1 pound fresh Chinese egg noodles
2 tablespoons olive oil
⅓ cup chopped onion
1 clove garlic, chopped
¾ cup broccoli florets
½ cup chopped red bell pepper
2 cups cooked shrimp
½ cup sliced water chestnuts, drained
½ cup baby corn, drained
½ cup canned sliced bamboo shoots, drained
3 tablespoons oyster sauce
1 tablespoon red pepper flakes, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in noodles and return to a boil. Cook until the pasta floats to the top, 1 to 2 minutes; drain.
  • Heat oil in a large skillet over medium-high heat; cook and stir onion and garlic for about 1 minute. Add broccoli and bell pepper; cook and stir until just tender, about 3 minutes. Stir in shrimp, water chestnuts, baby corn, bamboo shoots, oyster sauce, and red pepper flakes. Continue cooking until shrimp and vegetables are heated through, about 3 minutes more.
  • Serve shrimp and vegetables over noodles.

Olive oil, for stir-frying
10 snow peas
1 clove garlic, finely chopped
One 1-inch piece ginger, finely chopped
1/2 carrot, sliced into thin rounds
1/2 bunch scallions, greens thinly sliced on the bias, whites thinly sliced
5 jumbo shrimp (16/20 count), peeled and deveined
2 tablespoons oyster sauce
1 tablespoon rice wine vinegar
4 ounces hand-pulled noodles or fresh Chinese egg noodles, blanched
1 tablespoon unsalted peanuts

Steps:

  • Heat the olive oil in a large saute pan over high heat until shimmering. Add the snow peas, garlic, ginger, carrots and scallions and saute. Add the shrimp and cook until pink, 2 to 3 minutes. Deglaze the pan with the oyster sauce and rice wine vinegar. Add the noodles and toss until heated through and all ingredients are fully coated. Top with the peanuts and serve.

2 -3 cups snow peas, trimmed,rinsed,and drained
4 teaspoons peanut oil or 4 teaspoons canola oil, divided
1 large egg, plus
1 large egg white, beaten together
1/2 cup minced shallot
1 tablespoon minced fresh ginger
2 -3 teaspoons minced fresh garlic, to taste,but the more the better
1 1/2 lbs large shrimp, peeled and deveined
1/2 teaspoon crushed red pepper flakes, to taste
10 ounces linguine, hot cooked or 10 ounces 'me' a thin flat malaysian egg noodles, if you can find them
2 cups fresh bean sprouts, picked over,rinsed,and drained
1/4 cup light soy sauce
1 tablespoon rice vinegar (optional)
1/2 cup diagonally sliced scallion (green onions)

Steps:

  • Steam snow peas, covered, for no more than 1 minute, and set aside.
  • Heat 1 Tsp oil in a wok or large skillet.
  • Add egg, and cook until it thoroughly set, stirring constantly, remove from wok, and set aside.
  • Heat 3 Tsp oil in wok over medium-high heat.
  • Add shallots, ginger, and garlic, and saute for 2-3 minutes or until shallots just begin to brown.
  • Add shrimp and red pepper flakes, and saute about 4-5 minutes, tossing, until shrimp are done.
  • Add pasta, and toss well.
  • Add snow peas, cooked egg, bean sprouts, and soy sauce, and optional rice vinegar, if using.
  • Continue cooking and tossing just until thoroughly heated.
  • Remove from heat, and sprinkle with scallions.
  • Serve with more soy sauce on the side.

3 ounces dried wide rice noodles (pad thai)
2 tablespoons fish sauce
2 tablespoons sugar
1 tablespoon soy sauce
1 teaspoon hoisin sauce
1 teaspoon chile sauce with garlic (such Lee Kum Kee brand)
1 tablespoon vegetable oil
6 ounces medium shrimp, peeled and deveined (51-60 per pound)
1 (4 ounce) can fire-roasted whole green chilies, drained and sliced into long thin slivers (to yield 1/2 cup)
1 1/2 cups bean sprouts
2 tablespoons crushed unsalted peanuts
1/3 cup chopped fresh cilantro
10 mint leaves, torn into small pieces
1 lime, cut into wedges for serving

Steps:

  • Soak the dried rice noodles in a bowl of very warm (110F) water and soak until they're pliable but still rather firm, about 30 minutes. Drain in a colander - no need to pat dry. Meanwhile prep the rest of the ingredients.
  • In a small bowl, combine the fish sauce, sugar, soy sauce, hoisin sauce and chile-garlic sauce.
  • Once the noodles are drained, heat the oil in a large (12-inch) skillet or stir-fry pan over high heat until very hot.
  • Add the garlic, stir and immediately add the shrimp. Stir-fry until the shrimp turn pink and firm, 2 to 3 minutes.
  • Add the fish sauce mixture. Stir to mix for about 20 seconds, then add the chile slivers and the noodles. Stir-fry until the noodles are tender and the liquid is absorbed, 1 to 2 minutes. If the noodles are too firm, add 1 tablespoon of water and cook another minute.
  • Add the bean sprouts and stir-fry until they're slightly limp, 1 to 2 minutes. Transfer to a serving platter or individual plates, and garnish with the peanuts, cilantro and mint.
  • Serve immediately, with lime wedges on the side.

8 ounces Chinese egg noodles (linguine can be substituted)
1 fresh jalapeno pepper, diced
1 tablespoon plus 1 teaspoon sesame oil
1 teaspoon salt
1/4 teaspoon freshly ground pepper
3 medium shallots (2 1/2 ounces total), peeled and minced
2 tablespoons minced fresh ginger
1 tablespoon minced garlic
2 tablespoons reduced-sodium soy sauce
1/2 cup homemade or low-sodium canned chicken stock, skimmed of fat
Nonstick cooking spray
12 ounces boneless, skinless chicken breast (2 breast halves), cut into 1 1/2-inch pieces
2 scallions, trimmed, white and light-green parts only, thinly sliced
1 bunch broccoli rabe (about 1 1/2 pounds), trimmed and blanched
4 Thai chile peppers or 1 medium jalapeno pepper
1 cup finely shredded green cabbage
8 ounces medium shrimp, peeled and deveined

Steps:

  • Fill a large saucepan with water and bring to a boil. Stir in noodles and cook until just tender, about 3 to 7 minutes, or according to package instructions. Remove from heat, drain, and transfer to a large bowl. Add jalapeno, 1 tablespoon sesame oil, salt, and pepper. Toss well to combine and set aside.
  • In a small bowl combine shallots, ginger, garlic, soy sauce, and stock; set aside.
  • Spray a large nonstick skillet with cooking spray and place over medium heat. Using tongs or a fork, transfer about a sixth of the noodles into skillet. Press noodles down with the back of a spatula and cook until crisp and golden, about 4 to 5 minutes; the noodles will cook together and form a pancake. Turn noodles over and cook the other side for 4 to 5 minutes more. Carefully transfer noodle pancake to a baking sheet and set in a low oven to keep warm. Repeat the process, cooking a sixth of the noodles at a time, until 6 pancakes have been formed.
  • Return skillet to medium heat and add the remaining teaspoon sesame oil. Add the chicken and cook, tossing often, until golden brown all over, 5 to 7 minutes. Transfer chicken to a small bowl. Cover with foil to keep warm.
  • Add scallions, broccoli rabe, chile peppers, and cabbage to skillet. Pour the reserved ginger-stock mixture over vegetables, raise heat to high, and cook until vegetables are limp and tender, about 3 to 5 minutes. Return chicken to skillet and add shrimp. Cook, stirring often, until shrimp is pink and opaque and chicken is hot, about 3 to 5 more minutes.
  • Remove the noodle pancakes from oven and place one on each of 6 plates. Divide the stir-fry among the pancakes and serve immediately.

These spicy noodles are based on a classic Malaysian noodle dish, Mee Goreng, but I've reduced the number of ingredients. With origins in North India, the dish lends itself well to the Indian Papadini bean flour noodles, which have more protein, ounce for ounce, than steak. If you can't find this type of noodle, use wide dried rice noodles: soak them for 20 minutes in warm water, then cook 1 minute in boiling water, drain and toss with 1 tablespoon oil as directed.

1/2 pound turnip greens or mustard greens, cleaned, thick stems discarded
Salt to taste
1/2 pound cabbage, cut in 3/4-inch cubes
1/2 pound papadini (lentil/bean pasta)
3 tablespoons plus 1 teaspoon peanut or canola oil
1 1/2 tablespoons soy sauce
3/4 teaspoon salt
1 1/2 teaspoons sugar
1 1/2 teaspoons Asian red chile paste or sauce, such as sambal oelek
2 large garlic cloves, minced
1 tablespoon minced fresh ginger
1 (14-ounce) can chopped tomatoes, drained
1/2 pound medium shrimp, shelled, cut in half lengthwise and deveined
6 ounces bean sprouts (about 2 generous handfuls)
1/4 cup cilantro
1 lime, cut in wedges, for serving

Steps:

  • Bring 3 or 4 quarts water to a boil in a large pot, add about a tablespoon of salt and the greens. Cook 30 seconds only, and immediately transfer to a bowl of ice water, using a slotted spoon or deep-fry skimmer. Drain, squeeze out water and chop coarsely. Set aside. Bring the water back to a boil, add the cabbage, blanch 30 seconds and transfer to the ice water. Drain and set aside.
  • Bring the water back to a boil and add the noodles. Cook 2 minutes, drain, shake off excess water, toss with a tablespoon of the oil, and set aside.
  • In a small bowl, mix together the soy sauce, salt, sugar, and the chile paste. Stir to dissolve the sugar and salt and set aside.
  • Heat a wok or large, heavy nonstick skillet over medium-high heat and add the remaining oil and garlic and ginger. Cook, stirring, for about 30 seconds or until the garlic and ginger are fragrant. Add the tomatoes and increase heat slightly. Stir until the tomatoes begin to break down and stick to the pan, about 3 minutes. Add the shrimp and blanched greens and cabbage and cook, stirring, until the shrimp curl and turn pink, and the cabbage is crisp-tender, 4 to 5 minutes. Add the noodles and soy sauce mixture and stir together until the noodles are heated through and coated with the sauce. Add the bean sprouts and cilantro, toss together quickly and remove from the heat. Serve, with lime wedges on the side.
