parmesan cheese on top.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Broil until Parmesan cheese is melted and browned, about 5 minutes.

STEAM CHICKEN WITH RICE LAZY DARREN
I am Hainanese, so when I cook chicken, does it make it hainanese chicken? Anyways, as my nick suggests, I do not like to spend too much time cooking but I do not like to sacrifice on taste too. So this is my take on how you can whip up a comforting steam chicken with broth to ease up the day's tension. You can use any part of the chicken really, I just prefer the breast meat (but I am really a butt person)

Steps:
- Wash chicken, remove skin.
- Slice chicken into bite size pieces about 0.5cm thickness. Wash your hands.
- Put the smashed garlic and sliced ginger into a soup dish or any plate that can hold water.
- Place the chicken on top.
- Add in the all the seasoning then pour in the water.
- If the steamer is already boiling then steam for about 8 to 10 minutes It is important not to over steam the breast meat as it tends to get a bit dry and tough. If using an autorice cooker type steamer, the default setting should be alright.
- Serve with rice. Goes well with chicken rice chilli (sour garlic chilli) and dark soya sauce as condiments.
- Note: If you intend to use stock instead of water, then omit the Maggi seasoning.
