Parmesan crusted chicken is easy enough to make for a busy weeknight but also special enough for company.

½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

4 chicken breast
1 c italian or panko bread crumbs with salt & pepper
2 eggs- slightly beaten

Steps:

  • 1. Dip chicken pieces in slightly beaten eggs, then dip in bread crumbs.
  • 2. Fry in skillet on stovetop in "I Can't Believe It's Butter" spray (no calories!) on medium high heat until brown. Turn down heat, cook until done in center.
  • 3. When done, pour small jar of Barilla's Spicy Marinara sauce over chicken. Cook on low until sauce is thoroughly heated. (At this point, you can also transfer it to a baking dish and put in the oven if you want to slow it down a little bit). The acid in the marinara sauce makes the chicken VERY tender.
  • 4. Top with shredded parmesan cheese (not the powder) and shredded mozzarella. (I mix the two together before putting on chicken).
  • 5. Cook, (covered) until cheese is melted. Serve with a veggie and salad and you have dinner!

This is real comfort food. A family favorite. If you can, buy the fresh mozzarella. You won't believe the difference and it's worth it. The texture isn't rubbery like the typical mozzarella. I got it from watching an Emeril show on the Food Network.

4 boneless skinless chicken breast halves
salt and pepper
1/2 cup flour
1/2 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese
1 egg
1/2 cup milk
1 tablespoon butter
2 tablespoons olive oil
more parmesan cheese, for sprinkling on top
4 ounces sliced mozzarella cheese (if you can get it, the soft fresh kind is best, it melts sooooo creamy)
your favorite marinara sauce or store bought spaghetti sauce

Steps:

  • Pound the chicken breasts between two slices of plastic wrap until about 1/4" thick.
  • Season with salt and pepper.
  • Dredge chicken in flour and shake off excess.
  • Dip in egg/milk mixture, then in breadcrumb/Parmesan mixture.
  • Heat the butter and olive oil in a large deep skillet.
  • Brown the chicken breasts over medium heat until golden on each side (about 2-3 min per side).
  • Remove to a plate and keep warm.
  • Add the marinara sauce to the skillet.
  • Heat to boiling and simmer 10 minutes.
  • Add the chicken breasts to the sauce and sprinkle Parmesan over them.
  • Place a slice of mozzarella on each piece of chicken.
  • Cover and simmer about 8- 10 minutes or until the cheese has melted and the chicken is tender.
  • Serve with your favorite pasta- we like linguine.
