A moist and easy fresh strawberry buttermilk cake that can go from breakfast and brunch to dessert.

1 1/2 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, at room temperature
1 cup granulated sugar (plus extra for sprinkling)
1 1/2 tsp vanilla extract
3 large eggs (or 2 jumbo eggs)
1/4 cup sour cream
1/4 cup buttermilk
14 ounces fresh strawberries (hulled and sliced)

Steps:

  • Set oven to 350F
  • Lightly spray a 9 or 10 inch spring form pan.
  • Whisk together the flour, baking powder, and salt and set aside.
  • Cream the soft butter and sugar together in a stand mixer for 3-4 minutes, until light and fluffy. Scrape down the side of the bowl a couple of times.
  • Beat in the eggs, one at a time, and then beat in the vanilla.
  • Stir the sour cream and buttermilk together to blend, and then add the flour to the mixing bowl alternately with the sourcream/milk, beginning and ending with the flour. Mix until combined, but don't over mix.
  • Fold in the berries and turn into the prepared pan. Smooth out the top. Sprinkle the surface of the cake liberally with granulated sugar.
  • Bake for 40-45 minutes, or until the cake no longer jiggles in the center and the top is golden and slightly crackled. The exact cooking time will depend on the pan size you use. You can insert a toothpick in the center to test.
  • Let cool briefly, and then unlatch the spring and remove the outer ring. I like to run a spreading knife along the edge first to loosen any parts of the cake that are sticking to the pan. Cool completely on a rack before slicing.

Steps:

  • Preheat oven to 400°F Greased and flour a 9-inch springform pan.
  • Combine flour with baking powder, baking soda and salt.
  • Beat butter and sugars together until fluffy, about 3 minutes. Add eggs and vanilla, beat well. At low speed, add flour mixture alternately with buttermilk, until just blended. Spoon batter prepared pan. Top with strawberries and sprinkle with extra turbinado sugar.
  • Bake 30 to 40 minutes or until a pick inserted into center comes out clean. Let cool. Release sides of pan. Remove cake and place on a serving plate. Garnish with additional strawberries, if using.

5 tablespoons salted butter, at room temperature, plus additional for the skillet
1 1/4 cups all-purpose flour, plus additional for the skillet
3/4 cup plus 2 teaspoons sugar
1 1/2 teaspoons vanilla extract
1 large egg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
2 cups strawberries, tops removed, sliced in half lengthwise
3/4 cup cold heavy whipping cream
1/4 cup strawberry jam
1/2 teaspoon vanilla extract
Jerry's Sugared Pecans, recipe follows, for serving
1/2 cup (1 stick) butter, melted
1 cup sugar
1 teaspoon ground cinnamon
3 large egg whites
4 cups pecan halves

Steps:

  • For the buttermilk strawberry skillet cake: Preheat the oven to 375 degrees F. Butter a 10-inch cast-iron skillet and dust with flour.
  • Beat the butter and 3/4 cup of the sugar in a large bowl with an electric mixer on medium speed. Beat in the vanilla and egg. Whisk together the flour, baking powder, baking soda and salt in a medium bowl until combined. With the mixer running, add about a third of the flour mixture to the butter-sugar mixture, then add about half of the buttermilk. Continue adding the flour and buttermilk in this manner, ending with the flour, mixing just until the batter comes together.
  • Pour the batter into the prepared skillet and smooth the top. Place the strawberries on top of the cake batter, pressing down gently. Sprinkle the remaining 2 teaspoons sugar over top. Bake until golden brown, 35 to 40 minutes. Let cool slightly.
  • For the strawberry whipped cream: Place a mixing bowl and whisk attachment into the freezer 15 minutes prior to using.
  • In the bowl of an electric mixer fitted with the cold whisk attachment, whip the cream until soft peaks form, 3 to 4 minutes. Add the jam and vanilla and continue whipping until stiff peaks form, about 2 minutes more. (If not using immediately, cover and refrigerate.)
  • Serve the cake with the whipped cream and Jerry's Sugared Pecans.
  • Preheat the oven to 350 degrees F.
  • Line a large baking sheet with sides with aluminum foil. Pour the melted butter onto the lined sheet.
  • In a large bowl, mix the sugar, cinnamon and egg whites. Add the pecan halves and toss until they are fully coated.
  • Spread the pecans onto the prepared baking sheet. Bake for 30 minutes, stirring the pecans every 10 minutes. Cool on the baking sheet for 10 to 15 minutes before serving.

¼ teaspoon salt
½ cup unsalted butter, at room temperature
1 cup sugar

1 (16 ounce) package strawberries, diced
2 tablespoons sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch cast iron skillet.

  • Cream butter and 1 cup sugar with an electric mixer together in another bowl until light and fluffy. Add eggs, 1 at a time, mixing well after each addition. Add vanilla. A classic, old-fashioned buttermilk cake with bits of berries strewn throughout, it manages to taste just like your favorite fried treat (without the frying, of course). Be sure to bake the cake all the way through; strawberries have a high water content and tend to make for a soggy cake if not baked properly. The top should be crackly, deeply and perfectly golden brown, and the edges should pull away from the sides of the pan.

1/2 cup/115 grams unsalted butter (1 stick), softened, plus more for pan
2 cups/255 grams all-purpose flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
1/3 cup/70 grams granulated sugar
1/3 cup/75 grams light brown sugar
1 teaspoon vanilla extract
2 large eggs
3/4 cup/180 milliliters buttermilk
10 ounces/190 grams strawberries, hulled and sliced 1/4-inch thick
3 tablespoons demerara sugar, for sprinkling (you can use granulated sugar in a pinch)

Steps:

  • Heat oven to 350 degrees. Smear or brush a bit of butter onto the bottom of a 9-inch cake pan and line with parchment paper (either cut to fit the bottom, or leaving some hanging over the edges for easy removal).
  • Whisk flour, baking powder and salt together in a medium bowl.
  • In a stand mixer (or using an electric hand mixer and a large bowl), beat butter, granulated sugar, brown sugar and vanilla together on medium-high, periodically scraping down the sides of the bowl to make sure everything incorporates, until the mixture is pale, light, fluffy and creamy, about 5 minutes.
  • Add eggs, one at a time, beating to blend between additions. (This is a good time to scrape down the sides again.)

  • Using a spatula, gently fold in half the strawberries and transfer the batter to the prepared cake pan. Scatter with remaining strawberries and sprinkle with demerara sugar.
  • Bake until cake is puffed, deeply golden brown on the top and pulling away at the sides, 45 to 50 minutes. (It should spring back slightly when pressed in the center and appear fully baked where the strawberries meet the cake.)
  • Let cake cool completely before removing it from the pan (either by inverting or lifting with the parchment lining). The cake can be baked up to three days ahead and stored tightly wrapped at room temperature, or refrigerated.
