Strawberry-Banana Freezer Oatmeal image

In a hurry and don't have time to make breakfast? This recipe is ideal for a quick yet yummy breakfast. Just pop in the microwave and voila, your oatmeal is ready. Meal prep at its best.

1 cup white sugar, divided
2 cups fresh strawberries, sliced
3 cups water
2 cups almond milk
2 ½ cups old-fashioned oats
1 ½ cups bananas, mashed
1 teaspoon cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
⅛ teaspoon ground nutmeg
½ cup pecans, chopped

Steps:

  • Sprinkle 1/2 cup sugar over sliced strawberries in a bowl. Let rest until juices have been released, 10 to 15 minutes.
  • Boil water and almond milk together in a large pot. Add oats and cook over medium-low heat for 5 minutes, stirring frequently. Stir in strawberries, remaining 1/2 cup sugar, bananas, cinnamon, vanilla extract, salt, and nutmeg and remove from heat. Stir in pecans.
  • Grease 18 muffin cups and fill each to the top with oat mixture, mounding a bit. Freeze 8 hours to overnight. Remove oatmeal from muffin cups and place in freezer bags or a freezer-safe container.
  • Prepare 1 frozen oatmeal cup by placing in a microwave-safe bowl and heating in a microwave oven for 1 1/2 to 2 minutes.

1/2 cup plain oatmeal
2 teaspoons brown sugar
3 medium strawberries
1 banana
1/4 cup milk (depending on how runny you like you oatmeal)

Steps:

  • Cut 1 strawberry and 1/2 banana into tiny pieces, (the smaller the strawberries the better) and put in a bowl, then mash. (I used the back of a spoon).
  • Put the oatmeal in a bowl and mix the brown sugar into it.
  • Put the milk in the microwave for about 30 seconds.
  • Mix the milk in to the oatmeal mixture.
  • Cut 1 strawberry and the rest of the banana into slices. (so that there is about twice as many banana slices.
  • Layer the banana, then strawberry, then banana on top.
  • Cut the 3rd strawberry to slide on the side of the bowl.
  • Enjoy! I like to eat with orange juice.

2 cups quartered strawberries
1 tablespoon white sugar, or to taste
1 ⅓ cups whole wheat flour
¾ cup all-purpose flour
½ cup rolled oats
⅔ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
2 bananas, slightly mashed
4 eggs
3 tablespoons olive oil
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 5x9-inch bread pans.
  • Place strawberries in a bowl and sprinkle with 1 tablespoon sugar.
  • Mix whole wheat flour, all-purpose flour, oats, 2/3 cup white sugar, baking powder, and cinnamon together in the bowl of a stand mixer.
  • Stir bananas, eggs, and oil into strawberry mixture; pour into flour mixture. Beat mixture using the stand mixer until batter is just combined. Divide batter between the 2 prepared bread pans.
  • Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, 25 to 35 minutes.
