4 pints (8 cups) fresh strawberries, sliced thick
5 tablespoons balsamic vinegar
2 tablespoon sugar
1/4 teaspoon freshly ground black pepper
2 pints vanilla ice cream, for serving
Freshly grated lemon zest, for serving

Steps:

  • Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
  • Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.

2 cups small strawberries, quartered
2 tablespoons brown sugar
1 1/2 teaspoons balsamic vinegar
1/8 teaspoon black pepper
lemon yogurt
of fresh mint

Steps:

  • Combine the strawberries, brown sugar, balsamic vinegar and black pepper in a bowl; cover and marinate in the refrigerator 30 minutes.
  • Spoon equal amounts into 4 dessert dishes (I like to use "open" champagne glasses for a simple & elegant presentation) and top with 2 tablespoons lemon yogurt.
  • Garnish with fresh mint leaves and a bit of freshly ground black pepper - YUM!

Use fresh strawberries, only freshly cracked black pepper, and the best balsamic you can afford. I actually prefer it with just the balsamic and strawberries. Recipe is from Gourmet.

2 cups strawberries, trimmed and quartered (about 1 pint)
1 1/2 cups sugar
3 tablespoons balsamic vinegar
3 tablespoons water
1/2-1 teaspoon cracked black pepper (optional)

Steps:

  • In a small heavy saucepan bring all ingredients to a boil, stirring, and skim surface. Simmer mixture, stirring and skimming foam occasionally, 15 minutes, or until thickened and translucent. Remove pan from heat and cool preserves completely. Preserves keep, covered and chilled, 1 month.

1/4 cup sugar (to taste)
1 tablespoon balsamic vinegar (to taste)
1/8 teaspoon ground black pepper (optional)

Steps:

  • Toss the strawberries with the 1/4 cup sugar and let sit for 10 minutes.
  • Sprinkle with the vinegar; taste and add more sugar or vinegar if necessary. Sprinkle with the pepper and serve.

I love this recipe! It is from the "Frugal Gourmet Whole Family Cookbook" by Jeff Smith. I've made this simple recipe for many years. People are always impressed but... I never tell them how easy it is to make. Some recipes are best kept secret. But I will share this one...

1 pint ripe strawberry
2 tablespoons sugar
2 tablespoons balsamic vinegar

Steps:

  • Hull the strawberries and cut them into quarters lengthwise.
  • Place in a bowl and toss with the vinegar and sugar.
  • Cover and allow to rest on the counter for about an hour so that the berries will "juice" then chill in the fridge for another hour.
  • Toss again before serving.
  • (I like a little more vinegar sprinkled on before serving but do this to your own taste.
  • I should mention that these strawberries do not keep well so they should be prepared and eaten the same day. If made more than a few hours ahead of time they are mushy and texturally unappealing. Just thought I should mention that.

  • Halve the strawberries if the strawberries are large, and quarter them if they are very large. They should be in bite-size pieces. Put the berries in a mixing bowl and sprinkle with brown sugar. Toss and set aside for 30 minutes.
  • Sprinkle the balsamic vinegar and pepper on the berries and toss again. Serve at room temperature for the fullest flavor.
  • NOTE
  • The amount of sugar may be adjusted, depending on the sweetness of the berries.
