NORWEGIAN KRUMKAKE
If you like a mildly flavorful and crispy wafer-like cookie, this is it! Other flavorings can be added in addition to or instead of vanilla. You can even use this recipe to make your own ice cream cones. Easy and quick! Pipe them with whipped cream or dip in melted chocolate.

Steps:
- Heat krumkake iron on stove over medium heat. You can also use an electric krumkake or pizzelle iron.
- Cream together the butter and sugar in a bowl. Add the eggs, one at a time, and mix well using a spoon. Pour in the milk, flour, vanilla, and butter flavoring; mix well.
- Place a teaspoon of the batter on the preheated iron, and press together. Cook until browned, about 30 seconds per side, depending on the heat. Remove from the iron and quickly roll up around a stick or around a cone before they harden.

- At least 1 day before serving, proceed through Step 3. Line a colander and a medium-size strainer with a sturdy paper towel; set each in a bowl.
- Pulse strawberries and granulated sugar in food processor until coarsely chopped. Scrape into colander, top with a paper towel and refrigerate overnight to drain well (this is important). Clean processor.
- Put ricotta, cream cheese and confectioners' sugar in processor; pulse until smooth. Transfer to strainer, cover with a paper towel and refrigerate overnight.
- Just before serving: Prop cones upright in tall glasses partially filled with granulated sugar to support cones. Fold drained berries and 1/4 teaspoons almond extract into ricotta mixture. Spoon into a gallon-size ziptop bag. Cut 1/2 inches off a corner; pipe filling into cones and garnish.
STRAWBERRY CHEESECAKE CHURRO CANNOLIS RECIPE

- Vegetable oil for frying Fold a 10"x10" sheet of aluminum foil in half, and then in half again. Then fold it over on itself in the other direction. Roll the foil into a small pipe/cigar shape, to form a cannoli mold. Repeat six times. Wrap a wonton wrapper around the mold, sealing it with a dab of water. Repeat six times. Heat vegetable oil in a pot over medium heat, until it reaches 325*F. Fry the cannoli shells until golden, about a minute. Allow them to cool, and pull them off the molds. Combine the cinnamon and sugar and roll the shells in them. Repeat, creating another six shells. Mash the strawberries until a puree forms. Add the sugar, vanilla, cream cheese and lemon zest and combine completely. Add in the whipped cream, folding it in gently. Spoon the filling into a piping bag fitted with a star tip, and pipe the filling into the shells.

- For cannoli cream, in a medium bowl, stir together ricotta cheese, sugar, and vanilla.
- In a small chilled bowl, beat the whipping cream with an electric mixer on medium speed until soft peaks form (do not over-beat.)
- By hand, gently stir the whipped cream and about half of the chocolate pieces into the ricotta mixture. (If desired, mixture can be made up to 2 days ahead; refrigerate, covered.).
- To serve, divide strawberries among 8 dessert dishes.
- Spoon cannoli cream over the berries.
- Sprinkle with remaining chocolate pieces.

ORANGE SPICED KRUMKAKE

- In a medium bowl, cream together the butter, sugar, orange peel and eggs. Sift together the flour, cloves and cardamom. Add the dry ingredients to the creamed mixture alternately with the milk. Mix until batter is completely smooth.
- Grease the krumkake iron with oil or vegetable spray. Heat iron over medium low heat. You only need to grease the iron once.
- Place one tablespoon of batter at a time onto the center of the iron, close, and hold firmly. Cook for 15 to 20 seconds, turning iron over halfway through. Remove krumkake from iron and roll into a cone. Repeat with the rest of the batter.
