STEAMED PORK DUMPLINGS



Steamed Pork Dumplings image

I love dumplings/pot stickers and these are seriously good. From Canadian LCBO's Food and Drink Magazine. I am sure that these would work with chicken or turkey instead of pork. You can freeze these dumplings for an easy plan-ahead appetizer / snack / dinner. Serve with Recipe #397489.

500 g extra lean ground pork
1/2 cup green onion, finely chopped
2 tablespoons cilantro, fresh, chopped
2 teaspoons fresh ginger, finely grated
1 cup shiitake mushroom, finely chopped
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch
1 egg white
40 wonton wrappers
cabbage leaf, for steaming

Steps:

  • Mix together pork, green onions, cilantro, ginger, mushrooms, soy sauce, sesame oil, sugar, cornstarch and egg white in a large bowl until well combined.
  • Working with 6 wrappers at a time, use fingertip to wet edges of each wrapper with water.
  • Top each wrapper with 2 teaspoons pork mixture.
  • Bring the 4 corners up towards the top of the filling, pleat the sides of the wrapper to form a cup, and press the wrapper snugly around the filling. The dumpling does not need to be fully enclosed at the top.
  • Keep the dumplings covered with dampened tea towel while working.
  • Place a bamboo steamer in a large pot and add enough water to come just below the base of the bottom steamer.
  • Line each basket with a single layer of cabbage leaves to prevent the dumplings from sticking; important, do not omit or you will be eating of the steamer :).
  • Place a single layer of dumplings on top of leaves.
  • Cover and simmer for 8 minutes or until pork is cooked through; do not overcook.
  • Serve warm with Recipe #397489 or other dip.

STEAMED BARBECUE PORK BUNS



Steamed Barbecue Pork Buns image

You don't need much experience at all to make beautiful barbecue pork buns, aka. char siu bao. Instead of that mysterious, gelatinous red sauce that Chinese restaurants use, I filled these buns with regular barbecue pork for a more savory version. Regardless of what filling you choose, I hope this helps shape your technique.

¾ cup water
1 ½ teaspoons active dry yeast
2 teaspoons vegetable oil
1 ½ teaspoons white sugar
2 cups self-rising flour
2 cups diced barbecued pork, or to taste
¼ cup finely sliced green onions
1 pinch cayenne pepper, or to taste
2 teaspoons sesame oil
¼ cup hoisin sauce, or to taste

Steps:

  • Pour water into a bowl. Sprinkle in yeast and let stand until yeast softens and begins to form a creamy foam, about 10 minutes. Add vegetable oil, sugar, and self-rising flour. Mix using a wooden spoon until a shaggy dough comes together.
  • Turn dough out onto your counter and knead into a smooth ball, about 10 minutes. Transfer dough ball into a lightly oiled bowl. Flip to lightly coat. Cover and let rise in a warm spot until doubled in size, about 2 hours.
  • Combine pork, green onions, cayenne pepper, sesame oil, and hoisin sauce in a separate bowl. Mix well and refrigerate.
  • Add a couple inches of water to a Dutch oven and set a bamboo steamer on top.
  • Poke dough down to deflate and transfer to a lightly floured surface. Cut dough in half and roll each half into a long tube. Divide each tube into 6 pieces. Roll each piece into a ball and press into a disk. Roll each disk until about 1/8-inch thick and 4 to 5 inches wide. Roll out edges so they are slightly thinner than the center.
  • Transfer a spoonful of filling onto the center of each dough circle. Pinch edges together to form multiple small pleats, moistening edges with water if needed. Squeeze pleats together at the top to seal in the filling. Place pork buns on individual squares of parchment paper. Transfer them to the cold steamer, cover, and let proof until noticeably puffed, 30 to 45 minutes.
  • Bring the water in the Dutch oven to a boil over high heat. Set timer for 10 minutes. Turn off heat and leave buns covered for 15 minutes. Uncover and transfer to plate.

  • Soak your dried shiitake mushrooms in a bowl of hot water and place a small plate on top to ensure they are fully submerged for 30 minutes. Cut the stems off the mushrooms and discard them. Return the mushrooms to the water if they still seem dry inside, since thicker mushrooms will take longer to rehydrate. Finely chop the mushrooms and set aside, reserving the water you used to soak them.
  • Soak your dried shrimp in hot water for 30 minutes. Pour the shrimp out into a strainer and give them a quick rinse before chopping them.
  • Heat 5 tablespoons (75 ml) vegetable oil in a frying pan or wok on medium low heat. Scoop out about 2 tablespoons of the heated oil and set aside for brushing the cha guo after they come out of the steamer.

  • The night before, soak the ribs for 2 hours to remove excess blood and impurities from the meat. Change the water a couple of times in between. Drain, rinse, and pat the ribs dry with a paper towel. Marinate the ribs with the mashed red fermented bean curd, the liquid from the jar, ½ teaspoon sugar, sesame oil, Shaoxing wine, ¼ teaspoon of ground white pepper, 1 tablespoon minced ginger, and the white parts of the scallions. Cover, and let sit in the refrigerator overnight.
  • Soak a large dried lotus leaf by submerging the whole leaf under water. Use a large plate or bowl to weigh it down and leave it overnight. Handle with care, since these leaves rip easily!
  • The next day, rinse and soak 2 cups of glutinous rice for an hour, making sure the water is at least 2 inches above the rice line. At the same time, take the marinated ribs out of the refrigerator and bring them to room temperature.
  • Rinse the lotus leaf front and back with fresh water. Line your bamboo steamer or large heatproof platter (with at least a 2-3 inch depth) with the lotus leaf.
