Passion Strawberry Fruit Leather - Dehydrator Roll-Ups image

Once you know how to plug your dehydrator in, you're limited only by your imagination regarding how many different "recipes" you can come up with for fruit leather. These simple snacks are healthy and often more convenient to eat than fresh fruit. I ziplock a batch and take it with me. Either pureed apples or applesauce makes a great inexpensive texturizer with a rather mild flavor, so I often flesh out whatever the main fruit flavor is with it. This time it's strawberries! (My friend Freya arrived on my doorstep last weekend with a HUUUUGE box of the most beautiful berries I've ever seen, so rather than to lose the last of them to age, I've gone the dehydrating route.)

2 cups washed cored and roughly chopped fresh strawberries
2 tablespoons passionfruit syrup (juice or flavoring)
3/4 cup applesauce (I use non-sweetened)
nonstick cooking spray

Steps:

  • Purée chopped strawberries with the applesauce and passionfruit syrup.
  • Spray the fruit leather sheet of your dehydrator (the one without holes) with a light coating of non-stick cooking spray.
  • Pour the puréed fruit carefully into the tray set into the bottom section of your dehydrator. Dehydrate at full power for up to 8 hours, depending on the power of your machine, checking periodically toward the end of that time to see that there aren't any wet or sticky spots.
  • When done, cool for a couple of minutes and carefully slide a butter knife or thin spatula under the leather.
  • Cut into 2-4 pieces and roll into cylinders. Store in zip lock baggies.

3 cups strawberry, hulled
2 tablespoons honey

Steps:

  • Place strawberries and honey in a food processor or blender and puree into a thick, smooth sauce.
  • Pour the sauce onto a baking tray lined with a silicone baking mat and smooth into a thin, even layer.
  • Bake for 6 hours at 175ºF (80ºC), until entire surface is just dry to the touch.
  • Once cool, turn the baking mat onto a cutting board and remove the silicone baking mat.
  • Roll the fruit sheet and cut into 1-inch (2 cm) pieces.
  • NOTE: If your fruit sheet comes out a bit too dry and you worry that rolling will cause it to crack, simply cover the surface with a few damp paper towels for a few minutes and try again. The moisture will rehydrate your fruit sheet just enough to be a flexible consistency.

⅛ cup lime juice
½ cup lemon juice
¾ cup rum

  • In a blender, combine ice, sugar and strawberries. Pour in lime juice, lemon juice, rum and lemon-lime soda. Blend until smooth. Pour into glasses and serve.

3 cups peaches, chopped finely
3 cups nectarines, chopped finely
3 cups plums, chopped finely
14 tablespoons sugar

Steps:

  • * For each cup of fruit you will need 1-1/2 tablespoons of sugar.
  • Chop peaches, nectarines or plums very fine, being careful to reserve the juice. Place fruit and its juices in saucepan and bring to a boil.
  • Boil until candy thermometer reads 180 degrees.
  • Cool slightly.
  • Put into blender and mix until smooth.
  • Return to heat and cook until the mixture has the consistency of a thick paste and is reduced by half.
  • Spread fruit 1/4-inch thick on plastic-wrapped trays or cookie sheets.
  • Cover pans with a cheesecloth screen, taking care to keep the cheesecloth from touching fruit. Place in direct sunlight for 12 to 24 hours until dry (bring in at nighttime). You can also bake in a 250-degree oven for about 4 hours.
  • Put the fruit on a lightly greased cookie sheet or use foil to line tray.
  • Fruit rollups are done when edges pull back from plastic and center is not sticky when cooled.
  • Ten cups of fruit will cover a 12 x 17-inch tray.

3 tablespoons raw honey (real)

Steps:

  • Puree all ingredients in food processor.
  • Line cookie sheet with plastic wrap. Parchment does not work roll-ups stick. Wax paper is not a good option as wax will melt. The only other option is if you have silicone liners for your cookie sheets.
  • Bake on 170 degrees for 6-10 hours. Until they feel tacky.

  • Place the trimmed strawberries in a blender or food processor and puree them for a minute or so until smooth. You don’t want any strawberry chunks in the mixture.
  • Transfer the strawberry puree to a saucepan and add the lemon juice and sugar, if using. Turn the heat to medium high, and cook the mixture for about 10 minutes, stirring frequently, until the mixture is thick and jammy. The goal here is to cook out much of the moisture.
  • Preheat the oven to 170 degrees F, or as low as your oven will go, making sure it’s less than 200 degrees at the highest.
  • Spread the strawberry jam into a rectangle shape onto a baking pan lined with a silpat or parchment paper. You may use an offset spatula or a regular spatula to help spread the mixture as evenly as possible, until the rectangle is about 1/8 inch thick. Keep in mind the fruit leather will lose some of its thickness in the oven as it dehydrates, so make sure that none of the jam is so thin that you can see through it as you spread.
