Sliced strawberries give this iconic southern treat a refreshing zing and a shot of color. The pudding needs to be refrigerated to set, so it's a great recipe to make a night in advance.

1 cup granulated sugar
6 tablespoons cornstarch
1/2 teaspoon coarse salt
1/2 vanilla bean, split lengthwise and seeds scraped
5 cups milk
8 large egg yolks
4 tablespoons unsalted butter, cut into pieces
4 large bananas
2 1/2 cups heavy cream
2 tablespoons confectioners' sugar
72 wafer-style vanilla cookies, such as Nilla Wafers (from one 11-ounce box)
1 pound strawberries (4 cups), hulled and cut into 1/4-inch slices, plus more, whole, for serving

Steps:

  • Place a fine-mesh sieve over a medium bowl. In a medium saucepan, off heat, whisk together granulated sugar, cornstarch, salt, and vanilla beans and pod. Gradually whisk in milk until cornstarch has dissolved; whisk in yolks.
  • Cook over medium, whisking constantly, until the first large bubble forms and sputters. Reduce heat to low; cook, whisking constantly, 1 minute. Remove from heat and stir in butter until melted; immediately pour through sieve into bowl. Cover with plastic wrap, pressing it directly onto surface to prevent skin from forming; let cool completely.
  • Cut bananas crosswise into 1/4-inch slices. Combine cream and confectioners' sugar in a bowl; whisk until stiff peaks form.
  • Spoon one-third of pudding into a large glass bowl. Layer half of cookies, slightly overlapping, followed by half of bananas and half of strawberries. Spread one-third of whipped cream over fruit. Repeat layering of pudding, cookies, fruit, and whipped cream. Gently spread with remaining pudding; top with remaining whipped cream. Refrigerate until set, at least 4 hours or, covered, up to overnight. Garnish with whole berries before serving.

1 cup granulated sugar
2 large eggs (beaten)
3 ripe bananas (mashed)
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups fresh strawberries ( chopped & tossed in 1 Tablespoon of flour)

Steps:

  • Preheat oven to 375F degrees. Spray two 9x5 loaf pan with nonstick spray. Set aside.
  • In a large bowl, using a KitchenAid Stand Mixer with paddle attachment cream butter and sugar together until light and fluffy.
  • In a small bowl, beat eggs using a fork. Add eggs to sugar mixture and beat until combined. Add mashed bananas and mix until combined.
  • Sift all dry ingredients: flour, baking soda, and salt. Slowly add sifted dry ingredients to banana mixture and mix until flour is just combined. DO NOT OVER MIX! Fold in floured covered strawberries.
  • Pour batter into prepared loaf pans and bake at 375*F for 15 minutes. REDUCE heat to 350*F and bake for an additional 30 minutes until edges are slightly brown or until toothpick inserted into center comes out clean. Let cool completely before removing from loaf pans.

How to Make Banana Strawberry Bread Pudding
2.5 cups french bread or brioche, cut into 1-inch cubes
2 eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 large banana, sliced
1/2 cup strawberries
5 tablespoons dried cranberries
1/4 cup powdered sugar
For serving
Chopped, pistachio
Desiccated coconut
Vanilla ice-cream
Chocolate sauce
NOTE: Some ingredients can be replaced with their vegan counterparts.

Steps:

  • Heat oven to 175°C/350°F. Line a baking pan with a parchament paper.
  • Arrange bread cubes on a baking tray and bake for 5 minutes.
  • Add eggs, sugar, cinnamon to a large mixing bowl.
  • Whisk well until combined.
  • Add bananas, strawberries, dried cranberries, and mix well.
  • Stir in bread cubes and toss well.
  • Grease a pan and pour the bread mixture into the pan.
  • Bake for 1 hour, or until a knife inserted near the center comes out clean and bread have browned.
  • Sprinkle pistachio and coconut.
  • Transfer pudding on to a serving plate.

1/2 cup plus 2 tablespoons walnuts
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon lemon zest
2 very ripe bananas, mashed
8 ounces strawberries, hulled and cut into 1/4- to 1/2-inch pieces

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
  • Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
  • Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
  • Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.

This is my twist to the normal bananna pudding and my family and friends love it. I have created this myself and it's really unique. The amount of pudding will vary depending on the size you want, but everything else stays the same. You can't mess it up.

6 (5 1/8 ounce) boxes instant vanilla pudding
2 (11 ounce) boxes vanilla wafers
2 cups sour cream (seperated )
1 (8 ounce) carton strawberry cream cheese
1 lb fresh strawberries
1 lb fresh banana
1 (21 ounce) can strawberry pie filling
18 cups milk, for the pudding

Steps:

  • prepare 4 boxes of the pudding according to the box, and add 1 cup of sour cream to the mix.( set aside ).
  • Prepare the last 3 boxes of pudding according to the box, and add 1 cup sour cream, 1 can strawberry pie filling, and 1 carton strawberry cream cheese, and blend together untill well mixed.
  • (Whatever pan you use) Start with a layer of waffers and then add vanilla pudding, and then your banannas, then continue with the waffers strawberry pudding, and strawberries, and so on untill you have the desired amount of layers in your pudding. Refrigerate for about an hour or two and serve.

2 tablespoons butter, melted
7 (1 ounce) slices day-old bread, torn into small pieces
¾ cup chopped fresh strawberries
3 eggs
1 ¼ cups milk
¾ cup light cream
¼ cup strawberry preserves
¾ cup white sugar, or to taste
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter the bottom and sides of an 8 inch square baking dish with the melted butter.
  • Toss bread with the chopped strawberries, and place into the prepared pan. Beat the eggs, milk, cream, strawberry preserves, sugar, and vanilla in a medium bowl until frothy. Pour over the bread and lightly press down with a spatula until the bread has absorbed the milk mixture.

3 cups diced fresh rhubarb
2 cups diced fresh strawberries
½ cup white sugar, divided
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1 pinch salt

⅔ cup butter, at room temperature
1 large egg
½ teaspoon almond extract
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix rhubarb, strawberries, and 1/4 cup sugar in a bowl; spread fruit mixture into prepared baking dish and sprinkle remaining 1/4 cup sugar on top.
