Pop! Cake mix and soda pop create a delicious strawberry-and-cream dessert.

1 box Betty Crocker™ Super Moist™ white cake mix
1 1/4 cups strawberry-flavored soda pop
Vegetable oil and egg whites called for on cake mix box
Red food color
1 container Betty Crocker™ Rich & Creamy® cream cheese frosting
1/2 cup Betty Crocker™ white candy sprinkles
Fresh strawberries, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake mix as directed on box for 24 cupcakes, substituting soda pop for the water.
  • Stir 1 or 2 drops food color into frosting. Frost cupcakes.
  • In small resealable food-storage plastic bag, place sprinkles and 1 drop food color; seal bag. Gently shake and massage sprinkles until mixture is various shades of pink; sprinkle around edges of frosted cupcakes. Garnish with fresh strawberries. Store loosely covered in refrigerator.

1 (18 1/4 ounce) box white cake mix (calls for Betty Crocker Supermoist)
1 1/4 cups strawberry soda
1/3 cup vegetable oil
3 egg whites
red food coloring
1 (16 ounce) can cream cheese frosting
1/2 cup white candy sprinkles
fresh strawberries, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans).
  • Place paper baking cup in each of 24 regular-size muffin cups.
  • Make and bake cake mix as directed on box for 24 cupcakes, substituting soda for the water and using oil and egg whites.
  • Cool in pan 10 minutes; remove from pan to cooling rack.
  • Cool completely, about 30 minutes.
  • Stir 1 or 2 drops food color into frosting.
  • Frost cupcakes.
  • In small resealable food-storage plastic bag, place sprinkles and 1 drop food color; seal bag.
  • Gently shake and massage sprinkles until mixture is various shades of pink; sprinkle around edges of frosted cupcakes.
  • Garnish with fresh strawberries, if desired.

1 box white cake mix, prepared according to package instructions
20 strawberries
1 cup chocolate chips
2 cups vanilla frosting

Steps:

  • Preheat oven to 375°F (190°C).
  • In a large bowl, prepare the cake batter.
  • Divide the batter evenly among a lined muffin tin, filling halfway.
  • Finely chop 8 of the strawberries.
  • Spoon them evenly on top of the batter.
  • Top with remaining batter, filling about ¾ of the way up.
  • Bake for 20 minutes, then cool.
  • In a small bowl, microwave the chocolate chips in 20-second intervals, stirring in between, until the chocolate is melted and smooth.
  • Dip the strawberries in the chocolate, then chill.
  • Pipe the frosting onto each cupcake, then top with a chocolate-covered strawberry.
  • Enjoy!

  • In a stand mixer fitted with the paddle attachment, beat together butter and sugar on medium speed for 3 minutes until light and fluffy. Scrape down the sides and the bottom of the bowl as necessary. On medium speed, beat in the eggs one at a time, beating well after each addition. Add the vanilla extract and beat until combined. With the mixer on low speed, add half of the dry ingredients and beat just until combined. Add the milk and beat until combined. Add the other half of the dry ingredients and beat slowly or fold by hand only until combined. Do not overmix – the less you mix, the lighter the cake will be. Fold in diced strawberries.
  • Divide the batter between 12 cupcake liners, filling them about 3/4 full. Bake for 15-20 minutes (or 8-10 minutes if making mini cupcakes) until a toothpick inserted into the center of the cupcake comes out clean or with just a few moist crumbs. Let the cupcakes cool completely on a wire rack.
