INDIVIDUAL STRAWBERRY TRIFLES

Individual Strawberry Trifles image

Provided by Giada De Laurentiis

Categories     dessert

Time 25m

Yield 2 servings

Number Of Ingredients 9

1 quart fresh strawberries, halved
1/3 cup aged balsamic vinegar
3 cups heavy cream
2 teaspoons vanilla extract
1/4 cup confectioners' sugar
1 (1 pound) fresh pound cake
1/3 cup amaretto liqueur
2 amaretto cookies, for garnish
Demerara sugar, for garnish

Steps:

  • For the marinated strawberries: In a small, shallow casserole dish, toss the strawberries with the vinegar and let stand at room temperature for 15 to 20 minutes. After the strawberries have marinated, check for sweetness, adding sugar if desired.
  • For the whipped cream: In a large bowl, using an electric mixer, whisk the cream to soft peaks. Add the vanilla and confectioners' sugar. Whip to stiff peaks. Set aside.
  • For the trifle: Using a serrated knife, slice the pound cake lengthwise into 1/2-inch-thick slices. You will only need four slices. Using a 2-inch cookie cutter, cut out circles from each cake slice. Line up two highball glasses and place one cake circle in the bottom of each. Brush the cakes with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Using a different tablespoon, add a large dollop of whipped cream and spread evenly. Add a second layer of cake, pressing down lightly. Brush with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Top with a large dollop of whipped cream, spreading evenly. Use the remaining cake, cream and strawberries to create a more humble trifle dish.
  • Cover the trifles with plastic wrap and refrigerate for impromptu indulgence, keeping in mind that it will store for up to 2 days.
  • To serve, remove and discard the plastic wrap. Grate some amaretto cookie on top of the trifles and sprinkle with Demerara sugar.

ETON MESS TRIFLE

Eton mess trifle image

Layer a quintessentially British pudding with sherry-steeped strawberries, meringue and cream then top with flaked almonds

Provided by Cassie Best

Categories     Dessert, Dinner

Time 40m

Number Of Ingredients 12

1 small jam-filled Swiss roll , sliced
450g strawberry , hulled
seeds from 1 split vanilla pod (save the pod for the coulis, below)
2 tbsp icing sugar
500ml double cream
150ml pot natural full-fat yogurt
16 ready-made mini meringues (or use 8 larger meringues broken into pieces)
1 tbsp toasted flaked almond
140g strawberry , chopped
2 tbsp golden caster sugar
1 vanilla pod
100ml sweet sherry

Steps:

  • First make the coulis. Put all the ingredients in a pan, bring to a simmer and bubble for a few mins until the sugar has dissolved and the strawberries have started to soften. Remove the vanilla pod and tip the strawberries into a blender or food processor. Whizz until smooth, then sieve into a bowl to remove the seeds. Leave to cool.
  • You'll need a large trifle bowl or shallow dish to assemble the trifle. Arrange the Swiss roll slices on the sides and bottom of the bowl and drizzle over about 4 tbsp of the coulis. Cut enough strawberries in half to line the edge of the bowl and place them, cut-side facing out, on top of the Swiss roll layer. Save about 8 nice strawberries for the top of the trifle, slice the remaining ones and mix with 2 tbsp of the coulis.
  • Add the vanilla seeds and icing sugar to the cream and softly whip. Fold in the yogurt and ripple through the strawberry coulis. Tip half the cream into the trifle bowl, add the sliced strawberries, then half the meringues. Spoon in the remaining cream. Slice the remaining strawberries into halves or quarters and pop these on top with the remaining meringues and the flaked almonds. Serve immediately, before the meringues start to dissolve.

SUPER STRAWBERRY TRIFLE

Super Strawberry Trifle image

This is a delicious and easy dessert to make, short in ingredients and time. This is also a no-bake dessert, which makes it a summertime favorite! Looks beautiful in a trifle bowl. Great as a birthday or holiday dessert. Depending on how many people you are serving it usually does not last more than 1 day in my house! This can also be easily modified with other fresh fruits, but strawberry is our favorite! Pound cake cake work in place of angel food. Enjoy!

  • Slice enough strawberries to place around your bowl (see photo 2 in section "how to assemble the trifle, for reference) and leave a few whole to use for decoration (I used about 12, but that's up to you). Set them aside, covered, in the fridge. Cut the rest of the strawberries into smaller pieces, and place them in a colander, with a bowl underneath, to hold all the liquid that will be released. Place it in the fridge, covered, until it's time to assemble the trifle.
  • In a medium saucepan, with the heat off, add milk, cornstarch, sweetened condensed milk and whisk to combine. Add the egg yolks, sieving it first, to remove the membrane, chalaza and any egg whites remaining; whisk to combine. 1
  • Using an electric mixer, mix powdered sugar and heavy cream, starting on low speed and increasing gradually to high speed2. Beat until it's thick and stiff peaks form. To make sure that the peaks are stiff and not soft, you can hold the whisk upside down. If the peak holds its shape and doesn't colapse, it's stiff. Don't beat for too long beyond this point, or your whipped cream may start to become butter.
