Strawberry Custard Tarts image

Strawberry custard tarts with the sweetest and tastiest strawberries I've had in such a long time.

Provided by Delicious Everyday

Categories     Dessert

Time 1h15m

Number Of Ingredients 15

PASTRY:
250 g plain flour (2 cups, all purpose)
180 g cold butter (3/4 cup plus 1 tbs)
1 egg yolk
2 tbs of chilled water
VANILLA PASTRY CREAM : (CREAM PATISSERIE)
6 egg yolks
150 g caster sugar (2/3 cup, superfine)
70 g plain flour (1/2 cup)
2 cups milk
1 vanilla bean (seeds scraped)
STRAWBERRY TOPPING:
3 cups of strawberries (sliced)
2 tbs seedless strawberry jam
1 tbs boiling water

Steps:

  • Begin by making the pastry. Place the flour and butter in a food processor and process until the mixture resembles bread crumbs. Add the egg yolk and water and pulse until the mixture begins to come together to form a ball. Turn the mixture out onto plastic wrap and shape into a disc. Refrigerate for 30 minutes.
  • Remove the pastry from the refrigerator and roll out the pastry on a lightly floured bench or silicone baking mat until approximately 5mm thick. Line eight 9.5cm (4 inch) [amazon_link id="B00022447G" target="_blank" ]loose bottom tart tins[/amazon_link] with the pastry, making sure to press into the sides, and trim the excess. Prick all over the base of each tart with a fork. Refrigerate for 15 minutes.
  • Preheat the oven to 180 celsius (355 Fahrenheit) and line the tarts with baking paper or foil and fill with baking weights or beans. Bake for 10 minutes before removing the baking paper and weights and baking for a further 5 to 7 minutes or until the base is dry and lightly golden. Set aside to cool.
  • Place the milk and vanilla seeds and pod in [amazon_link id="B0030EG30O" target="_blank" ]small saucepan[/amazon_link] over a medium high heat and bring to just below boiling point. Turn the heat off and leave to infuse for 30 minutes. To make the vanilla pastry cream filling, whisk the egg yolks, sugar and flour in a bowl until well combined. Remove the vanilla pod and return the pan to a medium high heat and just before it starts to boil remove the saucepan from the heat. Gradually whisk the hot milk into the egg yolk mixture until all the milk has been added and the mixture is well combined. By gradually adding the milk this will minimise the risk of the eggs curdling. Return the mixture to the saucepan, and cook, whisking constantly, over medium heat until thickened and the mixture is thick and glossy. Strain through a fine mesh sieve into a bowl (this step is optional but will help ensure a smooth custard) and cover with plastic wrap to prevent skin forming and refrigerate until cold.
  • Just before serving fill each tart with custard and top with the sliced strawberries. Combine the jam and boiling water in a small bowl and use a pastry brush to brush the jam mixture onto the strawberries.

MOM'S RHUBARB CUSTARD TORTE

Mom's Rhubarb Custard Torte image

My mother made this often while I was growing up. She's been gone for 13 years, but I still make this at least once a year to rave reviews. No one has ever had anything like this but anyone who likes rhubarb loves it. It makes a lot, but when my husband takes this to work, I only get the empty pan back! Prep time is based on having to cut your rhubarb. If already cut, reduce to 30 minutes.

STRAWBERRY TORTE

Strawberry Torte image

This beautiful swirled torte is almost too pretty to eat. Almost.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 9

Unsalted butter, for pan
8 extra-large eggs, room temperature, separated
1/2 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup cake flour (not self-rising)
2 teaspoons sifted baking powder
1 pint heavy cream
2 tablespoons confectioners' sugar, plus more for work towel
1 quart strawberries, washed, dried, and hulls removed

Steps:

  • Preheat oven to 350 degrees. Butter and line a rimmed 15-by-10-by-1-inch jelly roll pan with parchment paper; set aside.
  • In a large bowl, beat egg yolks and sugar together until light in color, about 1 minute; stir in 1/2 teaspoon vanilla. Add cake flour and baking powder; stir until well combined.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites until stiff peaks form. Gently fold into flour mixture.
  • Pour cake batter in prepared pan and spread evenly with a spatula or the back of a spoon. Transfer baking sheet to oven and bake until cake springs back when touched, about 20 minutes.
  • Meanwhile, set 6 strawberries aside for garnish. Thinly slice remaining strawberries. Place heavy cream in the bowl of an electric mixer fitted with the paddle attachment; beat on medium speed. Slowly add remaining teaspoon vanilla and 2 tablespoons confectioners' sugar. Continue beating until soft peaks form. Set half of the whipped cream aside. Gently fold sliced strawberries into remaining half; set aside.
  • Lay a clean kitchen towel flat on a work surface with one of the short ends facing you. Generously sprinkle dish towel with confectioners' sugar. Flip cake onto towel, remove baking sheet, and peel off parchment paper. Using the dish towel, roll cake away from you; let cool.
  • Unroll cake. Evenly spread strawberry whipped-cream mixture over surface of the cake and re-roll. Transfer cake to a serving plate and evenly spread top and sides of cake with reserved whipped cream. Cut reserved whole strawberries in half lengthwise and place on top of cake for garnish.

LEMON-CURD STRAWBERRY TART

Lemon-Curd Strawberry Tart image

Categories     Dairy     Dessert     Bake     Easter     Strawberry     Lemon     Gourmet

Number Of Ingredients 15

For lemon curd
1/2 cup sugar
5 tablespoons unsalted butter, cut into bits
2 large eggs, beaten lightly
1/4 cup fresh lemon juice
2 tablespoons freshly grated lemon zest
For shell
1 1/2 cups all-purpose flour
6 tablespoons confectioners' sugar
1 stick (1/2 cup) cold unsalted butter, cut into bits
3 tablespoons sour cream
1 large egg yolk
1/8 teaspoon vanilla
1 1/2 pints small strawberries (about 18), hulled
1/4 cup heavy cream

Steps:

  • Make lemon curd:
  • In a metal bowl set over a saucepan of simmering water cook sugar, butter, eggs, lemon juice, and zest, whisking frequently, until curd is thick enough to hold marks of whisk and the first bubble appears on surface, 12 to 15 minutes. Strain curd through a sieve into a bowl and cool. Chill curd, covered, until ready to use. Lemon curd may be made 1 week in advance and kept covered and chilled.
  • Make shell:
  • In a food processor pulse flour, confectioners' sugar, butter, and a pinch of salt until mixture resembles coarse meal. In a small bowl stir together sour cream, egg yolk, and vanilla until combined well and add to flour mixture. Process mixture until a ball of dough is formed. Shape dough into a thick disk and chill, wrapped in plastic wrap, at least 30 minutes.
  • Preheat oven to 375°F.
  • On a floured surface roll out dough 3/8 inch thick and cut on an 11-inch circle. Transfer dough with 2 spatulas to baking sheet. Crimp edge decoratively and chill dough 20 minutes.
  • Prick shell all over with a fork and bake in middle of oven until pale golden, 15 to 17 minutes. Cool shell completely on baking sheet on rack.
  • Assemble tart:
  • Spread lemon curd evenly on shell, leaving a 1-inch border, and arrange strawberries on it. The tart may be assembled up to this point 3 hours in advance and kept covered.
  • Whip cream and spoon into a pastry bag fitted with a large star tip. Pipe rosettes of cream between strawberries and transfer tart to platter.

STRAWBERRY TORTE

This luscious dessert is perfect for the beginner and looks like a masterpiece!! As a light dessert, it's ideal after a big meal! This recipe is from In Good Taste by Elms College.

Provided by sharflan

Categories     Dessert

Time 1h40m

Yield 1 torte, 10-12 serving(s)

Number Of Ingredients 13

1/2 cup butter
1/2 cup sugar
4 egg yolks
1 cup flour, all-purpose
1/3 cup milk
1/8 teaspoon salt
2 teaspoons baking powder
1 teaspoon vanilla
4 egg whites
1 cup sugar
walnuts
2 cups whipping cream, sweeten to taste
1 quart strawberry, cleaned and hulled

Steps:

  • Preheat the oven to 325°F.
  • *Prepare an 8" or 9" cake pan lining it with parchment paper (or grease the pan).
  • Cream the butter and the 1/2 cup of sugar.
  • Add the egg yolks and vanilla, mixing well.
  • In a seperate bowl, mix together the flour, salt and baking powder.
  • Blend the dry ingredients and milk alternately into the butter mixture.
  • Pour the batter into the prepared pan and set aside.
  • With clean beaters, whip the egg whites, adding the 1 cup of sugar a little at a time, until stiff peaks form.
  • Spoon the egg whites over the top of the unbaked batter and sprinkle with walnuts (whole or pieces).
  • Bake at 325F about 40 minutes or until cake tests done (cooking time will depend on your oven and pan size).
  • *Using the parchment paper will allow you to easily lift the torte from the pan to test for doneness by piercing through the bottom of the cake with a toothpick.
  • Cool the torte completely.
  • Whip the cream and sweeten to taste.
  • *You can substitute the cream with Cool Whip (or other) to lessen the calories and fat.
  • Top off the torte with the whipped cream just before serving, adding whole (or cut) strawberries as your final layer.
  • This torte should be made and enjoyed on the same day as the cream will soften the crispy meringue layer - still good but not the same!
