Thai Stir - Fried Prawns With Tamarind image

This simple and quick to cook recipe is full of flavour. Prepare well in advance and allow prawns to marinate in the sauce, for a fuller flavour. Very popular dish in the East.

2 ounces tamarind paste
5 fluid ounces boiling water
2 tablespoons vegetable oil
2 tablespoons onions, chopped
1 tablespoon garlic, chopped
6 dried red chilies, chopped
2 tablespoons soft brown sugar
2 tablespoons chicken stock
1 tablespoon fish sauce
1 lb prawns, cooked and shelled
2 spring onions, sliced (to garnish)

Steps:

  • Heat half of the oil in a wok or frying pan and fry the onion, garlic and chillies till golden.
  • Add all the other ingredients EXCEPT FOR THE PRAWNS. Bring the mixture to the boil, remove from the heat and allow to cool.
  • Add the prawns and coat with the sauce, set aside to allow the prawns to marinate.
  • Reheat the wok, add the sauce with the prawns and heat for two mins, do not over cook the prawns or they will toughen.
  • Serve garnished with the spring onion.

½ lime , juiced, plus wedges to serve
50g mayonnaise
2 tbsp vegetable oil
1 garlic clove , crushed
thumb-sized piece ginger , grated
½ red chilli , finely chopped
1 tbsp tamarind paste
180g raw jumbo king prawns (or tiger prawns)
toasted sesame seeds , sliced
spring onions and cooked
rice , to serve

Steps:

  • Mix the lime juice with the mayonnaise and set aside.
  • Heat the oil in a large, non-stick frying pan over a medium heat and add the garlic, ginger and chilli. Lightly fry for 2 mins until fragrant, then add the tamarind paste.
  • Toss the prawns in the mixture and cook for 2-3 mins until they have all turned pink. Serve with rice topped with the sesame seeds and spring onions, and the lime mayo, plus lime wedges for squeezing over.

600 g large prawns, washed and trimmed (tiger prawns if you can get)
1 tablespoon chopped scallion
1 tablespoon soy sauce
1 tablespoon ginger juice
salt
1 tablespoon rice wine
4 tablespoons oil

Steps:

  • Marinate prawns with chopped scallions, soy sauce, ginger juice, a dash of salt and rice wine for 30 mins.
  • Heat oil in a pan on high.
  • Add in the prawns and stir-fry until the prawns changes color (about 1-2 mins).
  • (Do not over-cook the prawns) Remove for serving.

2 tablespoons canola oil
1 onion, sliced very fine
2 red chilies, seeded and sliced very fine
20 green king prawns, peeled and deveined with tail intact, can leave head on to if you wish (shrimp)
2 tablespoons finely chopped garlic
1/4 cup tamarind juice
2 tablespoons palm sugar
2 tablespoons fish sauce
2 spring onions, sliced (green onion)
fresh coriander leaves, to garnish

Steps:

  • Heat oil in wok until smoking then add onion and chili and stir fry for 30 seconds.
  • Add prawns and garlic, stir fry until prawns are just starting to colour, around 2 minutes.
  • Add tamarind water, palm sugar and fish sauce and stir fry until the prawns are cooked and the sauce has slightly thickened, around 3 minutes Transfer to a serving plate and garnish with the spring onion and coriander leaves.
  • Serve with Jasmine rice.

1 tbsp vegetable oil
1 onion, chopped
1 red chilli, finely chopped
2 garlic cloves, crushed
1 tbsp grated ginger
1 tsp turmeric
1 tsp cumin seeds
1 tsp ground coriander
400g can cherry tomatoes
1-2 tbsp tamarind paste (see tip, below)
250g raw king prawns
250g cooked basmati rice
handful of coriander leaves, to serve

Steps:

  • Heat the oil in a frying pan over a medium heat and cook the onion for 5-8 mins until light golden. Stir in the chilli, garlic and ginger, and fry for another minute before adding the spices. Tip in the cherry tomatoes, swirl the can out with a splash of water and stir that into the pan as well.
  • Simmer for 5 mins until the tomatoes burst and the sauce thickens. Stir in the tamarind and prawns, and simmer for 2-3 mins until the prawns are cooked. Serve the curry on top of the rice, with the coriander scattered over.

6 dried red chilies
2 tablespoons vegetable oil
2 tablespoons chopped onions
2 tablespoons palm sugar (or light brown sugar)
2 tablespoons chicken stock
1 tablespoon fish sauce
6 tablespoons tamarind juice (mix paste with warm water)
1 lb prawns
1 tablespoon fried chopped garlic
2 tablespoons shallots, chopped fried
2 spring onions

Steps:

  • Heat pan and dry fry the dried chilies. Set them aside to cool.
  • Add oil and cook chopped onions over medium heat for 2-3 minutes until softened and golden brown.
  • Add sugar, stock, fish sauce, chilies, and tamarind juice, stirring constantly until sugar has dissolved. Bring to a boil and then lower heat slightly.
  • Add prawns, garlic, and shallots. Toss over the heat for 3-4 minutes until prawns are cooked. garnish with scallions.
