1 cup butter (softened)
2 cups sugar
3 eggs
4 Tbsp lemon juice (divided)
zest of 1 lemon
2 1/2 cups flour (divided)
1/2 tsp baking soda
1/2 tsp salt
1 cup sour cream or plain Greek yogurt
1 1/2 cups strawberries (diced)
1 cup powdered sugar
lemon juice

Steps:

  • Preheat oven to 325 degrees F. Grease and flour a 10 inch bundt pan
  • Mix together 2 1/4 cups flour, baking soda and salt, set aside.
  • Cream together butter and sugar until light and fluffy
  • Beat in eggs, one at a time. Add in 2 Tbsp lemon juice.
  • Alternate mixing in flour mixture and sour cream or yogurt into butter and sugar mixture until incorporated.
  • Coat strawberries in remaining flour and gently fold into batter.
  • Pour into prepared bundt pan and bake for 60-70 minutes or until a toothpick comes out clean.
  • Let cake cool for 30 minutes and then remove from pan and allow to cool on a baking rack. Allow to cool completely before glazing.
  • Mix together powdered sugar and enough lemon juice to get a good glazing consistency. use a fork or spoon to drizzle glaze over cake or use a piping bag to pipe it on.

Steps:

  • Preheat oven to 375°F degrees. Grease and flour a 10-inch bundt pan. Whisk together 2 1/4 cups flour, baking soda and salt. Then add in lemon zest and set aside.
  • With an electric mixer, cream the butter and sugar until light and fluffy. Next beat in eggs, one at a time. Then stir in 2 Tablespoons lemon juice. Alternate mixing the flour mixture and the sour cream into the butter/sugar mixture until all is incorporated.
  • Mix diced strawberries with remaining 1/4 cup flour. Then gently fold into the batter.
  • Pour batter into bundt pan and reduce oven temperature to 325°F. Bake for 60 to 65 minutes, or until toothpick comes out clean. Allow to cool for 20-30 minutes in the pan and then turn out onto a wire rack and cool completely.
  • Once cake has completely cooled, mix together powdered sugar and 2 Tablespoons of lemon juice.
  • Drizzle glaze on top of cake with a spoon. Then slice and serve.

1 teaspoon ground cinnamon
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more, for the pan
2 cups all-purpose flour

Steps:

  • Put the flour, brown sugar, cinnamon and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the strawberry jam on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.

Combine flour and salt; add to yolk mixture., Beat egg whites on medium speed until soft peaks form. Steps:

  • Prepare strawberry purée: In a blender, combine strawberries and jam. Make a paste of cornstarch and vanilla, and add to blender. Purée until smooth.Set aside.
  • Prepare cake: Heat oven to 375 degrees. Oil a 9-inch springform pan and set aside. In a large bowl, combine sugar, flour, baking powder and baking soda. Sprinkle in butter cubes and rub them in by hand until mixture resembles large coarse crumbs. Remove 1/2 cup and set it aside. To large bowl, add sour cream,egg and vanilla. Mix well.
  • Using a little over half the cake batter, drop dollops of batter into pan. Pat batter across bottom of pan and about 1 inch up sides; mixture will be very sticky and somewhat uneven.   • Prepare crumble topping: In a medium bowl, combine reserved 1/2 cup dough and Demerara sugar. Stir with a fork to mix. Sprinkle evenly over cake.

  • Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan., In a small bowl, mix pecans and wafer crumbs; stir in butter. 1 cup caster sugar
1 cup sour cream
1/2 cup neutral oil, we used rice bran oil
2 teaspoons vanilla extract
2 cups (260g / 9 1/4 ounces) plain (all-purpose) flour

1/4 teaspoon salt
350g (12 ounces) fresh strawberries weighed after taking the tops off
chop half of the strawberries into small pieces and halve the other strawberries
2 teaspoons icing sugar for dusting (optional)

  • preheat oven to 190c (375f) on bake, not fan
  • lightly grease a 23cm (9 inch) springform pan and line the base with baking (parchment) paper
  • in a large mixing bowl, using a electric had mixer or stand mixer beat together the eggs and sugar for 3 minutes on high speed till light in colour and thick
  • add the sour cream, oil and vanilla and beat on low till just combined
  • in a small bowl whisk together the flour, baking powder and salt
  • add 1/3 of the flour mixture to the batter and mix till just incorporated, then repeat with the other 2/3's (it's important not to over-mix)
  • pour half of the batter into the pan and spread the batter
  • top with the chopped strawberries
  • pour the remaining batter over the chopped strawberries
  • place halved strawberries onto the batter pressing them down just slightly into the batter
  • bake on middle shelf for 45-50 minutes or until a skewer comes away clean
  • allow the cake to rest for 10 minutes and gently run a knife around the side of the tin to release any stuck jammy bits
  • remove the outside ring and allow the cake to cool
  • transfer cake to a serving plate and dust with icing sugar

Steps:

  • Heat oven to 350°.
  • Combine butter and sugar in large bowl.
  • Beat at medium speed, scraping bowl often, until creamy.
  • Add egg whites and continue beating until light and fluffy.
  • Stir in sour cream and vanilla.
  • Reduce speed to low; add flour, baking powder, salt and milk.

½ (scant) cup (60 g) all-purpose flour, plus more for pan
⅓ (heaping) cup (60 g) glutinous sweet rice flour (such as Koda Farms Blue Star Mochiko)

½ tsp. baking soda
½ tsp. kosher salt
½ cup (1 stick) unsalted butter, room temperature
⅔ (scant) cup (130 g) granulated sugar
2 large eggs, room temperature

Steps:

  • Place a rack in center of oven; preheat to 325°. Lightly coat 20 molds of 2 brownie Bundt pans or the cups of a standard 12-cup muffin pan or 2 standard 6-cup muffin pans with nonstick spray; lightly dust with flour, tapping out excess. Whisk rice flour, baking powder, baking soda, kosher salt, and ½ cup (scant; 60 g) all-purpose flour in a medium bowl to combine.
  • Beat butter in the bowl of a stand mixer fitted with the paddle attachment on medium speed just until smooth. Add granulated sugar and beat until pale and creamy, about 3 minutes. Scrape down sides of bowl with a rubber spatula. With motor running, add eggs one at a time, beating to incorporate and scraping down sides of bowl after each addition. Add vanilla and beat just to combine. (Mixture may look slightly curdled at this point, but don't worry, it will come together in the end.)
  • Using a fine-mesh sieve, sift in half of dry ingredients and beat on low speed just until a few dry patches remain. Scrape down sides of bowl and add sour cream and milk; beat just until incorporated. Sift in remaining dry ingredients and beat until combined (be careful not to overmix).
  • Carefully divide batter among prepared pans (about 2 Tbsp. per mold for Bundt pans or about 3 Tbsp. per cup for muffin pan). Bake, rotating pans halfway through, until a tester inserted into the center of a cake comes out clean, 14-16 minutes for Bundts, 17-20 minutes for muffins. Let cakes cool in pan 10 minutes, then gently loosen cakes with a small offset spatula and turn out onto wire racks; let cool completely.
  • Dip tops of cakes in glaze of choice; set back on racks, letting excess glaze drip down sides (for easy cleanup, lay a sheet of parchment paper underneath racks to catch any drips). If you want a more vibrant look, double-glaze cakes. Sprinkle cakes with toppings as desired (e.g., a pinch of sea salt on Milk Tea Glaze, coconut or sesame seeds on Matcha Glaze, and lemon zest on Strawberry Jam Glaze). Do ahead: Like doughnuts, gem cakes are best enjoyed the day they are baked but can be made 2 days ahead. Store airtight at room temperature.

Steps:

  • Place egg whites in a large mixing bowl; let stand at room temperature for 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat yolks in bowl until slightly thickened. Gradually add 3/4 cup white sugar, beating until thick and lemon-colored. Beat in lemon juice, vegetable oil, and water.
  • Mix flour and salt in a bowl; add to yolk mixture and stir to incorporate into batter.
  • Beat egg whites using an electric mixer on medium speed until soft peaks form.   • Run a knife around the sides and center tube of the pan; remove cake and slice into 3 horizontal layers. This delicate cake is inspired by fraisier, a French cake made from layers of sponge, strawberries and cream. Fraisier cakes are elaborately constructed and typically combine several components to make the cream filling, but this strawberry cake is lighter, looser and much more casual. To avoid squishing the cake when slicing, use a serrated knife in long, even strokes to cut clean slices. (Watch Claire make this cake and two others on YouTube.)

1 1/2 pounds fresh strawberries, hulled
1/2 cup/100 grams granulated sugar
1 cup/240 grams heavy cream, chilled
1 cup/240 grams crème fraîche, mascarpone or sour cream, chilled
Pinch of kosher salt
1 Sponge Cake recipe, baked in a 9-inch springform pan and cooled

Steps:

  • Fill a small saucepan with about 1 inch of water and set over medium heat until the water steams.
  • Meanwhile, coarsely chop about a quarter of the strawberries and combine in a medium heatproof bowl with the sugar. Cover the bowl tightly and set it over the saucepan. Reduce the heat if necessary to keep the water just below a simmer and allow the berries to sit, swirling the bowl once or twice to dissolve any stubborn sugar clumps, until they've released all their juices, are mushy, and swim in a translucent red liquid, 35 to 45 minutes. Remove the bowl from the heat, uncover and strain through a fine-mesh strainer. (You should have 1/2 to 3/4 cup of strawberry syrup.) The mushy berries will have given off their color and flavor, and even though you won't use them in the cake, they're still tasty. Reserve the berries for spooning over pancakes or yogurt.
  • In a separate medium bowl, combine the heavy cream, crème fraîche and salt. Whisk the mixture vigorously by hand, or beat with a hand mixer on medium-high, until thick, light and holding a medium peak. Chill the bowl of whipped cream. Thinly slice the remaining raw strawberries lengthwise.
  • Invert the sponge cake on a flat serving plate or cake stand. Holding a long serrated knife horizontally and parallel to the work surface, use it to lightly score all around the side of the cake at the midway point. Then, using long, even strokes and still holding the knife parallel to the surface, slice clean through the cake, using the score marks as a guide, to cut it into two even layers. Set the top layer aside.
  • Use a pastry brush to dab several tablespoons of the strawberry syrup across the bottom layer, lightly soaking the entire surface. Pull the bowl of cream from the refrigerator and dollop about half of it across the soaked layer, then spread in an even layer all the way to the edges. Arrange half of the sliced strawberries on top of the cream, then place the second cake layer on top of the first, cut side up. Lightly soak the top layer of cake with the strawberry syrup, reserving any remaining syrup for serving. Spread the remaining cream on top of the cake, then pile the remaining sliced strawberries over top. (If not serving immediately, cover loosely and refrigerate until ready to serve.)
  • Slice the cake with a serrated knife and serve. Drizzle the slices with any remaining strawberry syrup. The cake is best served the day it's made, but will keep, covered and chilled, for up to 3 days.
