STEAMED MUSSELS IN CURRY BROTH

Steamed Mussels in Curry Broth image

Provided by Food Network

Categories     main-dish

Time 20m

Yield 8 servings as a first-course

Number Of Ingredients 12

3 pounds mussels
1 tablespoon vegetable oil
2 medium onions, coarsely chopped
1 head garlic, peeled and crushed
3 tablespoons red curry paste
1 teaspoon ground turmeric
2 cups dry white wine
2 cups clam juice
10 Kaffir lime leaves
4 stalks lemongrass (white part only), very thinly sliced
1/2 cup heavy cream
1 cup (loosely packed) cilantro leaves

Steps:

  • With a vegetable brush, clean the mussels under cold running water. Pull off and discard any beards. Discard any mussels with a broken shell or those that do not close when sharply tapped. Drain well.
  • In a stainless steel or coated-aluminum wok, heat the oil over medium heat. Add the onions and garlic, and stir-fry until the onion is wilted. Add the curry paste and turmeric, and cook, stirring, for about 1 minute, until aromatic. Add the wine, clam juice, lime leaves, and lemongrass. Bring to a simmer and cook for 5 minutes. Remove the limes leaves and discard.
  • Add the mussels, cover the wok tightly, and steam over moderate heat for 5 minutes. The mussels will begin to open. Continue cooking until all the mussels have opened; transfer those that opened to a platter and discard any that fail to open. Add the cream and cilantro leaves to the wok, and stir to blend. Pour over the mussels and serve.

STEAMED MUSSELS IN PERNOD BROTH

Steamed Mussels in Pernod Broth image

It's surprisingly easy to recreate this bistro favorite right at home. The tangy broth made with Pernod®, garlic and tomatoes pairs wonderfully with the juicy meat of the mussels. This dish is quick to cook and makes for a plentiful meal by adding a loaf of crusty bread to dip into the rich tomato broth.

Provided by sbigelow

Categories     Mussels

Time 45m

Yield 2 serving(s)

Number Of Ingredients 11

1 tablespoon olive oil
1 cup chopped fennel bulb
2 cups julienne onions
3 tablespoons minced shallots
2 tablespoons minced garlic
1/2 cup Pernod
1/2 cup peeled and chopped Italian plum tomato
2 cups white wine
40 mussels, cleaned and debearded
1/2 cup finely chopped parsley
1 loaf crusty French bread

Steps:

  • Heat the olive oil in a large pan. When the oil is hot, sauté the fennel, onions and shallots for 2 minutes. Add the garlic. Remove the sauté pan from the heat and add the Pernod®. Place the sauté pan back on the heat and flame the vegetables for 1 minute. Season with salt and pepper.
  • Stir in the tomatoes and wine and bring the liquid to a simmer. Add the mussels and parsley, cover and steam the mussels until all of the shells have opened, about 4 minutes. Discard any mussels that do not open their shell. Remove the mussels and let the broth cook for 2 minutes. Season the broth with salt and pepper, if needed. Remove the broth from the heat. Divide the mussels between two large shallow bowls. Spoon the broth over the mussels. Serve the mussels with the crusty bread.

STEAMED MUSSELS WITH GARLIC AND PARSLEY

Steamed Mussels With Garlic and Parsley image

This is absolutely the simplest way to cook mussels, and perhaps the most satisfying. A big pot of them makes an easy, festive dinner any night of the week.

Provided by David Tanis

Categories     easy, quick, main course

Time 30m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons extra-virgin olive oil, plus more for toasts
2 garlic cloves, minced, plus 1 or 2 whole garlic cloves for rubbing toasts
Pinch of crushed red pepper
4 pounds mussels, cleaned
1/4 cup white wine or water
1 baguette, split lengthwise, then cut crosswise in half
1 cup roughly chopped parsley

Steps:

  • Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.
  • Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.
  • Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.

Mussels travel with their own liquid. Inside their shells, each fresh mussel comes with a tasty piece of meat waiting to be enjoyed, as well as their own ‘built in’ broth. Mussels carry some of the salt water they were grown in, which is why mussels steam so easily. When cooked, the shells open releasing the liquid inside.
