3-ounce package strawberry Jell-O mix
14-ounce package coconut flakes (sweetened or unsweetened)
14-ounce can sweetened condensed milk
Green food coloring

Steps:

  • Place all but 1/2 cup coconut in a large mixing bowl. Place the 1/3 cup coconut in a smaller bowl.
  • In the larger bowl, add the strawberry Jell-O powder, and all but about a tablespoon of sweetened condensed milk. Add the tablespoon of sweetened condensed milk to the smaller bowl.
  • Mix the strawberry mixture. Add a couple of drops of green food coloring to the smaller bowl and mix.
  • Take a scant tablespoon of the strawberry mixture and shape into strawberry shapes.
  • Take a tiny amount of the green coconut and press onto the end of each strawberry.
  • Store covered in the refrigerator.

2/3 cup unbleached all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon kosher salt (we use Diamond Crystal)
2/3 cup unsweetened coconut flakes, such as Bob's Red Mill
4 tablespoons unsalted butter (1/4 cup), softened
1/4 cup granulated sugar
1/4 cup light-brown sugar
1 teaspoon packed lemon zest, plus 1 tablespoon fresh juice
1 large egg, separated
1/8 teaspoon pure almond or vanilla extract
1/2 cup freeze-dried strawberries
1/3 cup sanding sugar, for rolling

Steps:

  • Preheat oven to 350°F. Whisk together flour, baking soda, salt, and coconut until well combined. In a large bowl, beat together butter, granulated and brown sugars, and zest. Beat in egg yolk and extract until light and creamy; stir in flour mixture until just combined. In a separate bowl, whisk egg white with lemon juice until foamy. Add to flour mixture and stir to combine. Refrigerate dough 30 minutes.
  • Meanwhile, place dried strawberries in a 1-quart resealable freezer bag and crush with a rolling pin or small skillet until finely ground (pass through a sieve, if desired, for finer crumbs). Toss 2 tablespoons ground strawberries with sanding sugar. Scoop dough into 6 equal portions with a 1/4-cup (2-ounce) scoop or measuring cup and roll in sanding-sugar mixture. Place on two parchment- or silicone- mat-lined baking sheets, about 3 inches apart. Lightly press down with palm of your hand to make 3-inch circles, each a scant 1/2 inch thick.
  • Bake, one sheet at a time (keeping second batch in refrigerator while first bakes), banging pans on oven racks a couple of times, until set and slightly darkened in color, 12 to 14 minutes. Let cool on baking sheets 5 minutes, then transfer to a wire rack and let cool about 30 minutes more. Serve, or store in an airtight container at room temperature up to 3 days.

  • Mix all the ingredients except the 3 ounce box of gelatin. Cover mixture and place in the refrigerator overnight. The next day, roll mixture into strawberry shapes.
  • Place the 3 ounce box of gelatin in a plate, and roll the shaped strawberries in the gelatin until coated. Place bits of mint leaves to create the stems; secure the stems with a piece of toothpick.

16 coconut biscuit cookies
3 tablespoons unsalted butter, melted
1 box cheesecake mix, prepared according to package instructgions
1 box strawberry jello, prepared according to package instructions
¼ cup sugar
2 tablespoons water
1 large egg white, room temperature
½ cup sugar
¼ cup water
2 tablespoons strawberry jam
1 teaspoon water
strawberry wafer cooky, finely crushed
freeze-dried strawberry, finely crushed
raspberry gummy candy, cut in half
toasted coconut flake, sweetened

Steps:

  • Make the cheesecake: Line an 8-inch (20 cm) square baking dish with parchment paper and grease with nonstick spray.
  • Add the cookies to the bowl of a food processor. Pulse until broken down into fine crumbs. Transfer to a medium bowl and add the melted butter. Stir until well combined and the consistency resembles wet sand.
  • Transfer the cookie crumbs to the prepared baking dish and pat down in an even layer. Set aside.
  • Prepare the cheesecake mix according to the package instructions, then spread the filling over the crust in an even layer. Chill in the refrigerator for at least 2 hours.
  • Prepare the strawberry jello mix according to the package instructions. Gently ladle half of the jello mixture on top of chilled cheesecake. Return to the fridge and let set until firm, about 90 minutes. Save the remaining jello for another use, if desired.
  • Make the meringue: In a small saucepan, combine the sugar and water. Cook over medium heat until the mixture reaches 240°F (115°C).
  • Meanwhile, add the egg white to a medium bowl and whip with an electric hand mixer until soft peaks form, about 2 minutes. With the mixer on medium speed, carefully and slowly drizzle in the hot sugar syrup. Increase the mixer speed to high and whip until stiff peaks form. Let cool slightly, then transfer to a piping bag fitted with a piping tip. Set aside until ready to use.
  • Make the candy shards: Line a baking sheet with parchment paper. Add the sugar and water to a small saucepan. Heat over medium-high heat until the mixture reaches 295-300°F (145-150°C). Pour the mixture onto the prepared baking sheet and carefully tilt the pan spread in a thin layer. Don't touch the candy, it will be hot! Let sit until the candy cools and hardens, about 2 minutes. Use a meat mallet or spoon to crack the candy into small pieces.
  • Make the coulis: In a small bowl, stir together the jam and water. Strain through a fine-mesh sieve to remove any clumps.
  • Assemble the cheesecake: Use a pastry brush to lightly brush coulis across each plate. Set a thin slice of cheesecake in the center. Top with crushed wafer cookies, crushed freeze-dried strawberries, raspberry candy, candy shards, small mounds of meringue, and toasted coconut flakes. Sprinkle more garnishes on the plate.
  • Serve immediately.
  • Enjoy!

Red colored sugar
Green candied cherries or green confectioners' icing

Steps:

  • In a large skillet, combine the dates, coconut, sugar, butter, egg and salt. Cook and stir over medium heat until mixture thickens and reaches 160° or is thick enough to coat the back of a metal spoon, about 5 minutes. Remove from the heat; stir in vanilla, cereal and walnuts. Cool for 10 minutes., With slightly moistened fingers, shape tablespoonfuls into strawberry shapes; roll in red sugar. Place on waxed paper-lined baking sheets. Decorate tops with pieces of green candied cherries or pipe leaves on strawberry tops with green icing.

1 cup regular rolled oats

1 egg
¼ cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine the strawberries with 1/4 cup sugar in a medium bowl. Toss gently to blend, and set aside.
  • Combine the flour, baking soda, and cinnamon in a large bowl. Stir in the rolled oats and blend evenly; set aside.
  • Beat the butter, brown sugar, and white sugar in the large mixing bowl of an electric mixer at medium speed until fluffy. Add the egg, milk, and vanilla, and continue beating until smooth. Stir in the flour mixture, and mix well to blend. Combine the strawberries with the flour mixture, and stir to blend. Drop by teaspoonfuls onto ungreased baking sheets.
