Strawberry Pasta Salad image

Bow tie pasta with strawberries makes a refreshing salad, especially with a little chopped mint. I multiply it for brunches, potlucks, even tailgates. -Barbara Lento, Houston, Pennsylvania

Number Of Ingredients 12

1/2 pound uncooked mini farfalle or other bow tie pasta
1/2 cup lemon yogurt
1/4 cup canola oil
2 tablespoons lemon juice
1/2 teaspoon sea salt
1/8 teaspoon cayenne pepper
1 green onion, thinly sliced
2 tablespoons crystallized ginger, finely chopped
1 tablespoon pickled jalapeno slices, finely chopped
1 pound fresh strawberries, quartered
1/4 cup slivered almonds, toasted
Toasted sweetened shredded coconut and small fresh mint leaves, optional

Steps:

  • Cook pasta according to package directions. Drain pasta; rinse with cold water and drain well., In a large bowl, whisk yogurt, oil, lemon juice, salt and cayenne until blended; stir in green onion, ginger and jalapeno. Add pasta and toss to coat., Refrigerate, covered, until serving. Stir in strawberries and sprinkle with almonds just before serving. If desired, sprinkle with coconut and mint.

¾ cup olive oil
¼ cup red wine vinegar
¼ cup honey
¼ cup white sugar
1 tablespoon Dijon mustard
salt and pepper to taste
1 pint strawberries, sliced
1 (8 ounce) bag mixed baby greens
1 cup sweetened dried cranberries
1 small red onion, sliced thin
¼ cup crumbled feta cheese

Steps:

  • Whisk the olive oil, vinegar, honey, sugar, mustard, salt, and pepper together in a bowl to make the dressing.
  • Toss the strawberries, baby greens, cranberries, and onion together in a bowl; top with the feta cheese. Drizzle the dressing over the salad to serve.

This Strawberry Fields Pasta Salad is the perfect dish to bring to your next picnic or potluck. Loaded with fresh flavors, it is easy to make and it's sure to be a hit with everyone!

16 ounces bow tie pasta
1 pound strawberries (hulled, and sliced)
4 cups baby spinach
1½ cups red grapes (sliced in half)
1 small red onion (sliced thin)
15 ounces mandarin oranges (drained)
8 ounces feta (crumbled)
12 ounces poppy seed dressing (* I used Bitten Lemon flavor)
½ cup pecans
salt and pepper to taste

Steps:

  • Bring a pot of water to a boil. Add the pasta and cook according to the package directions. Drain and rinse pasta with cold water; set aside.
  • In a large bowl, combine cooked pasta, strawberries, grapes, red onion, spinach, mandarin oranges, pecans, and feta with the lemon poppy seed dressing. Season with salt & pepper to taste.
  • Toss salad to combine, and cover. Place bowl in the refrigerator to allow the flavors to meld.
  • Enjoy salad chilled!

1 head red leaf lettuce
1 head romaine lettuce
6 ounces balsamic vinaigrette dressing
2 ounces shredded parmesan cheese
cracked pepper
1 cup chopped pecans
1/4 cup dark brown sugar
1 tablespoon water
12 strawberries
1/4 cup balsamic vinegar
1/4 cup granulated sugar
2 tablespoons water

Steps:

  • Mix chopped pecans with brown sugar and water and heat; set aside.
  • Slice strawberries into 1/4-inch slices.
  • Mix balsamic vinegar, sugar and water and coat strawberries; set aside.
  • Chop red leaf and romaine lettuce into 2-inch pieces. Toss lettuce, Parmesan cheese, balsamic vinaigrette and Glazed Pecans.
  • Strain strawberries from glaze and place on top of salad. Top with cracked pepper.

1 head red leaf lettuce
1 head romaine lettuce
6 ounces balsamic vinaigrette (your favorite)
2 ounces shredded parmesan cheese
cracked pepper, to taste
1 cup chopped pecans
1/4 cup dark brown sugar
1 tablespoon water
12 strawberries
1/4 cup balsamic vinegar
1/4 cup sugar
2 tablespoons water

Steps:

  • Slice strawberries into ¼-inch slices and mix with balsamic vinegar, sugar and water to coat strawberries. Set aside to marinate.
  • Mix chopped pecans with brown sugar and water in a pan and saute until glazed. (Be careful not to overcook). Set aside.
  • Chop red leaf and Romaine lettuce into 2-inch pieces.
  • Toss lettuce, parmesan cheese, balsamic vinaigrette, and glazed pecans together and place in salad bowls.
  • Strain strawberries from glaze and arrange on top of salad.
  • Top with cracked pepper.

¾ cup creamy poppyseed dressing
¾ cup light mayonnaise
4 green onions (sliced)
1 (11 ounce) can mandarin oranges (drained)
2 cups fresh strawberries (sliced)

Steps:

  • Cook pasta as directed on package; drain and set aside until cool.
  • Mix poppyseed dressing and mayonnaise in a large mixing bowl. Add in cooled pasta and onions and mix gently until evenly coated.

  • Fill large pot of water 2/3 of the way full and add salt. Bring the water to a boil and then carefully add in the pasta. Cook the pasta in boiling water until al dente - springy & chewy & not mushy. It should take about 10 minutes. Make sure to stir often. Gluten free pasta likes to clump so you really need to keep it moving to prevent it from sticking together.
  • In a small mixing bowl add the 1/3 cup olive oil, balsamic vinegar, maple, salt and pepper. Whisk to combine. Add the strawberries and toss in the oil mixture. Place the bowl in the fridge until ready to use.
  • When the pasta is done, drain the boiling water and rinse under cold water to cool it down and keep it from cooking. Drain well.
  • Add the pasta to a large bowl and pour the oil/strawberry mixture over the top. Add the salad greens, walnuts and feta and toss well to combine and coat everything in the dressing. Add more salt, pepper and balsamic vinegar as needed.
